Brioche loaf and buns in ASL

Ingredients:
Sponge/polish starter:
! cup all purpose flour or bread flour
2 1/4 tsp yeast or one pack active fast
1 TBS sugar or honey
all combine to mix and cover the plastic for 30-45 minutes to foam
after done sponge then add:
5 cups flour
6 eggs
5 TBS sugar or honey
1 1/4 cup unsalted butter softened
all combine and egg /flour put one a time then mix till smooth
and massage and make the round and put in the mixer bowl and cover the plastic for an hour to proof knead.
use the scale divide by dough whatever you cut loaf or buns
buns dough 4 oz each scale
loaf divide by 3 around 11-12 oz each dough.. depend
after done then cover plastic other 30 minutes to proof
eggwash:
1 egg
1 TBS water
mix it then brush on top the dough
bake 375 for 35 minutes
