Callos, SIMPOL!
This dish is a traditional Spanish recipe but because of its flavor, we embrace it, and now, it is part of our culinary favorites!
INGREDIENTS:
Set A:
1 kilogram beef tripe, cleaned
1 kilogram beef mask
5 cups water or as needed
1/2 tablespoon whole peppercorns
1 teaspoon salt
Set B:
4 tablespoons olive oil
6 cloves garlic, minced
2 pieces onions, chopped
1 cup red bell pepper, cut into strips
1 tablespoon Spanish paprika
1 teaspoon dried herbs, of choice
2 pieces laurel leaves
1 cup Chorizo de Bilbao or ham slices
1 cup white wine
4 tablespoons vinegar
1 pouch (200 grams) Filipino Tomato Sauce
3-5 cups beef stock
Set C:
2 tablespoons sugar
3 tablespoons fish sauce
1 cup garbanzos, cooked
Salt and ground pepper, to taste
3/4 cup pitted green olives (optional)

Eto ung callos sa Samar yung skin ng baka or kalabaw yung gamit pati yung tuwalya
I don't put sugar and flour . the gelatinous skin or beef tendon will provide the thickness of the broth . I don't also use the pinoy tomato sauce .

Yehey! Thank you so much! For me kasi, kung ano lang yung madalas mong makitang ingredients sa kitchen mo ang mas ok gamitin. Kung meron mang additional na kailangang bilihin, yung madali rin lang mabili sa market or stores. Para mas Simpol ang cooking.

what brand of white wine you are using Chef?
Isn't sofrito also mirepoix or aromatics a mixture of celery, carrots, and onions. Gisa in English is saute right? Saltear is for Spanish
