    My mum used to make these with a roast and peas, yumm. She also used to make toad in the hole and I do not know how to make that. I grew up in Yaxley but now live in USA. We cannot get good fish and chips here. I miss going down to the chippy!

    British Cook you asked for it. Here goes: Mushy peas, mashed carrots with mashed parsnips swirled through, leg of lamb with gravy and Yorkshire pudding! Dessert: Scone with your Clotted cream OR Sticky toffee pudding. How bout that?!     I tell you what Drew - I used to eat this Irish dish in O’Neils which was mash potatoes with cabbage mixed in I think - it had a special name - and they served it with sausages and gravy - it was lush! Could you do a video on that? Xx

    My dad used to shake the boiled potatoes in the pan and then scour the surface with a fork to create maximum surface area for oil uptake to get a really good crust and fluffy inside - I don’t know how much of a difference it makes but then they did look cute with all the little ridge lines in

    I've always made roast potatoes with King Edwards potatoes and dripping and sometimes just lard, but they always come out like yours did. They also make great baked potatoes, chips and mash because of their texture. I grew up with King Edwards potatoes, my Dad used to grow them on the allotment when I was a child + other veg and fruit of course. I would like to see you make choux pastry buns or chocolate eclairs please Drew

    Lovely memories Ena! Yes King Edwards and Maris Piper are normally what I use in the kitchen, King Edward potatoes are best for roasties and chips I think.

    New subscriber here from America {California} my parents came to America many, many years ago. My Mum could make a great roast potato, she has passed~ and my sister and I come pretty close to making them perfect... but we fall a little short {boo}. But here it is Thanksgiving day 2019 and about to attempt ~, found your channel. Beef drippings, never tried this. Question... do you think the pan depth is part of the crisping up? I'll be on the hunt for beef drippings for Christmas dinner roast potato's. Thank you!

    Hello, you need a bit of depth to the pan, over 1.5 or 2cm to be safe with the fat, I think the trick is a bit of depth of fat and lots of basting :D Did you give this recipe a go? I've uploaded a lot more since so make sure to check the new vids out.

    Ooops, sorry Drew, I watched this again. The beef dripping is also solid like the lard and white, and u added both to the baking pan, right? I can't wait to make these , they look delish. Here in America we have Yukon Gold, and for this recipe I will use what is called either Idaho or Russet Potatoes. Thanks for the recipe. My husband is also gonna love these.!!

    You are a far braver cook than me! I would only make these potatoes in a pan *at least* four centimeters deep. Of course, if I were to make this dish I would have to render my own beef fat (tallow) because we can't really buy that in the US. We *can* buy lard, and I can even get freshly rendered lard every weekend at my local Mexican grocery and deli. I just have to take my own pot and lid because it's still boiling hot when they sell it. Just one of the many reasons it's good to live in California! I once saw a very long, involved recipe for English roast potatoes that involved partially boiling the potatoes, cooling enough to handle them, roughing up the cut surfaces with a fork, and then roasting as you have done here. I was never masochistic enough to try it, but these are not nearly as fiddly so I may give them a try the next time we make a nice roast beef dinner. Hey! I even have a roast thawing in the fridge for our Sunday evening dinner! I'll just have to see if the butcher at the Mexican grocery has any beef fat he wants to sell for a reasonable price tomorrow morning. I may even be able to get some of that nice, white fat around the kidneys to save for pastry! I wonder if he'll let me trim it off myself? There are certain advantages to being a trained chef. ;-)

    Hey buddy, that sounds delicious. Yes it is probably safer to use a deep pan. Potatoes can be seen as a really important bit of the roast here. That's why people spend a bit of extra time getting them right.

    Hi calichef. The reason why you rough up the edges of the potatoes is to make them more crunchy when roasted. Make sure you select potatoes that are "floury" in texture rather than "waxy". Here in the UK, King Edwards are the best. After you've pre-boiled them, drain and return to the saucepan. Let them dry slightly in the residual heat then give the pan a good shake. That roughs them up without all the fiddling about with a fork. The other thing to remember is that the fat has to be REALLY hot when you put them in as British Cook explains. I baste mine with the hot fat before I put them in the oven. Enjoy!

    Wow, they look fantastic. I have just started using lard for roast potatoes. I boiled lightly then scuffed up surfaces in pan. They ended up under the grill as my 1950s 0ven packed up, I got the gold crust, result was ok but your result here looks spectacular. Potatoes are my favourite vegetable, I totally agree, the gold crust is vital and is very rare at chip shops, although there is a fantastic chip shop in BARMOUTH WHICH GETS IT. rOASTS OR CHIPS, THEY NEED THE GOLD CRUST AND THE FLUFFY INTERIOR. Excuse caps. I have subscribed, first time I've done this on youtube so I hope to be able to retrieve....the thing with British cookery is how Brits light up when it is mentioned. We have absolutely fantastic traditional food. I look forward to seeing more of your videos, thanks very much for this, Mark.

    It costs about 40 pence in the shops 🤣🤣🤣? No paid placement or freebies anywhere unless declared. Bear in mind a lot of my videos were posted when I just had a couple of hundred followers. I love Britain, I'm british and I love the union jack. X

    You are better off not using butter, butter burns at this sort of temperature. Sunflower oil works well for high heats.

    Could you make Spotted Dick sometime? It looks really good on the can cover, but I'm not sure about any kind of canned puddings. I'd rather make it fresh!

    Why do you boil them first? 40 minutes in a hot oven would cook them through.

    your cookings excellent results my frend but you talk too much , more on the actual cooking and less of camera on you talking and promoting . sorry to say but i watch loads of cooking vids an i get bored wi you talking an waiting to see the actual food being cooked lol yr still my best pal though
