Hi Stephanie, if is not too much trouble, can you make oatmeal muffins sometime? I always have oatmeal in the cupboard, but the recipes that I use are not successful as yours, your recipes always come out perfect and moist! I do make your oatmeal cookies though! They are so good! Thank you Stephanie for a great carrot muffin, as I don't have the Brown sugar and Buttermilk other recipes call for. A friend gave me a box of produce from the NYC Food Pantry. Carrots and Apples were included and this is perfect! I can give back with some of these Carrot muffins! I have Dates that I'll soften and chop to include. Collard greens, Savoy Cabbage, Cucumbers, Carrots and Apples were in the Food Pantry box. Never wanting anything the go bad and as stated, I'll give some Carrot muffins back from your recipe 🥰

This recipe is a great option for a healthy breakfast. I usually make and freeze them, they keep the moisture perfectly. When I don't have apple, I use a pear. Also in order to make them healthier I also put some bran and all unrefined mascavo sugar

I’ve never tried that, but I would bake it at the same temperature. Not sure what the baking time would be as I’ve never tried it.

I'm thinking about the same thing as I'm not a huge fan of cooked apple. But I heard you can't add raw pineapple into bread dough because the enzymes in pineapple will denature the protein (i.e. gluten) in the flour so the dough won't rise. I tried putting raw pineapple on the top or the bottom of cakes before and they worked out fine, but I'm not sure about mixing it in. Maybe using tinned or grilled pineapple will be safer?

You can just leave out the dried coconut. The recipe doesn’t need to be altered.

Have you ever used gf flour? Something like Bobs red mill 1:1? Tia

I have limited experience with gf flour, but if it is a 1:1 it should work just fine. I used a 1:1 with a brownie and waffle recipe with no other changes and they came out great.

Can I use extra virgin olive oil?
