    @@thebritstry Go 40 miles south of Austin to Lockhart, Texas. The Capital of BBQ. And 30 miles east IS Elgin, Capitol of BBQ Sausage. (Unfortunately, the Texas Guv installed tollways on the direct routes, but there are good alternatives.)

    Smoked turkey is the most underrated bite in barbecue. Poultry takes on smoke like nothing else.

    Chicken too. Many places don't do it, but a properly done smoked thigh is a thing of wonder. Especially if you're a huge smoke fan. Easy to dry out, though, because the pieces are smaller than most other things, so you can tell if a place pays attention to it.

    I was there in Austin travelling on vacation this past Tuesday just a few days after this was released. Never had true TX BBQ before. Not a single thing they said was an exaggeration. The food and the experience were divine. Definitely going back. TX was awesome and the people so friendly.

    I was there in the fall for the first time, didn’t believe the hype until I tried it. Went to Franklins, not sure I would do it again because of the wait, but dang that was some of the best food I’ve ever had.

    Seeker: I was born in Fla and ate BBQ my whole life. IN the central & deep South when you say BBQ you mean PORK. How is pork liked in Texas or other states that prefer Beef?

    @@KindCountsDeb3773 I grew up in northwestern Pennsylvania; spending my summers in eastern Tennessee. In PA, we usually had a mixture of beef & pork at a BBQ. Beef & pork ribs, brisket, shredded pork, etc. In TN, I don't think that we had _any_ beef. It was all pork (ribs & shredded), & maybe some fried chicken or a deep fried turkey.

    I grew up in Texas. I took our good food for granted. I thought everyone knew what good BBQ, Tex-Mex and Southern foods in general was like. Then I started traveling around the country and realized every region of the USA has its own food traditions. Some were amazing. Some…… not so much. But I’ll always have a soft spot in my heart for Texas BBQ, Tex-Mex and Southern food. It always makes me happy.

    I reside just northwest of Houston, have several BBQ restaurants to choose from as well as the smoker in a parking lot (my favorite), Tex-Mex galore. Just a short drive is Tomball with two legendary “country kitchens”, Mel’s (just reopened after a catastrophic fire) and Goodson’s. Sprinkle in the Louisiana vittles post Katrina. Drive into Houston and you’ve arrived to the culinary capital of the U.S.A. Pick a cuisine you’ll find it.

    I ate at Terry Black’s last year. It was all incredible! One of the best things on the menu they didn’t try, the creamed corn. I don’t know how they make it, but it’s ambrosia, the food of the gods, truly.

    Banana Pudding is a holy sacrament in the South. If you need a written-down recipe, you are a beginner. I have 50 years of making it by how it looks and feels when stirring that dreamy custard. Still, I think I can improve it!

    ​@@thebritstry that mouse-like dessert is what we call "pudding" here. It's a creamy flavored gelatin dessert, commonly in banana, vanilla or chocolate. We also have less common pudding flavors like pistachio, rice pudding, and tapioca pudding. As easy to make as fruit Jell-O 🙂

    When I went to Houston TX in 1988 that was the best brisket I ever had. When Nicola talked about the dry turkey in the UK I busted out laughing 'cause I've been there and ate it - she ain't lying lol.

    Now you know why Texans are so happy. We are surrounded by bbq, southern food, and Tex Mex. Do keep in mind that it’s about to be summer in the south. That means it is going to start getting to 100 degrees and hotter. If you plan on making visits to the south over the summer, plan accordingly. If you’re not used to the heat, it can hit you hard.

    I'm in Houston we have that and so much more. All of the Cajun and Creole food from Louisiana. All of the Gulf Coast seafood. Tons of international food. We have a Pho shop on every corner. We even have hybrids like Viet-Cajun. Viet-Cajun crawfish will change your world.

    Having lived in San Antonio Texas for 4 years, I can honestly say that barbecue in Texas is king. Each smokehouse has their own flavor and they're All unique and delicious. It's best enjoyed without barbecue sauce. God bless Texas 🤠

    So, are y'all ready to move to Texas yet? I love that you ate it without barbeque sauce. If it's good, it doesn't need it. The sauce is for when you have chopped brisket sandwiches usually. I think that Terry Black's seasoning is just a pure salt and pepper. The rest is good wood smoke. I have to tell you, I moved to Texas from California a long time ago and when I tasted brisket for the first time it blew my mind. How can anything so simple be so delicious? The rest of the food there is really good too. The potato salad isn't too heavy and mayo forward, And the banana pudding...OMG. I'd stand in line at 6am (and have) for Terry Black's. The next time that you're in Texas, please come down South of Houston. We're famous for the Tex-Mex, mesquite brisket and seafood. You haven't lived until you've had char grilled oysters on the half shell with garlic, butter and Parmesan cheese on them. Thanks for another great video!

    I live on the coast of Texas! As a young kid, we ate alot of seafood. Gumbo, fred fish and shrimp, boiled shrimp an crabs, oysters. We caught everything we ate our self! And my mom opened up a barbecue place in the 70s! With a secret family barbecue sauce! But I'm like y'all, I like my meat without the sauce. Family get-togethers was always barbecue! But Tex-Mex maybe my favorite. We also ate a lot of what is called nowadays soul food. But it was just country cooking back then! We was raised up poor, but turn out we ate like rich people! Lol

    That's funny. I've got 2 racks of beef short ribs in the fridge ready for the smoker in the morning. Glad ya'll liked our grub. And a general rule of thumb. If central texas bbq is done right. Sauce is not needed. So you guys are spot on there.

    I remember cutting class at Calhoun and going to Big Bob Gibson's in Decatur for lunch. Their homemade pies are incredible. Chocolate, coconut, pecan, lemon meringue, etc. Their white sauce for chicken is very good. The white sauce recipe is online.

    So, guys, Texans typically use a coarse salt and pepper rub (Dalmation rub) to coat the meat (brisket - breast cut of the cow) before smoking. It forms a crust called the bark. Salt penetrates the meat from this drying brining technique. Low and slow smoke and convection heat for a long time, and it comes out juicy and tender. Sometimes, they may squeeze in a little garlic powder. Happy eating. 😊😊
