With this lamb we cut, lamb chops, shoulder roasts, bone in leg of lamb, half rack of ribs, fore shanks, rear shanks, and neck roasts.
This lamb weighed 89 LBS live weight. Hanging weight was 36.9 LBS. Take home weight was 33.2 LBS. Yield was 37%
Keep in mind that yield will vary from animal to animal, especially depending on whether you get more or less bone in cuts.
The lamb in this video was grass fed & so was leaner. Some people prefer lean meat such as this, but if you like having more fat on your lamb, just let us know & we can get one fattened up on some corn.
