CARIBBEAN CARROT JUICE RECIPE
FOR 4 SERVINGS
INGREDIENTS:
-2 lbs. carrots, peeled & roughly chopped
-2½ cups water
-1 14oz. can of sweetened condensed milk
-¼ tsp vanilla extract
-¼ tsp finely grated nutmeg
-¼ tsp ground cinnamon
PROCESS:
1) Transfer peeled & chopped carrots to a food processor*
2) Add water in and puree until smooth
*Depending on the strength of your blender or food processor, it may be best to do this in 2 batches.
3) Strain pulsed carrot mixture through cheesecloth or nut milk bag, and into a large glass bowl, squeeze the pulp to get all of the juice out*
*Strain more than once to if you do not want any pulp.
4) Add vanilla, and whisk in the cinnamon & nutmeg.
5) Whisk in the sweetened condensed milk to taste, starting with a ½ cup. Continue to add until sweetened to your taste.
6) Chill in the refrigerator for a couple of hours.
7) Serve & enjoy over ice!

This is one of my all time favorite drinks. I guess this is the healthier version because we boil the carrots until they are soft, blend it and then add condensed milk and regular milk with all spices. On holidays some will even put a splash of stout or wray and nephew inside. Now I want some.
Try adding juice of a lemon, because carrots love their lemons! It will taste even better and even more refreshing!

So the take away from this series is to use Condensed Milk in every drink with any juice tea or coffee. And you get yourself an amazing drink! Yum yum!

Always order this drink in my local restaurant. Its freaking refreshing ! U also can subtitute condensed milk with evaporated milk. It will be less sweeter :)

I am from trinidad n when we make this we blend it with ice n never squeeze and remove the juice we just use the everything that way we full nutrition n doesn't change the taste either

I bet this would be really fantastic with some pineapple juice in it too. It probably tastes like carrot cake in a cup!

Love this drink. My Trini family boils carrots until soft then mix all of ingredients in blender. That way not wasting all of carrot pulp. Your version looks good too.

I personally hate the taste of plain jane carrot juice...how does this taste?
Make this vegan by adding 1/3 of a can of coconut milk and then a dollop of agave nectar. And of course, add rum.
