    Skye Manzie no in Russia we pickle tomatoes, cucumbers and onions in one jar. Also pickled cucumber is the best snack that you can consume with vodka

    As an Asian, I saw a lot of pickle weirder than this. From green papaya, mango, raw tamarind... to bean sprouts, water spinach. And it's all taste good, maybe because we always put a lot of chili to it... Pickle pork, pork leg and chicken leg could taste good if you make it the right way (with garlic, shallot, lemongrass, lime leaf and a lot of chili). We also pickle pig ear ╮(╯ل͜╰)╭ ....

    I'll bet your pickles taste good because they are made properly. He didn't use specific recipes for each food and didn't follow good procedures for pickling either. However chili does usually make pickles better.......in my opinion.

    ah I love this one having a Hungarian background we've always pickled a number of things, and a family favourite is watermelon (not just the rind, but just straight up slices or mini fruits) pickled in the same jar as hot peppers. The melon keeps most of its texture but ends up with a sweet/tart/spicy flavour all in one that's great with some meat.

    cisero collins I'm pretty sure it was the ostrich egg. The first time my mom made pickled eggs she just put hard boiled eggs into a plastic container (so not vacuum sealed) with vinegar and salt, then put that in the fridge. They were fine. (Had better, but it wasn't disgusting nor did it give us botulism.)

    Not that bad,in India kanji vada is relished. It's sort of falafel but made with mung lentils called vadas.Vadas are fried and soaked in brine with some ground brown mustard and kanji gets ready next day, drink savory tangy kanji and eat vadas.

You need some(,say half a cup) yellow hulled and split mung beans.Wash and soak for 4 hours only drain water completely and coarse grind with some ginger and green chili, add salt and one tablespoon chickpea flour or whole wheat flour to it for binding ,then fry vadas like falafel. Prepare brine also add a little ground brown mustard .soak vadas in it and ferment for a day.

    You should allways fill the jaw up to the top with liquid, so there is no air inside to contaminate your stuff with mold. And you should try to make real sauerkraut one time. you have to cut and rice it and than its left to ferment mainle with water and salt.

    That might be true for fermenting, but for canning you need to have exactly the right amount of empty space at the top, (usually from the bottom of wear the cap screws on up to the top). If there is no empty space then you cannot create a vacuum, which is what seals the jars. The acidity--pH below 4.6--is what stops botulism.

    You are wrong about that as far as i know. I think you mean preserving without acidity? Fermenting will produce extra gases. if you seal you fermentingcontainer it is going to crack or even explode du to the increasing presure. You dont want any air in a vacuum. a vacuum is the total absence of any gas. Dont confuse the emty space in a glas you buy in a store with air. that is the vacuum you are looking at. it is createt when the pickeling fluid compresses its self by cooling down. thats why you fill the jaw with hot liquid. any air between liquid and cap will expend into the space createt by the compressing liquid and spil your vacuum.

    @Njarl Black You are wrong, and your misinformation could make someone sick. When canning -- either boiling water bath with acidic foods or pressure canning -- you have to leave room at the top, called headspace. Otherwise, the food inside could deposit on the rim and cause a failure of the seal. While much of the air escapes during canning, the space at the top is not completely airless. We call it a vacuum seal, but that doesn't mean the space in the jar is a vacuum in the sense of being void of all matter. The acidity and/or heat of canning is what keeps the food from spoiling, not a lack of air. Also, the pickling fluid does *not* compress itself. Not only that, but water (which is the vast majority of the brine) is nearly incompressible. That's actually how hydraulic systems work. There is, however, a pressure drop from water vapor to liquid water (~50%) and a smaller drop from cooling liquid that likely contribute to the vacuum effect.

    The good pickled mango is the not ripe yet it gives the result very crunch just like pickled cucumber but if you used ripe mango it will turn out really mushy and mold

    NOT a problem. Botulism only develops in an environment that lacks oxygen. Pickles that are not sealed by canning are totally safe from Botulism--just sticking stuff in a mason jar is NOT canning. They're too acidic, anyway--if you don't just stick crap in a jar. If it goes bad, it will develop colored (not white) mold on top and smell bad. Don't eat it then, which is what these jokers did--and they still survived. If you're that worried, add some extra vinegar to the salt/water brine. The easy way to keep the mold away is to stir the top each day until the pickles start to get sour. Then store somewhere cool--either a refrigerator or a root cellar.

    thegreatMSG: Botulism has to be able to grow at some point to produce toxin, so I am not sure what you are referring to. Botulism doesn't grow in pickles that are NOT canned. Actually, heat DOES destroy the toxin. Did you hear the story about the housewife who opened a jar of canned tomato sauce and tasted it? She thought it might not be good, so she tasted it to see. She died, but the family survived after eating what she cooked with it.

    WAIT, CABBAGE AND TOMATO PICKLES AREN'T A THING IN THE STATES? OH GOD, C OME TO TURKEY AND YOU WILL FIND NOT-RIPE MELON PICKLES AND THEY ARE DELICIOUS.     Pickled tomatoes and cabbage is commonly eaten in Turkey. Especialy cabbage is very nice. It goes realy good with beans.

    As a child in South Carolina there was this one bait shop that sold pickled pig's feet. I would beg my dad to buy me one every time he stopped there for bait and beer. I LOVED IT! Wouldn't eat one today, but I also don't want to eat frog legs now which I did as a kid.

    Fishy 78 Fruit preserves aren't pickled, you cook the fruit down until it can thicken when cooled.

    Pickled eggs are good if you don't actually can them and keep in the fridge for a week or so max. It's not a true pickle but it's a great way to use up extra eggs if you have backyard chickens. It's also a good way to ease people into actual pickled eggs. A lot of the times the boiled eggs are added to an already opened jar of canned pickles that's sitting in the fridge to soak up the flavor. I prefer a mix with pickled beets but people also use pickled jalapeños. A version of this is also done in some parts of Asia with either straight up soy sauce or some add ins to the mixture. That version is amazing and I recommend everyone to try it.

    I just made pickled eggs for the first time a couple weeks ago, and I'd never eaten one before. They turned out great. I've already eaten half of them and have to make more. But I did it properly. I made sure my egg whites were whole so no yolks were exposed, and I made a tasty brine with lots of yummy spices. And I gave it some colour with beet juice. With red onion rings floating around the whole eggs in the pink liquid, it's probably one of the prettiest jars of anything that I've ever seen. I'm not sure what you made. A watery and over seasoned egg salad, I think.

    I have had pickled eggs before. I have seen pickled pig's feet for sale. (But didn't get a chance to try them as we were driving through).My favorite pickled thing (besides a pickle) is cauliflower. I just break it into florets, throw it in the leftover jar of pickle juice in the fridge for half-a-day, then taste-test til you like it best. A few hours will give a lightly yellowed color & subtle crunchy flavor. Note: too long & it will turn rubbery. (Darker yellow) So if you make it in the morning it should be ready for that picnic dinner cookout. My mom likes pickled beets, but clearly she is wrong. The one he really missed was pickled button mushrooms & pearl onions. It was divine.

    What I like about this video is the cat and your apartment. Try vegetables that stood the test of time. Onions, garlic, celery, carrots, green beans, cauliflower, green peppers, eggplants, cucumbers, scallions, lemons, asparagus,artichoke hearts,etc.

    In my country we pickle tomatoes that are still green, baby watermelons and a lot of cabbage. Cabbage is traditional for Christmas. And more recently we do cauliflower

    you can pickle stuff without canning it. refrigerator pickles. 2 cups water, 1 cup vinegar, 3 teaspoons salt, whatever herbs and spices you want. pickled red onions are the schniz on tacos...

    in south korea, they actually pickle watermelom rinds into a side dish. its pretty good. however, it works best with a specific type of watermelon that has a thinner skin (outer hard thing)

    Marinating tomatoes is done with green tomatoes. Feta cheese is marinated only with salt. In a jar, arrange the cheese and pour it with salt water. The amount of liquid should be to cover the cheese. And the amount of salt in the solution should be such that the raw egg floats in the salt water
