This is making me proud that my friend from Texas gave me mad props on my dry brined Tri-tip BBQ I brought to a friends birthday. Cooking for people already has me nervous but I try my absolute best and having the nod of a Texan native meant a lot to me. Half the battle is having the patience to do prep work for at least 24 hours before ever cooking the meat.

A multifaceted, complex art requiring knowledge & experience, often handed down through generations! And a labor of love. Chopping wood, stoking the fire, hovering over hot smokers tending the meat makes you dirty, gritty, hot & sweaty. The smoke burns your eyes & so does the sweat when it rolls into them. BUT you counter that with the company of those you love, hours of conversation & laughs, coolers full of ice-cold beer & cokes, & pitchers of iced tea & lemonade. And the payoff is sublime!

You can make barbecue just like that at home. All you have to do is smoke your meat.Don't bake it don't grill it on a grill.Don't broil it in a broiler. You have to smoke it With hard wood at about two hundred and twenty five degrees For about eight to sixteen hours depended on the size of the meat... General Rule of thumb for beginners is 45 minutes a pound for each slab of beef or pork for poultry 30 minutes a pound for fish, 15 minutes a pound...... Never smoke food on the flame, always away from the flame. The flame on one side the food on the other side of the Grill

What's amazing is that TX BBQ is totally different from other southern states. Kentucky or Tennessee enjoy the sweeter flavors. TX goes big and bold. The amazing thing about the US over any other country is that we have so many different cultures that have made their homes here and the cuisine follows. Seafood in the northeast, cajun (french/african) in Louisiana, BBQ is the south, West coast asian fusions and chinese/japanese/korean. You can find everything here.

I WISH I could go back in time to this place, the food was just mind bogglingly good. And shockingly, one of the best BBQ joints I've been to outside of Texas or a more southern state, was in NY in Brooklyn. A place called Homestead BBQ (I think it's called Homestead, I'll have to google now lol) was just amazing. They have a BBQ pastrami that is amazing.

Banana pudding is made with a package of pudding which comes in a cardboard box and it's just filled with powder inside of a plastic bag inside the box. you mix it with milk and heat and then refrigerate and it turns to pudding. you maybe also have to add sugar. then you just add slices of banana before you refrigerate and top it with reddiwhip (a cream that sprays out of a can) and nilla wafers which are a slightly sweet cookie.

One of my favorite things about America is how every region has it's own foods they do better than anywhere else. If you're ever on the east coast, like right on the water, you need to try the local seafood, best I've ever had. Everything from the the maple syrup in Vermont, to the peaches of Georgia, to the wines and oranges of California, food is culture, and Americans love sharing good food with everyone, it's one of my favorite means of cultural exchange.

@@johnroberts1849 I lived in KC for 25 years, and while I'm OK with those showing some hometown (I moved there as an adult) pride, I won't say it's better. I will say it's on par with Texas, but it has a different heritage and philosophy. That makes direct comparisons impossible, and Carolina BBQ's yet another thing. There can't be a "best" when the players all take a different approach to a similar, but not identical outcome. That's the three BBQ centers, but I'll give a shoutout to Memphis for its ribs, and all the little BBQ joints in other towns and following other traditions. It takes a national-level chain to fuck up Q, and in a good sit-down restaurant you might get some good stuff, but a joint will give you as good or better, for a much lower price. Yeah, I dove right into the KC Q culture, then wallowed in it. I want to send some of my homemade rub to Atlanta, but managing packaging, shipping, and who knows what applicable laws, not sure I can swing it on a disability income. All I can say about that is once I got it dialed in, folks started refusing to use sauce on my ribs. This ain't me trolling, this is from an important part of my life. Then he started to cry and I asked what was wrong and he sobbed, "It's almost gone!" 🤣 I told the deli guy how much the sandwich meant to my friend and he packed us each a sandwich to go free of charge for our journey! So, as a native born Texan... first, thanks for coming over and enjoying our lovely BBQ. Secondly, I have good news for y'all. I have a buddy in Australia who makes his own BBQ, and says that y'all can do this stuff at home. A good smoker can be built, or bought, and there are tons of KZread videos to help you with that. Making the Q....well, that just takes time and experience. The more you try it, the better you'll get at it. Imagine how much of a local hero you'll be once you figure out how to do this at home. So here's encouragement. You can do it. Absolutely.

BBQ cooking is a hobby. As is fish frying. I would encourage them to partake in BBQ ing in New Zealand.

The difficulty in making TX bbq is getting the mesquite wood for the smoker…you can get mesquite pellets but chunk wood is going to be more difficult.

In Australia, there is a bush that is actually mesquite. When used for smoking, it tastes like you've used mesquite. But even in NZ you can get charcoal, which can still be used for making good BBQ.

As a Texan who's spent quite a bit of time in NZ. They would unfortunately need the correct wood and meats for this. Their standard meat is a bit different even down to Sausage which is nothing like American sausage. So if they can find those two things, the proper meat and wood, you're golden. Even if you have to seek it out, I think a good BBQ on the weekend for the family is well worth the effort.

Real BBQ is a matter of putting your heart and soul into it. So if you have the heart and soul, you can do it. But it might take years of trying.

As a Texan, your reactions to the turkey mimicked what I felt when I moved here from California. Hahaha. You all were crying tears of joy! Americans may be overweight, but we eat happy!

I remember going to Jack Stack BBQ in Kansas City, after a Chiefs game. I got this huge meat platter, with like 5-6 different BBQ meats on it, including smoked turkey. I took one bite of the turkey, thinking I’d probably not eat much more & just focus on all the ribs & burnt ends. Msn, that turkey was so friggin’ good, it almost brought tears to my eyes🤣
