C/w Nana: Stir-fried Wide Noodles (ຂົ້ວໝີ່ເສັ້ນໃຫຍ່ == Kua Mii Sen Yai)

This is a noodle dish flavored by soy sauce, influenced by the Chinese. In Lao and Thai it is called Pad See Ew (Lao: ຜັດສີອິ໊ວ; Thai: ผัดซีอิ๊ว).
In this video, I just wanted to call it something different, but if you want this in a restaurant, you have to order "Pad See Ew." If you want it like how I made it, you'll have to make it yourself. :-)

Pad See Eiu is my fav Thai noodle dish...does this home cooked version have that restaurant made flavour? I find it reaally hard to imitate at home! Must be some special sauce they use!

Southida Seriphayrath Drunken Noodles and Lard Na Noodles are Chinese-influenced dishes that are popular in Laos and other Southeast Asian countries. However, they are rightfully considered Lao or dishes because the recipes have been modified over the years to suit the local countries. Likewise, China has also incorporated Southeast Asian-influenced dishes and ingredients to its own modern Chinese cuisine.

It was crushed red chili peppers that I added before eating. It is personal choice (condiment) depending on how spicy the individual wants.
Nana, doesn't all that soy sauce make the entire dish really salty?

may20, no, it's not that salty because there are lots of noodles and vegetables. You can try with less soy sauce first to test.

I was wondering the same thing. I'm used to recipes that call for maybe 3 or 4 tablespoons of salty liquids in total and this recipe has like 13 with all the different kinds of soy sauce, fish sauce, and oyster sauce. I'm not sure I can even get thin or black soy sauce in my area anyway--I was lucky to find usukuchi (Japanese "light" soy sauce, where light doesn't mean less sodium) when I needed it for a nabe once but every other non-regular kind either isn't sold around here or I'm too illiterate to recognize.

no, the noodles I showed, you don't wet them. some people steam them, but I think microwave is easier and faster. my other kua mii (Lao style) uses pho noodle and that one needs to be soaked.

Sa bai dee sok dee bee mai :) I just want to tell you I made this yesterday and it turned out amazing but I do want to ask I know all stoves are different but my noodles were sticking together anyway next time for me to not get them to stick?
this is maybe 3 person serving or more cuz this amount of soy sauce...be aware of it !!!
