蔥油手撕雞腿 Hand-Shredded Chicken Leg with Shallot Oil **字幕 CC Eng. Sub**

🟢材料:
雞腿 2隻
乾蔥頭 6粒
蔥、薑適量
紹酒少許
鹽 適量
🟢做法
1️⃣ 將雞腿洗淨,加入一塊生薑和蔥白,少許紹酒,小火煮20分鐘。
2️⃣ 測試一下雞腿是否煮熟,輕易刺入無血水流出即可,熄火拿出來放入冰水中冷卻。
3️⃣ 將蔥頭切片,用中小火炸到微黃色,撈出放涼備用。
4️⃣ 將蔥切碎,生薑磨成薑蓉,加入少許鹽調味。
5️⃣ 將冷卻後的雞腿撕成小塊,加入蔥油和薑蔥蓉拌勻即可。
🟢Ingredients:
Chicken legs - 2 pieces
Shallots - 6 pieces
Spring onions(scallions) - as needed
Ginger - as needed
Shaoxing wine - a small amount
Salt - as needed
🟢Steps:
1️⃣ Wash the chicken legs and place them in a pot with a piece of ginger, some white parts of the spring onions, a dash of Shaoxing wine, and enough water to cover the chicken. Bring to a boil and simmer on low heat for 20 minutes.
2️⃣ To test whether the chicken legs are cooked, pierce and see if there is no blood flowing out. Turn off the heat, take out and put them in ice water to cool.
3️⃣ Slice the shallots and fry them over low to medium heat until lightly golden, Scoop out and let cool.
4️⃣ Chop the spring onions and grind the ginger into a paste. Mix with a pinch of salt.
5️⃣ Tear the cooled chicken into small pieces and mix with the shallot oil and spring onions ginger paste.

广州人基本都会做,我98年的男生都经常做,很好吃,做给我女朋友吃,还有马蹄糕这些。
今天照着做了,非常非常的好吃😋感谢🙏

幾好,簡單適合家庭做。 薑蔥蓉我更推薦的做法是,先刨薑蓉擠壓走薑汁,然後拌入蔥、雞粉和鹽。用滾油綻入去激發出薑蔥香味。擺凍之後再加小小麻油

That’s how I make my sauce too but with one extra ingredient - a dash of white pepper. Either way, good stuff.

有少少野想和各位分享, 1)浸雞水, 未放雞前, 可放返D鹽, 令雞味流失少D. 2) 4:24可以直接將滾油放入有薑蔥的碗, 一來使洗一隻碗, 二來用油溫熨香薑蔥味! 3) 如果不想冷吃, 可以把湯加骨再一次煑熱, 淋一殼落去先加蔥油

才试过,手撕鸡腿非常好吃,煮鸡腿的汤不要倒掉,下一餐拿来和炸过的葱头一起煮面也非常好吃

煮了鸡腿的汤不要倒掉,把炸了的葱头放在锅里保留一些刚才的葱油,加入猪油或者花生油,然后把洗好的米放进去炒香,加入胡椒粉,酱油,蚝油一起炒,然后放进电饭煲加入鸡汤煮饭,最好浸十分钟再煮,一屋子都是香味。

Hou do je nei. Thank you very much. I made this last night since I have a lot of drumsticks. My family love it! Thank you again for a healthy way to cook chicken. I used olive oil and there is no difference. I don't have shallots so I just used regular yellow onion. I thought it still tasted wonderful. In USA, we can only get this dish when we go have dim sum brunch at dim sum restaurants. But now, I can make it anytime I want. Great video!

This is such a easy great recipe. You could turn it into noodle soup also by adjusting/adding spices to the poached soup after taking the chicken out, like fish sauce, then eat it with ho fun/rice noodles, it’s kind of like a easy pho ga
