Broccoli - the DNA whisperer | Tom Malterre | TEDxBellingham

Since the age of 10, Tom Malterre has been fascinated by the science of nutrition. In his quest to understand the genius of food, he has achieved both a bachelor's and master's degree in nutritional science from Bastyr University, learned from world experts in medicine at the Institute for Functional Medicine, become a faculty member of the Autism Research Institute, co-authored two books, and coached numerous health care practitioners on using nutritional science as a tool in their clinical practices. Tom loves to spend time with his wife and children hiking in the mountains, harvesting wild food, and tending to the family garden.

    I steam my broccoli and cauliflower. Not too much and then put it in the fridge and eat them as a snack like an apple. Love them.

    It depends on quantity of water used.and heating temperature how huge is it.holes of a steamer,how many are they and how big can they penetrate heat,and lastly how do you need a veggie to be,little bit harder,soft or softer.but all in all steaming vegetables meaningful we need to leave more enzymes within,thats why we need to steam about 15- 25 mins just to make a little bit softness

    You should be aware that heat destroys the enzyme that produces sulforaphane. If you plan to steam, sprinkle just a little mustard powder on top of you cruciferous veggies, it contains the enzyme that converts the precursor substance!

    5 minute in the microwave in the bag. Let sit for 1 minute. As far as destroying the enzyme sulforaphane, I can smell it when doing my morning business so I don't believe it.

    Broccoli and Nrf2 research scientist here. I think a few important points were not accurately delivered probably because the material was oversimplified. There's a lot of very convincing and beautiful data from clinical trials that absolutely need to be shared with the public. I know many people don't like looking at graphs but without actual data, the message of plants that have scientifically validated disease prevention and therapeutic properties, gets lumped in with other random snake oil stories on the internet. Broccoli is a vegetable that has shown very convincing results in epidemiological studies as well as in randomized clinical trials. A lot of good research is behind it and that needs to be delivered to people who don't know about it.

    Stephan there are some foods from which we derive the most nutrition once cooked. Tomatoes are ten times better for your prostate once cooked or turned into tomato paste. Carrots are more assimilatable once cooked. And in any event, microscopy of fresh raw veggies' surfaces show live insects, dead insects, their eggs, live roundworms, coloform bacteria... if you can dig up a potato fresh from the ground it's sweet when raw, but after that it should be heated/cooked. The Chinese know that food is medicine. They also traditionally feel that the middle road is best: not all raw, not all cooked, not too spicy or too bland, not too sweet or too bitter, and so on. Balance. The reason they cooked everything, even if just briefly, is that they fertilized with night soil and saw that cooked foods didn't make them sick.

    Something to remember when it comes for Sulphoraphane is that it needs a chemical reaction to be generated and one of the components of it in cruciferous vegetables is not heat stable. If you want to cook your broccoli and other greens and want the same health benefits add some mustard powder to the dish after it has cooled down. You reintroduce the appropriate chemicals this way and only need a few pinches to have enough.

    I don't cook broccoli and beets. I freeze them to break the cell walls and release the nutrients without cooking.

    My mum was very educated about nutrition and she always told me Kale, Raw Broccoli, and Avocados were some of the best foods to eat, and always eat raw when possible.

    @@jackwyatt1218 , agree. Heard you need to eat the broccoli and most veggies just slightly cooked to get the best benefit. In fact, the longer you cook anything, the more nutrient you kill. If your green veggies are cooked until they are yellow, you have almost killed the nutrient out of the entire plant as well as much of It's flavour. It even "looks" dead and unappetizing. It's probably best to cook most veggies at low temperature.

    I eat 2 cups of lightly boiled cup up broccoli daily. I put some mustard, oil and apple cidar vinegar on it. Im going to buy a steamer basket. I eat arugula and broccoli sprouts too. Seriously, thank God for broccoli!

    @@Niewis Cruciferous vegetable contains substances called goitrogens that interfere with thyroid function by inhibiting thyroid hormone synthesis and thus increasing TSH secreted by the pituitary to make up for the decreased function of the thyroid, which also causes goiter hence the name. You can deactivate these substances by steaming or boiling say the broccoli (cooking with moisture) or fermenting it (think sauerkraut and cauliflower pickles). So it’s safer to eat plants of the cruciferous family in either way. I personally have had a period recently where I’d have blanched broccoli almost everyday for the sole reason of craving it, it was inexplicable honestly (especially coming from a place where broccoli isn’t grown locally and I think I was the first of my family to eat broccoli so regularly, and for the first time) I later then found out about goitrogens. I started craving broccoli this much when I first went off thyroid meds (for hyperthyroidism) and it was the best I felt in 2 years since I was first diagnosed with Grave’s disease. Even my menstrual cycle got regulated spontaneously without any efforts to regulate it put on my part. My health getting better at the time could of course be for various reasons if not only because of the broccoli I was having daily but I think that that daily serving of blanched broccoli played a huge role in restoring my health which is why I intend on experimenting further with this by reintroducing cruciferous vegetable into my diet. I suggest you look more into it and experiment with it for yourself.

    I really enjoyed this presentation, this talk would also be great for young students. The humours message clearly made the point of the necessity to include more or at least one healthy cruciferous vegetable in our normal daily meals. Sometimes a seemingly simplified message can have a greater more memorable impact.

    Heat broccoli with butter in a covered skillet add a little wee bit of water. Throw in a few slices of garlic. Remove from heat. Delicious nutritious broccoli without steaming all the nutrients out of your veggie.

    Smoothies with fruit is inflammatory. Fruit is generally bad for you. Too much sugar. Blueberries are relatively OK if that is all you are doing- occasional small amount of them.

    Respectfully, you are wrong Paul. Fruit is mostly unhealthy for you. A few in season berries likely OK- otherwise FAR too much damaging, inflammatory fructose. This is not my uneducated opinion. I am an expert on nutrition. Look it up and you will see.

    Just be aware of the oxalates in it. I love it too- organic only. It's better than spinach in that regard but still relatively high. Can lead to stones. A well balanced diet aka eating the rainbow is usually best. Of course, no fruit, wheat, dairy and an avocado a day is a great start! Read The Plant Paradox- it's all in there.

    Love this! I read the Brocolli sprout study many years ago. Still shaking my head as why this is still far from common knowledge. The miracle of Broccoli. You like this information? Make your own Broccoli sprouts! Broccoli is great but will NOT have the amazing effects of Broccoli SPROUTS. The study showed that anyone living in a city was much better off than the people in the city not eating them. Chlorella+Broccoli Sprouts+Olive oil=Super detox combo

    Tom...great video, and I read you and love what I read. Truths! I have a question in regards to cruciferous veggies. I have Hashimotos, and I have been on a healing journey now for 2 years. I have healed 24 resultant conditions through food (no gluten, dairy, soy, industrialized oils or processed food...though I find I need the eggs for my baked goods) and proper supplementation. I now eat 80/20 raw diet, the 80 of which is fruits and veggies. No, I do not eat more than 2 pounds of cruciferous veggies in my daily salads. I believe strongly in the value of the nutrition in that particular group of veggies, and eat quite the amount of broccoli sprouts and red cabbage. I have become so excited about the value of food as medicine, that I became an IIN Health Coach! However...and here's the million dollar question...I get loads of gas from the sulforaphanes! I am a nurse, and it is quite embarrassing amongst the patients and staff when I squelch them out unannounced. I have tried cutting out all nuts and nut flours (other than coconut) and L-glutamine supplementation of 5 grams per day...to no avail. So perhaps it is not a leaky gut, but a perfectly natural reaction to those crucifers. I can't give them up. This is my only remaining negative symptom from all my previous conditions. Please help!

    Please go to my Facebook page: Reduce Inflammation. I am on a product called Calibr8. Main ingredient is Sulforaphane (patented version). It took away my arthritis in 3 weeks. I was worried about gas because I cannot eat broccoli. The product also contains 1 million probiotics, so perhaps this is why I can tolerate it with no bloating (and seriously, better digestion, water weight loss and increased energy). The literature is endless on the positive results for cancer patients, allergy sufferers, children with autism.... and on and on.... it all stems from inflammation

    Hey C Rivers! Thanks so much for this thoughtful comment. Due to your own unique microbiome, you may have challenges in digesting and metabolizing the compounds found in these veggies. And/or you may have some genetic variations that increase the likelihood of having this issue. Have you worked with a Functional Medicine practitioner on your digestion and balancing your microbiome? Have you looked in to mineral supplementation (especially molybdenum)? By the way...5 grams is often not sufficient to experience benefits from glutamine. Many of effective protocols are between 10 to 20+ grams. Just make sure your kidneys are functioning well and you do not have elevated ammonia. Best of luck to you!

    Hi Tom! This problem appears to have resolved for the most part. I imagine it is because my gut may be truly healed at this point through continued epigenetic applications, and additional nutrients my research has suggested I intake. I'm a happy girl at this point! Thanks for your response. Greatly appreciated. And I love this video!

    Always been a big believer in healing through what God gave us - I love all vegetation including cruciferous family but I did not know steaming for 10 min would kill off a lot of its nutrient. I will now steam for 2 min thank you!

    I understand that munching on broccoli microgreens (and chewing them up very, very well) are the best way to absorb all those healthy sulforaphanes and add a protective layer against cancers.
