We don't have that specific company around where I live. But we do have something called chef store and that's working just fine.

I have one near me in Minnesota that does not require a membership. Allowing the public in must have been a conditional requirement by the city. I am glad that i do not have to visit every month to keep a membership active. Going more carnivore, I have gotten into more processing meat and now have reason to visit the store. I had only purchased brisket there once. I have a 19lb beef ribeye that has been dry aging for about 4 weeks and a 16 lb strip loin that has been dry aging for about 1 week. My goal is 6 weeks for each. The pieces are cheaper and larger than Costco. With dry aging, it is best to have fewer ends to trim. I have been experimenting with the dry age wraps/bags and I might invest in a specialized fridge. I do not have too much an opinion yet. I walked through the store today and noticed teres major. The Butcher Wizard channel mentioned teres major was a flavorful cut of cheaper meat much like a tenderloin. I saw that today. I never expected to see it.. The pork belly in stock had skin on, so I decided to go to Costco for that instead. I bought that to try making bacon.

Thank you for your comment. I saw the trees major there too. We did not buy it but I thought it was a special cut. It was pretty cheap too. Pork belly with skin on it is fantastic. The skin gets crispy "Pork Rinds" in the oven. Or brine several weeks or months dry or wet brine either and slice it super thin and cook like bacon. The skin gets super crispy and the fat part melts in your mouth. You like processing meats try the pork with skin it is a fun one to process so many ways.

@@eatyourlandscape-PNW Thanks for the feedback on the skin. I will have to give it a try. I sometimes have to note the cut of meat and then research what I can do with it. I did that with the Restaurant Depot planning on what to buy. I have a picture of the ribeye lip on from January 5th and the price was $14.63. The price has dropped quite a bit.

Make friends with a restaurant owner and ask where they get supplies. If Google won’t tell you. Good luck it is worth the effort.

I lived in Australia when I was young and traveled to many places around the world. Yes, food is very different in other parts of the world. Overall healthier people than most Americans. I think Carnivore is taking over because our produce is so toxic and tainted with chemicals and GMO's. Just cutting them out makes people feel better. Not to say our meat is great but?
