    I was disgusted with the feces at first, but upon learning that it will all become the sand that we frolick on really gives everything a different perspective. Almost a beautiful cycle in a way. Thank you for such educational commentary!

    Hahaha, that's really sweet lol, I used to work in a meat department (also a country store that did whole bodies) and did fish (and everything else) everyday :) We get the fish already gutted (worms live in fish guts and the longer they're left in the fish... well... the longer the worms have to get into the flesh BARF), and mostly just take the head, fins, etc off and filet, just like this guy did. I have gutted normal eating fish and it's easier than this, everything just kind of slides out with a gentle tug in a tidy flesh bag lol.

    @@Zarroxius we only occasionally received fish that had worms (and it was always cod), I pulled them out with my two fingers but damn if that wasn't the most revolting part of the job and ruined cod for me forever. I never found worms in a freshly killed fish. You can tell fresh fish in a grocery store by how wet it looks. Try to get the slimiest looking fish you can, lol! The nicest fish i ever saw in the store was a perfect farmed salmon, SO BEAUTIFUL and still had its outer slime (fish in the water have a goopy slime coating that dries out fairly quickly). But fish in the grocery store dries out under the case lights, so in all instances, the wettest fish is the bettest fish.

    I'm from Indonesia and I can find this fish a lot in local market in the eastern part of the country. I'd say that this fish is best char-grilled, brushed lightly with sweet soy sauce. When cooked this way, this parrotfish tasted best compared to other fishes I can find in the area (including tuna and marlin)as the meat have such a bouncy yet firm structure with little amount of bones. I figured from your video that the sweet soy sauce and char (+ the smokes) might have kill all the smell, leaving the sweet meat taste behind. Probably you can also try that some time!

    @@gurennnnn It’s available throughout Indonesian waters, but I would strongly discourage anyone to eat it, as the fish is crucial to maintain coral reef health.

    If anyone reading this didn't know, parrotfish secret a mucus from its mouth that covers its entire body like a cacoon before it goes to sleep. The mucus traps it's scent so other things like eels can't find them by smell and attack them while they are sleeping. Instead of using fire to sear the skin, you should lightly pour boiling water over the skin side, just until you see the flesh curl a little bit. It will help to get the mucus off of the skin. If you pause around the 1:00 mark, you can see the mucus in between the scales, especially on the lower half of the fish. If you do it right, it really can be delicious. Oishii!!!!

    When I was first in Japan I asked if I still needed to express gratitude for a meal if bought all of the ingredients and made it myself. The answer? Always. In that case, I would be expressing thanks that I could afford to buy the ingredients and thanks that I had the health & ability to prepare the food. So always say "go chisō sama deshita" 😁

    I have never seen a "cooking show", where the host literally has no idea what this thing is going to taste like, and yours is better, because you caught it yourself. And to go through all that careful preparation only to say at the end that it's "disgusting." I love it. I don't eat fish, but that was entertaining. Well done.

    I wonder if perforating the digestive tract made the fish taste bad. It must contain strong acids to break down the coral it eats. Where I live it’s known if you perforate the digestive tracts of certain animals it ruins the meat because you can never wash it off. Maybe parrotfish is the same 🤷🏻‍♀️

    Parrotfish meat really has a strong smell and aftertaste. Even if you clean it with the finest of knife skills. It's just that bad, maybe worse than you think. The fishy smell is too overpowering sometimes. When you cut it open to get the guts, make a diagonal slit on the belly's side, not directly below. The skin and flesh are much thicker on the side and you'll easily feel the "give" when your knife hits the peritoneum, avoiding a messy puncture to the guts. Best way is to just grill it to the point where the skin is charred and the meat absorbs the charcoal odor, which takes away some of the smell. Marinating the fillet in gin/sake or lemonade helps too. Salt and pepper to season, and you have a nicer meal. Tons of things you can do to make it taste better. This guy ate it as sashimi...that takes quite a bit of courage...or idiocy. I used to spearfish and catch these from back when I was younger. There are much better fish out there for consumption. Parrotfish helps the coral reef and they are essential to beach formation. But when it comes down to eating and dying of hunger, the choice is easy.

    Really cool video^^ just a side note for anybody who sees this video and want to try eating this, Parrot fish are extremely important for coral reefs all around the world. They eat dead coral, keeping reefs healthy and also making the white sand we sea on beaches. If you can help it, please avoid eating Parrot fish. We need them to keep our oceans healthy!! :)

    Most species of parrot fish eat the algae growing on corals. Which is very important because the algae suffocate coral. There are a few species of larger parrotfish that do eat corals themselves though.

    That's interesting about fish not needing large hearts because the buoyant forces negate the forces of gravity. I wonder if humans living in lower gravity would eventually develop smaller/weaker hearts in the same way.

    There's a sci-fi book series/show called the Expanse that gets into this. There are humans called Belters, who were born in space (either on space stations/or on ships) and over a few generations are better adapted for space but struggle or could even die from planetary gravity being too much pressure on their heart.

    Id assume so given that even humans go through physical adaptation for their environments. For example, look at the people of the Andes Mountains: Their hearts are larger, and have up to 25% more and thicker blood than those who live at sea level for better efficiency of pumping blood and a greater distribution of oxygen at such high elevations.

    Yup this happens! Astronauts in space and long distance swimmers end up with slightly smaller hearts from the change in gravity/pressure. I read an article on it a couple of years ago but I can't remember where it was

    I wish there was this kind of resources available when I was in culinary school. We used to go up and down the coast to places that we heard had some badass ingredients and beg, "will you let me shadow you for a night of your choosing in return I'll wash dishes, repair something, etc. Whatever you need." Sometimes they'd say yes, how about right now and sometimes they'd say sure, come back in a couple days. Scheduling was ridiculous but it was grind.

    魚の味ってのは結局何を食べているかで決まるってのを最近知りました。 和歌山のとある地域のイスズミはマグロや真鯛の養殖の溢れ餌のイワシを食べているから、臭くないしめちゃくちゃ美味い。 同じ場所で釣れるサンノジも全く臭くなく、もともと身質が良いので最高。 同じように厳冬期のグレシーズンになると釣り人がせっせとオキアミを撒くので、それを食べる磯のイスズミも美味い。 逆に明石のブリやメジロであっても、イワシが瀬戸内に入ってこない年のは脂のノリもイマイチで、アジも居なくて甲殻類やエソが胃袋に入っているようなブリは、いかに明石のブリであっても不味い。 面白いですね^_^

    I'm from Singapore, but never knew that a fish had my country's name in it so this video was pretty cool to watch! I think I have eaten it once years back, and we had it sliced for hotpot (with dashi broth as soup base). From what I remember, the fish had a stench to it and despite dipping it in soy sauce with chilli padi - I still found it quite unappetizing to eat. I finished it though, but it definitely left a bad taste in my mouth afterwards :v

    My uncle has only ever really baked parrotfish in some kind of oyster sauce mixture with lap cheong and green onions, and it's honestly the best. I cant say ive ever seen or heard of anyone in Hawaiʻi who had used parrotfish for sashimi or poke, there are way better options in our waters, but I'm sure it differs from culture to culture.

    Living in Hawaii yeah I definitely use other fish for poke. But out here in Okinawa, I love making sashimi out of these uhu. And they're definitely more plentiful our in Okinawa

    When I was a kid, I went fishing and we caught and fried up a bunch of poisonous California scorpionfish. Even though I did catch a few, hearing how Deadly they are I was way too afraid to touch a live one or even reel them all the way in (they had to finish for me). But let me tell you--- it tasted RIDICLOUSLY good! I couldn't stop eating them--- I felt so guilty because I knew if I had my way those poor fishies would go extinct lmao

    They aren’t poisonous, they are venomous. The spines when piercing skin will inject a venom. Should be pretty much harmless if injected.

    It's just yesterday that i n my family eat that tiny size of fish, about palm size, a little bigger perhaps. Here we're using a minimal traditional seasoning like turmeric, garlic, and salt, and marinated for half a day and the deep fried it. Serve with sweet black soy sauce with chopped tomatoes and bird's eye chili. It tastes delicious combined 👍

    Is it just me or the "deske doomo" shows up so very frequently in this Japanese narration. I love the language and am keen to learn it one day. As for the fish and Masaru san, great job as always with the cooking, plating and super honest reviews at the end. Tells it like it is.

    Its curious and interesting how japanese people think on "making the food bite size" even before cooking, instead of cooking it whole and cutting the pieces yourself. Really nice video, good work

    Love that he's not a pro and is a regular guy like me. Love the videos. My little advice would be to keep all knives sharp and when working with meats, especially fish, keep it cold. Cold fish and sharp knives will give great cuts.

    looks like it'll be delicious if cooked in a stew. we have fish/seafood stew with plenty of tomatoes, clam, prawn, fish, etc. It works well with most seafood except crab (since it has to be simmered for some time, crab meat will lose its natural sweetness).

    I went fishing to a local river and caught a trout and was so proud of myself. I cleaned it and cooked it right away and it tasted absolutely horrible. I have no idea what the problem was but it’s possible these fish are taking in some type of food that makes them taste bad.

    How clean is the river, and what type of trout? Trout is generally really nice. Very similar to salmon.

    Don't think I've ever had a bad tasting trout. Regardless whether it was a reservoir, stream or river. My guess is you caught a bull trout which can have a muddy taste. If I remember correctly it's from a chemical that can be found in other trout species but it's pronounced in bulls. If your unsure marinate with some lemon slices and leave them in for grilling. If it was strong fishy taste, that might be directly caused by substances in it's environment because trout is a very mild tasting fish.

    Masaru-san, maybe you can catch another kind of fish in your local river like the prawn video you make and cook it on the spot, just like in your old video where you catch and eat a pleko/プレコ it would be fun to watch

    You need to catch a Lingcod. They're normally in the colder Pacific waters so I imagine they'd be near Japan as well as Northern California. Their flesh is blue like the sky. Beautiful.

    Some have blue meat. And they are only endemic to the west coast of america & canada. They dont even have em in southern california.

    Very educational. I have never heard of the Singapore Parrotfish being poisonous (maybe due to its diet?). Parrotfish is amazing because the flavor is very different by region… when I worked in Guam is was very coconut flavored (even raw). In Mexico is was very sweet, almost sugary. In California is was very grassy almost like salty nori

    I ate quite a few parrot fish in Palau 🇵🇼, steamed whole and sashimi style.. i don’t remember it having any sort of bad smell or taste, i just remember it being delicious

    I think it must be this particular kind of parrot fish, the Singapore parrot fish. I've had normal parrot fish as well, and it tasted/smelled fine to me.
