20 years ago I bought a set of sushi knives like that from Japan and I have really enjoyed using them. I always remember the pleasure I got when I received them in the mail and opened the box to find them wrapped in Japanese newspaper and in the box was a picture of the bladesmith forging my knife and another photo of an older man sharpening them on a rotating waterstone like you spoke about. I have made a lot of good food with those knives and appreciate the skill with which they were made.

Will there be any advanced stropping videos? I am having difficulty sharpening my apprentice neck knife to stock razor edge it came in.

Just show these custom sets every-time they pump out, or every so often. No need for it to be educational tho. Just give us the specs. And nice shots of the product. And make an updated list of educational shorts. Imo. Now that camera tech is very good.

I bet the Cutting Edge Strength and Durability of those knives is Phenomenal. It would be interesting to know at what degree angle He Sharpens those knives; I presume at 14 degrees.

A set like these would be very nice to have, but I'm 110% sure something like this would entirely be waste on my lack of cooking skill. Not saying I wouldn't be able to make use of them, but I wouldn't be able to leverage these to anywhere near where they should be performing at. Wonderful to look at and appreciate though~

Don't know about jap-a-knee's but in American (it is) called a (hollow chisel grind).
