Ketchup is a perfect example of open-kettle canning. We used to cover with towels and set the jars upside down after a few hours. Many Italians still use the open-kettle method for pasta sauce, salsas and bruschetta.

My grandfather also did open kettle canning but his method involved boiling the jars and lids so that they were also hot. He would take the hot jars and fill them with the hot food before putting the hot lids on top and turning the jars upside down. Rarely he would end up with a jar here or there that didn’t seal and he would either use that jar mediately or if there were a lot of them empty it back into the container that he was cooking in, bring it back up to a boil, and then wash and re-boil the jars and lids. Almost never did he have any failures after a second attempt to can them.

Ditto for me!! LOVE your channel...one of our new favorites!! I'm planning to purchase and wondering about the model of your Vitamix too!!
You have some awesome recipes. Do you just cook the ketchup down more if you don’t want to add sure gel? Maybe 1/2 way? Thanks.
I'm eager to try this open kettle method. Your way of canning makes so much sense. Thanks for the video! 🪻
German Ketchup is sweet compared to the US tile catch ups we lived in Baumholder Germany for two years I loved it
I am so very thankful for this, bless you. May I ask what you add to your ketchup to make BBQ sauce. Can I say too that when my husband and I were watching a different video a couple of days ago I said "it's like watching sunshine on the tv screen when we see you" ❤

Came to the comments to find the same answer. Were you able to find it?
I have a roaster like that. It was my mother in loves❤
Any chance of doing video tour of your canning pantry??
You must have the best tasting hams!!!
Nutmeg is the secret ingredient to make it taste store bought.
You mentioned in your tomato sauce recipe video that you had trouble with the open kettle ones staying sealed long-term? Do you feel that the ketchup is different? Love your content! Thank you so much for all the helpful information! (I open kettled all of my tomatoes this year, so I'm hoping for the best 😅)

I wonder if the ketchup retains the heat longer because it's thicker? Maybe it melts the rings better.
my mom always added nutmeg as a secret ingredient and nowadays I understand why. It just do the trick in any dish with a tomato base to round it out.
Thank you for sharing this ! I would love to make my own ketchup but is there anything else that can be used to thicken it? Trying to stay away from corn/grains and wondered if pectin would work? Love your videos, you explain everything so well without continually repeating information, even though I love watching videos I must also not spend to much time doing it as we always have so much to do. 🙂

You could try pectin. I don’t know the amount though.

All you need is patience. You just cook it until it is thick as you like it. it can take a while.
Where did you get your plates and cups? Cloves are good for flavor is also good.
Thank you for sharing!! How would I make this spicy? My husband loves spicy ketchup. Thank you!!!
Not great ketsup can be used in sloppy joes! 😋. Your BbQ sauce idea is great too.
Thanks for sharing! Let us know how everyone liked it!
I have had (still have) multiple 22 quart roasters and I LOVE THEM. I am curious though how you keep the acid from tomatoes and such from eating the finish in the roasting pan? Every one I’ve had ends up with the finish flaking off and I have to toss it and buy a new pan, but that gets expensive! Any tips?
Of course you thrifted the vintage roaster You're the second hand queen be it yard sales, thrift stores, or auctions!
I just wander, do you eat any bread? I can't see any. I really appreciate your efforts and think you are amazing people.

Very little in summer and fall when I have little time to make it. In winter we eat more bread!!!
Question I don't want or have clear gel. Can I just use a regular cornstarch slurry to thicken it, or can I just leave it on the heat longer to reduce it to thicken it.
A litre (just over a quart) of ketchup is 4.50 here in Canada. Its not on sale very often anymore.

I buy organic ketchup that costs 12 dollars for 379 milliliters. There's no sugar or any sweetener . I'm also in Canada.
I have that same cactus by my kitchen window!

What kind of blender do you have. I think you said a vita mix. Thanks
I read somewhere that we like store bought ketchup flavor because there Is always some burnt ketchup in the big amounts they make and that adds a smoky flavor the finished product.. 🤷♀️
Could you do it without the gels also do you have to have sugar
I thrifted my 2nd roaster, too then gave away the first, new one... It just wasnt the same quality.... Love thrift!
Why would any woman want straight hair when they could have beautiful curly wavey hair like yours! ❤
What can i use that would be just as delicious as tallow. Don't Have access to tallow or fresh killed beef.
Your flower beds are beautiful. You have to be busy 7 days a week
Great job I would like to do this, Which Vitamix are you using? I need to get me one.
Can I switch out the sugar with xylitol or stevia?
Hi would like how to do corn and green beens? Thank you
I do that with ghee but I didn’t know you could seal this way. Open kettle.
Hi Ruthann, Is there any way to make this ketchup without using your clear-jel/thermflo or permflo ingredients? I don't have these, and not sure if I want to have them or not!

You could just keep cooking it until it’s the desired thickness
Can this recipe be used with green tomatoes too? My tomatoes didn't get a chance to ripped on rhe vine before rhe frost hot so we had to harvest them green.

I’ve never made it with green tomatoes but set your green tomatoes in a cardboard box and they will ripen!!!!
In another video you talked about a sweeter ketchup recipe on Instagram, but I can’t seem to find it.? 😢. Would you mind either reposting it or sharing how to run it down? Like you, my preference is sweeter ketchup, like Del Monte, but I know others seem to like the more vinegary brand like Heinz. Thanks much.
You talked about using your homemade ketchup for BBQ Sauce, Can we get your BBQ sauce recipe that you use?
Cinnamon! In Ketchup?? That's different!!! Is it for flavour or does it cut the acidity or something? Anyone know?? Clear jel? Never heard of that either. I learn so much from your videos. Thank you for posting!

@@Ruthannzimm Really hey! I never would have guessed that. Thanks for answering my question, it was very nice of you to!! I learn so much from your video's and I enjoy seeing the values and work ethic you are instilling in your children. It's inspiring, as are you! :)
hi, I've always heard you have to peel tomatoes in order to safely can. I noticed you didn't peel them, have you ever had any issues?
@Ruthannzimm

I don’t peel mine and have never had issues with anything. You could run them through a food mill that would remove the skins and seeds and save you time.
If I'm uncomfortable with open kettle can this ketchup be pressure canned or is it too thick for that?
I don't know if you'll see this or have time to answer but several of my jars of salsa turned darker in color and smell sour. Do you know why this happened, or what i may have done wrong? The jars are still sealed. I've made a couple batches before this one and they were fine. Thanks in advance for your help.
