CARING FOR CAST IRON. Maintenance & Restoration PART 3.

How to season and restore cast iron cookware. Part 3.
In this episode, I show my vintage waffle iron which is my latest ironware restoration project. Vintage cast iron cookware is indestructible. I have been using the same frying pans and Dutch ovens for over 45 years. A homestead is not complete without it.

MOST FREQUENTLY ASKED QUESTIONS:
Q: How do you have internet at your cabins? A: I have cell service at both cabins but it is spotty due to foliage and cloud cover. I can access the internet from my cabins but have to drive to a local wifi location to upload videos.
Q: How old is Frankie? A: Frankie will be 10 in April of 2018
Q: What video editing software do I use? A: Presently, all I use is Windows Live Movie maker but I’m considering trying imovie, Adobe Elements or SONY VEGAS PRO.
Q: How do you get your water? Did you dig a well? A: Presently, I haul water to the NY cabin but at the NH cabin, I drop a kettle into an old well that was dug by hand by the settlers in the 1700’s.
Q:What is your favorite brand of cast iron cookware? A: I prefer using vintage cast iron. My favorites are BSR and Griswold. If I had to buy new I would buy a Lodge Brand. I plan to purchase this dutch oven in the future:
Q: What do you use for refrigeration? A: We have a small gas refrigerator that we salvaged from an old Shasta camper and a custom icebox that I built into the cabin wall. We make ice on site with a propane freezer.
Video of icebox:
Video of Gas Refrigerator:
Propane Freezer:
Q: What do you use for cooking and heating? A: We use a Kitchen Queen 380 for cooking and heating during the winter months but we also have an antique gas stove in the cabin for when we don't need the heat from the KQ.

That waffle iron was a real find. That thing is awesome and love how it works. We have a 30 year old Sunbeam electric waffle iron that has cast iron cooking surfaces. It’s never been replaced and for good reason. It still works great and makes delicious pecan waffles. I’ve looked at new ones occasionally and can’t believe how crappy they’re made. They just don’t make stuff like they used to.. the good old days, right!

I love watching your video's about the vintage cast iron pans. I have a fairly old 14" fry pan that I have had for years. I learned to season my cast iron from my Grandfather. He was a man who lived close to the land and remembered all the old ways that used to be commomon knowledge to everyone. My pan is one thing that I don't allow anyone but me in my family use or clean. It is the pan that I use for frying all the fish that me and my son's and my daughter catch throughout each summer season. It will hang in it's place on the kitchen wall after a light treatment until ice fishing begins and I haul it down for another go round of fried bluegill or the occasional lucky northern. Thanks JC. Now I'm hungry for fish!

Great video as always JC! I bought a new cast iron skillet today and got a rain check with the 6 quart oven! I was talking with my parents regarding the health benefits of cooking with cast iron and as a kid I recall most meals were cooked with the iron... I had a skillet handed down from my parents that was unfortunately not the one I grew up with. A charitable event in Labrador cooking fish at a local park where many cast iron skillets were used, and the pans were mixed up and I ended up with a lower quality skillet that just never was the same! I am excited to start cooking with my new skillet and cannot wait for the new oven to arrive... thanks to your knowledge and videos expressing the great advantages of cast iron cooking! Poor Frankie was very patient for his share of the waffles! Thanks again for sharing and I look forward to seeing the next!

Howdy Dave. Man what a bummer about the iron getting mixed up. I'd be distraught if my family heirlooms went missing ;-( Ol Frankie gets his fair share of the chow, he just acts like he doesn't lol. The last time I had bloodwork done, the doctor told me my iron was a little high of normal. I bet you what is considered "normal" today is a lot lower than back when everybody cooked with ironware. No fikken Teflon in my blood though I can tell you that ha ha :-D

I just found one of these MW 1925 irons. It was in my attic. What a fantastic little treasure. Makes me curious about what other things may be lurking in my 1880 home. It was in remarkably good shape, but in need of a good cleaning. There was just so much caked on grime, critter droppings, and insulation. I used oven cleaner to get it down to the iron, scrubbed with a wood bristle brush, and then re-seasoned it. I am certainly ready to make some waffles in my little beauty. Thank you for all of your tips and tricks

Great score on that waffle iron Boss, haven't seen one of those in years, love it. I have many, many pieces of cast iron cookware and use to season them all in the oven with vegetable oil, then about a wear ago a friend turned me on to olive oil. Love that stuff. Frankie reminds me of my little buddy: always waiting for a piece of the food action. While you guys are getting the deep freeze up there we actually had a fantastic weekend in the Carolinas, sunny with temps in the 60s. Good thing too, cause during a resent wind storm about half of a big gum tree came crashing down on the back corner of my cabin. I was able to get the clean up work done and all the new framing finished and covered. Hoping to finish the job and have the new roof metal on by next weekend. They're calling for highs in the upper 30s next weekend so I hope to spend my time inside re-finishing the interior and who knows maybe cooking up some waffles. Keep em coming Boss; Another Great J C Desclos Production, yessa!

I am like you I love cooking with cast iron I have seen people put them in soapy water to wash them and that alone will cause your food too stick if they are seasoned right a good wiping out is all you need if I do clean them it's with just water then reseasoned I remember my grandma and mother building a fire outside to get the crud off the outside of all their iron cooking pans loved your video always look forward to. Griswold and Wagner some of the best iron cookware around. Loved your seasoning process, a little different than mine but my cookware is well taken care of. Nuthin like a meal out of an iron pan. I have a few pieces of stainless, but iron is tops. Now ya got me lookin for a waffle iron. (Yours is the first one I've ever seen. . .gonna have to look hard at the flea markets) A few of my pieces belonged to my grandmother and she was in her 90s and she's been gone for thirty plus years, kinda tells you iron is good stuff. I do like the fact that you turn your iron upside down when seasoning, we can always learn something. I like the fact that projects make you FEEL GOOD and please tell me you shared some waffle with Frankie. Well Boss off to watch a few more videos and then time to get the garden ready. Nuthin like home grown, fresh produce.

Your videos on restoring cast iron (especially this one) has inspired me to hunt for antiques on my free time. I purchased a deep waffle iron last weekend. Markings- Wagner Ware Sidney -O- 1408 Pat'd Feb., 22 1910. It was heavily coated with black stove paint when I purchased it ($45). I gave it to my boyfriend who begin restoration on it 2 days ago. He will be replacing the wood handles on it. I also purchased 4 more cast iron fry pans. One is a Wagner 12 inch deep skillet ($40) with a light season, 2 badly crusted skillets (12" and 4") with the trademark rough texture of Lodge, and a smooth 5 inch (#3) fry pan with heat ring that I took down to bare iron and re-seasoned to a glossy finish with just 3 seasonings. Your tips on seasoning over a stove help me get these done this morning. I love all of your videos and I aspire to live off grid within the next 10 years when I "officialy" retire from my government job. Give my hugs to Frankie... He's so adorable!
