The marinade consists of: Salt 1 tablespoon of baking soda per 1 kg of squid A mixture of water and lemon juice Soak the squid in the mixture for half an hour.

I read elsewhere they use baking soda, sugar and lemon juice leave for 3 hr. Covered

@@jrubes2736 The baking soda is to increase the PH so the squid will puff up with water.. but that gives it a soda taste. My method is to soak the squid in salt water 1 tablespoon of salt per 1 liter of soaking water for 3 hrs or until the squid PUFFS UP... then rinse , marinade and BBQ/Grill The Baking soda also tenderizes the squid, however with the salt water method (Brining) no soda taste and cook over slow heat until time to do searing.

I sometimes wonder, d chefs always wear white costumes, n inspite of d job of cleaning d fish n cooking, how come their clothes remain so clean, white n spotless without any stains. I really admire them n their brilliant skills. Bless u chef.

The soda softens the squid. They usually eat their marinate with soda liquid or bicarbonate of soda.
