Cajun Chicken and Sausage Jambalaya

Ingredients
1 lb chicken thighs, cubed
13 oz. Cajun andouille sausage (can sub Turkey sausage)
1 1/2 cups med-long grain rice
2 celery stalks, diced
1 green pepper, diced
1 yellow onion, diced
4 cloves minced garlic
1 Tbsp tomato paste
1/2cup crushed or diced tomatoes
28 oz. Chicken broth
1 Tbsp avocado oil
2 Tbsp all purpose seasoning
2 tsp garlic and herb seasoning
2 tsp Cajun seasoning
Green onions for garnish

    @@agentk1930 how long are OneStopChop's videos on average? How long are most cooking videos? OneStopChop cuts to the chase, tells you what you need to know, and nothing more. There's no background music drowning out what he is saying. You can understand every word he says. He doesn't pretentiously imitate Gordon Ramsey's speaking style. And OneStopChop's recipes are very approachable. If his style and recipes aren't for you, guess what, there's a ton of other channels out there -- go find one you like and stop trying to be the floating object that no-one wants in their punch bowl. We obviously value different things. If you really want to learn about his cat, what his dog had for dinner last night, and other non-cooking things, I'm confident there is a KZread cooking channel out there for you. Go find it. I'll continue to watch OneStopChop because I like his cut-to-the-chase style. I wish more channels did this.

    ​@@lukelucas8112 Eh not entirely, there are a few decent places in Lafayette (despite it being a shithole) that and Scott just around the corner is probably one of the best places for boudin in the state. But yeah this certainly isn't Cajun jambalaya, its slop with tomato's in it.

    Being from New Orleans, I agree with this recipe wholeheartedly. I’d just add some parsley and more pepper and some paprika. A bay leaf at the beginning and let it cook through the entirety also helps.

    I made this chicken and sausage jambalaya for the Superbowl. I added shrimps with the chicken and sausage. It was so good and delicious. I also made Creole Cornbread to go with it. The jambalaya was fire 🔥🔥🔥. Thanks for sharing this amazing recipe!

Only because when I first tasted Creole Cornbread was working in a prison kitchen about 20 years ago 🤣🤣😔 Dude made a spicy dirty rice ( chicken, hamburger, or breakfast sausage was used, hey it was prison lol ) but the cornbread was almost cake like sweet. So he would layer a huge 2 inch baking pan with butter, the dirty rice, then pour the batter all-over, baked and then he had a gravy/ sauce he made from scratch that you could pour over it if one wanted to. Maaaaaaan that was some good eating, under the circumstances or not.

    My mom's family is all cajun and creole from the bayous of South louisiana my grandmother was an old cajun lady from lake Verret and my grandfather was an old creole roughneck from chackbay La...I learned from my mother and grandmother how to cook.Now im in my 50's cajun cooking is my passion.. Everytime I cook I think of them and carry the tradition..You did a good job on this jambalaya my friend..you should cook a sauce piquant in another video..

    Andouille sausage, chicken thighs,’HOLY TRINITY =(Onions, Celery, Bell Pepper), rice, chicken broth, Tony C. Cajun seasoning or Cajun seasoning of your choice, Garlic Powder-Onion powder as needed per taste, cook accordingly.

    Looks good and I am from BTR, La. We don’t put in tomato products here in south La. But NOLA does. Depends on the region of La you are from. Sort of a controversial ingredient. Like gumbo and potato salad. We all have our own recipe. But… it looks fabulous. All other ingredients and methods are spot on. And I know it tasted so good!! Ty for sharing. Love ur content.

    Jambalaya is originally a Louisiana Creole dish, the Cajun version uses a brown roux with chicken and sausage. Creole jambalaya uses tomatoes and sometimes seafood. Baton Rouge was historically dominated by Scots, Irish, and English and they favored the Anglo and Cajun way so Creole customs are feint in BR even though the descendants of these bondsmen, freemen, and mulattoes who spoke Kouri Vini may live in and around the city.

    @@ToniTone33 I am from BTR. My ancestors are from a small Cajun town near Jennings La. I have eaten and cooked Cajun/creole foods all my life. I am 64. Tomatoes were not used for jambalaya. Ever. I live near the jambalaya capital of the world- Gonzales,La. They too do not use tomato in their jambalaya. They have a big festival ea year. I am friends w a few folks who have the title as winning the jambalaya cook off. Being the jambalaya kings. They take this stuff seriously. But as I said Nola does use tomato. Depends on where u r from. I like it better w the brown roux or without tomatoes. We use tomato w lots of our creole/Cajun dishes. Cajun and creole sometimes cross up. ESP down here. Where r u from?

    I don't feel bad for the people who's lazy to cook or don't know how to cook. Nobody ever taught me how to cook. I basically search what i want to make and watch videos on youtube. Cooking is a helpful skill to have. The best part about cooking is that you get to enjoy the work you put in it. I'm not a chef, but I do most of the cooking for my wife and kids.
