Canning Winter Food | Moose Bone Broth & Chicken Stock

We make good use of the bones from the salvaged moose we picked up last episode. After roasting outside over an open fire, the bones finish cooking indoors and the results are a rich nutritious broth that we can store for the winter months. We also jar up our previously made chicken stock and make two delicious meals.

    You've shocked me with the last two videos of the moose salvage. I've never seen anything like this, but also you have shown the value of salvaging this poor animal especially from the fatigue you suffered to save the value of the unfortunate end to this beasts life.     I invite you to Eastern Europe where the practice is still alive when it comes to cooking soups. Best beans soup is cooked using a broth made of salty smoked pig bones,especially the spine and those large baked pieces would be perfect for a tripe soup, although we use beef...All the best in the new year!

    Good observations. PSA: A wire brush on a 4-1/2” angle grinder solves issues of paint and loose contaminants. For the love of God get properly trained first. For those new to angle grinders: Pull with the accessories, right side, since they spin to the right, except if using an actual grind wheel one may push the grind along left side of wheel. Include a strong fan or several so you’re not breathing the materials. Always pull a wire brush, wearing welding leathers and ANSI-approved face shield over ANSI-approved safety glasses. Never push a wire brush wheel because it will cause your angle grinder to enter into a state of unstable equilibrium wherein it will kick back faster than a circular saw. Long number of years ago this is how I almost lost my family jewels, as I made a mistake with my DeWalt 4-1/2” which shot out of my hands, dangling by its cord, whereby forthwith I instantaneously had my wire wheel spinning 11000 rpm less than an inch from disintegrating my crotch, while restoring my 80 gallon air compressor. True story. Please consider watching weld.com grinder safety and svseeker grinder safety videos. Always pull responsibly with a wire wheel because there are some fates worse than death.

    Ginger is a rhizome so grows outwards rather than down, that healthy looking ginger plant will do really well if you give it a wider pot because it prefers room to stretch rather than to dig! ❤

    If you want to keep miso paste on hand, put it in ice cube trays and let it freeze. Then you can pop it out of the trays and put right into stuff and thaw it while cooking. You should be able to grow the ginger in Alaska, but keeping ginger frozen is fine to use in place of fresh. I keep a good chunk in my freezer all the time and use a microplane to grate off whatever I need.

    Bone marrow was a real treat growing up. When my dad made broth or soup we would line up for a piece of toast with marrow spread on it with salt and white pepper.

    To anyone reading this comment, Merry Christmas! I hope your Christmas is happy, joyful, surrounded by family, and snowy. Don't take your family for granted, they can go away any day. Unfortunately my grandmother went into hospice yesterday and has just a couple days to live, so my Christmas will be with family but we will all be mourning. Anne is a wonderful woman, and she lived a great life until age 92, it's a blessing we ever had her. Merry Christmas yall!

    Oh yeah, being adventurous in cooking can really create some amazing dishes. For example I would've never thought to include something as sweet as _honey_ as an ingredient in savoury foods when I was younger, but when I tried it as an ingredient with soy sauce, garlic powder etc. in a marinade for some steaks, I could never marinade any red meat or chicken without it again. 😋

    Warm greetings from Rio de Janeiro! Your recipe for bone broth reminded me of a typical dish from my region, it's called "mocotó", it's made with the cow shin bone and parts of the cow tendons, after reducing it to the broth in the pressure cooker, adding white beans, carrots, onions, garlic, dried meat and spicy sausage. It is customary to serve this type of dish in bars alongside cachaça (similar to rum but stronger). Ps. Merry Christmas and a happy new year.

    I just finished a12 hour day taking care of a hospice client that is at the very end of her life now, (I'm a private caregiver), and I am absolutely exhausted. But I happened to see that y'all posted a new video, and what better way for me to end a rough day, than to sit back and live vicariously through y'all? Bad news is I haven't eaten in almost 24 hours and this whole video was about food!! Oh well, I'm way too tired to eat, but not too tired to watch this video!!     If you pop the marrow out before cooking and slice it thinly it’s almost like bacon🥓and will crisp up nicely especially in your cast iron🍳

    Hello from south central BC, thanks for another video. I've got to hand it to you folks for getting the most out of the fish and animals you eat, sincere kudos. We've hunted our entire lives and are just starting to try some recipes with bones. Good to see the Whiskey Jack - Grey Jay - being fed.
