How to make Shrovetide buns with vanilla cream
Mardi Gras buns - the old-fashioned ones with cream
The best recipe for delicious, homemade Shrovetide buns filled with cream. Here you will find the recipe for the best buns, where the cream does not flow out, but instead stays inside the bun.
INGREDIENT LIST
Dough:
200 ml lukewarm milk
12 g dry yeast or 50 g fresh yeast
2 eggs
2 tablespoons of sugar
100 g butter
500 g all purpose flour
1 tablespoon ground cardamom
Homemade vanilla cream:
3 eggs
30 g cornstarch
3 teaspoons of vanilla sugar
50 g of sugar
400 ml milk
Brushing:
cold coffee or 1 beaten egg
Garnish:
powdered sugar
water
Sprinkle
Warm the milk in a pan until it is finger warm. Pour it into a bowl and stir the yeast into it.
Add the other ingredients. Mix the dough well.
Cover the bowl and leave the dough to rise in a warm place for approx. 1 hour.
Whisk milk, eggs, sugar, flour and vanilla sugar in the pan.
Bring the mixture to the boil while whisking and cook the cream over an even heat, still stirring, for approx. 3 minutes - or until the flour taste is gone.
Pour the cream into a bowl and cover it with film right down to the cream so that it does not form a skin.. Allow the cream to cool.
Sprinkle some flour on the kitchen counter. Roll out the dough into a square plate of approx. 1/2 cm. thick. Divide the dough into 12 squares.
Benefit approx. 1 tablespoon vanilla cream on each square. The filling and decoration can be varied according to taste and preference - for example, fill your Shrovetide buns with Nutella, jam, cherries, pieces of marzipan or whatever you can think of. Only the imagination sets limits for fillings in Shrovetide buns.
Gather the dough around the filling into small "packages" and pinch the joints tightly so that the filling cannot run out. Form the "packages" into buns and place them with the joints facing down on a sheet of baking paper.
Let the buns rise covered for approx. 45 min.
Brush the buns with cold coffee or egg and bake them. Let them cool.
Put glaze on the Mardi Gras buns, decorate them and serve.
Baking time
Approx. 15 minutes at 200° - traditional oven.
