5 large ripe bananas
PANTRY
2 cups plus 2 tablespoons (225g) all-purpose flour
1 ½ teaspoons (9g) baking soda
1 ½ teaspoons (4g) kosher salt
1 cup packed (220g) dark brown sugar
1 teaspoon (5g) vanilla extract
1 tablespoon (11g) turbinado sugar, for sprinkling (optional)
DAIRY
10 tablespoons (1 ¼ stick/142g) unsalted butter, plus more for the pan
½ cup labneh, plus more for slathering
2 large eggs

    I made this the other day using the recipe in the description while watching the video and loved it! I’m making it again and have printed the recipe off the taste website. I just wanted to add that in the video description it says 225g flour when the recipe says 255! Also the description says 1/2 cup labneh and the recipe says 1/3 cup. Defo my go to banana cake recipe now!!!

    Browned butter is simply THE BOMB!!! I use it in so many dishes. Steps up the flavor profile in magical ways. And yes, I've used it on popcorn for a long time! It has always been my secret ingredient. I enjoyed your Bon Appetit vids but these are simply way better. Especially the reality of your "mistakes" and how you handle the moldy stuff.     Can also make labneh at home by taking full fat (non-greek) yogurt and straining it in the fridge in some cheese cloth/ clean kitchen towel and a mesh strainer for like 24 hours. I learned from another youtube video.

    As a German Pastry Chef my advise against the mess with scoop and level and the cups and spoons would be to use a scale and the metric system. But other than that great video.

    Also you'll notice that some eggs in a carton are larger than others... that's because they're sold by weight of the whole carton, not weight of each egg. The more you know!

    I have never baked a banana bread before and hoooly Molly, this was good! But I have to say, I am not particularly into sweet bakes, so I had to cut down the amount of sugar in the recipe, 220 grams of sugar on top of the 4 jammy bananas is just too much sweetness for me, darling. Loved it, love ya!

    The reason people don't sell frozen banana's is that they lose a ton of taste and flavour if you freeze them. Some fruits and veggies can be frozen without much loss in taste, banana not so much. All those smoothie lovers probably don't care as it contains a lot of other flavors. I really like this video though, less distractions and more easy going tempo. It helps that people aren't constantly walking in an out of frame distracting from the relaxed cooking and Molly.

    really? i always freeze my bananas for smoothies because i love the texture it adds but i have to actively work to make sure the banana isn't overpowering. if anything it tastes stronger frozen than fresh. same with those storebought banana ice creams as a dairy alternative. no matter what flavor it is you only taste banana.

    @@andres.5204 I agree, banana forms the BEST ice crystals when making smoothies/blended ice cream. But I usually add protein powder which overpowers the banana taste. If anything you'd want even less tasty bananas to only use them for their ice forming capabilities.

    I once upgraded a really basic banana bread (sorry - cake :P) recipe by replacing butter with brown butter and pre-toasting the almonds, bud the almonds were so overwhelming (in a good way ;)) that I wasn't really sure if I can even taste the brown butter :)

    I have measuring cups at home for US recipes but they're such a pain. I studied Baking and Pastry Arts and everything was meticulously weighed to the gram and it's still less hassle than messing with all those cups especially with yoghurt! Also how is 5% the highest fat Greek yoghurt you can get? It's 10% in Ireland.

    i think it's because molly built her brand catering to beginner chefs. that was her niche on BA. keeping it relatively simple for beginners. and if you're just starting out you probably don't have a kitchen scale. i admire it

    Great video, but if I could make a suggestion it would be to include metric measurements. It also makes instructions on how exactly to fill a measuring cup obsolete and may be helpful for an international audience.

    I have a theory on a lack of frozen bananas in the stores. I don't know about you, but I've never seen frozen avocado slices or mango slices or orange pieces either. So it might have to do with the peel/shell of the plant, that's it's just too expensive or otherwise not economically viable to peel all of this stuff. Just a thought.

    Standard American butter is ~16-18% water by weight. European style butter is a little lower at 14-15%. 🧈

    you could pour the browned butter back into a measuring cup and top it off with water to the amount you need (you might need to do some conversions though based on how they measured the butter)

    So labneh/Greek yogurt. You say “1/3 cup” but the measurements in the description say half, and that measuring cup looks like a half. Which one is correct? (I know it’s only a little more than 2 tablespoons different.) also, shouldn’t 2 cups plus two tablespoons of flour be 255 grams? 🤔

    The reason they don't make pre-sliced bananas is because bananas are so cheap (most grocery stores sell bananas at a loss) and people probably wouldn't want to pay the premium price to have pre-sliced and frozen ones when they're always ripe year round unlike most berries and other fruit
