    Great video! Although, it's not recommended to eat plant stalks or roots near roads as cat tails naturally clean the environment around them which is great but it will absorb any contaminates. If the stalk or roots taste bitter or spicy, don't eat it!

    Thank you . I've made cakes then put them in the freezer. I'd much rather freeze the pollen . This coming season I will certainly freeze my excess.

    Subscribed! I've always been amazed at the versatility of cattails, though I have never tried to do anything with them, but I am collecting all sorts of information on their uses, especially cooking. I live in central PA and these can be found growing near water and along roadsides, but thus far I've never seen them in mass quantities. That's not to say that they don't grow like that here, *I* just haven't ever seem them like that. Now after watching this video, I'm eager to try these pancakes. Thank you!!

    I think you said it backwards. The top part has the male flowers which give the pollen. The bottom part is the female flowers which will eventually develop into cattail fuzzies

    I did actually say it backwards and put it correctly in the captions while editing. I'm constantly looking for slip ups . I was hoping the captions I superimposed over the video would be noticable.

    It's crazy; until recently, I had no idea cattails were editable, let alone the entire thing. I literally have a bunch of them that grow in my yard.

    The roots you probably need to extract the starch with water and dehydrate it? Very interesting video thanks

    I would guess the easiest way would be to dry, then pound it or mortar it to pulverize the starch to separate from fibers with a sieve

    Pollen from male spike. The female portions can be fried and eaten much like corn . The stalk has much better flavor. Raw is best as cooking seems to diminish its sweetness

    You should have said you were just making flour pancakes. I thought it was made solely from cattails, Not much sense to it if your just going to the store anyway.
