Breakfasts for when you don't have Time in the Morning (overnight, vegan)

Oh hello, didn’t see you there! You just clicked on a video filled with super easy and delicious breakfast recipes for when you have no time in the morning! Super simple and straightforward meals to prepare the night before: Nutella Flavored Overnight Oat - Mousse, Spinach Pizza Polenta Bites, A Copycat Version of Pamela Reif’s infamous Peanut & Chocolate Nut Clusters, An Overnight Green Smoothie Hack and super tasty Chickpea & Hummus Wraps.

~ INGREDIENTS & NOTES ~
#1 “Nutella” Overnight Oat - Mousse 0:34
1 cup quick cooking oats (90g)
3 tbsp hazelnut butter
1 ½ tbsp unsweetened cocoa powder
½ tsp vanilla
3 tsp ground flax seeds
2 tbsp liquid sweetener (i used rice syrup)
1 cup non dairy milk (250ml)
toppings: a few tbsp soy yogurt, handful of berries, roasted hazelnuts, banana, plant based nutella…
→ serves 2

#2 Overnight Green Smoothie (without bananas) 2:22
2 green apples, cut into slices
3 soft dates
1-2 tbsp lemon juice
1 handful of walnuts or 1 tbsp nut butter of choice
optional: a pinch of cinnamon
1-2 cups of greens (i would recommend fresh baby spinach here; in the video i used 2 cups baby arugula - which tastes INTERESTING. Not bad, but INTERESTING, if you're new to green smoothies start off with fresh spinach for sure, add less greens in the beginning and then work your way up to adding more and to experimenting with arugula, kale etc)
→ serves 1-2

#3 Chickpea Hummus Wraps 4:21
1 small onion
1 celery stalk
1 small red bell pepper or lengthy pepper (what do you call the one i used lol)
oil for the pan
1 small handful of black olives
1 tsp sesame seeds
1 tbsp lemon juice
1 tbsp soy sauce
1 tsp agave syrup
1 handful basil leaves (or parsley or any other herb you like or skip)
½ can chickpeas (120g = 4,2oz)
2 heaping tbsp store bought hummus
IF the mixture feels a bit dry, add 1-2 tsp non dairy milk!
2 handfuls of greens (arugula, spinach)
2 medium tortillas
optional: extra sauces to serve these with (or add that to the filling when wrapping these up) such as extra hummus, salsa, sriracha, vegan mayo, vegan yogurt sauce (1 heaping tbsp vegan yogurt + 1 tsp white wine vinegar + a pinch of salt)

#4 Peanut & Chocolate Nut Clusters - Mina’s Version 6:41
¼ cup smooth peanut butter (60g), preferably deep roast
¼ cup + 1 tbsp brown rice syrup* (60ml + 1 tbsp)
1 tsp vanilla
½ tsp salt
1 ¾ cup roasted, unsalted peanuts (260g)
½ cup puffed quinoa (18g)
100g or 3.5 oz of dark chocolate
→ yields just so many clusters, use a 20 x 20cm baking dish here! (8 x 8 inches)
For breakfast, serve some of these w vegan yogurt + banana + iced almond latte highly recommend!!
*so comparing my two batches, one using rice syrup the other agave, for some reason the rice syrup one turned out way more crunchy - probably because it is less liquid-y than agave? So i think i would recommend the rice one more

#5 Spinach “Pizza” Polenta Bites 9:28
drizzle of olive oil for the pan
1 onion
a pinch of chili flakes
100g fresh baby spinach (3.5 oz or like 3 large handfuls)
2 3/4 cups water (680ml)
2 tsp vegetable broth powder
1 ¼ cups polenta (200g)
½ cup vegan parmesan* (40g)
about 6 tbsp of store bought pizza sauce
if you fry these (which i highly rec) - also oil for the non-stick pan!
topping ideas: hummus, cherry tomatoes, basil, additional vegan cheese, beans, sesame seeds, hot sauce …
*recipe for homemade parmesan:
blend up: 1 cup cashews (140g), 1 tsp salt, 1 tbsp nutritional yeast, ½ tsp garlic powder, ½ tsp onion powder)
→ serves 4 (yields a 20 x 20cm , 8 x 8 inch baking pan)

    as a suggestion for a study snack; i usually dice up some apples (blueberries work really great too, as they enhance concentration) and toss them with some lemon juice, cinnamon and nut butter (could be any kind, usually peanut for me) in a container and top it with some granola and nuts! it’s really easy to throw together and you can take it to school or any study space. nuts and berries are really good for your brain so it’s great as a study snack. i just eat it with a spoon :p love your videos btw!!

    @@assiuuskallio2960 I watched it just to see what she is making although I know this won't ve my regular but this will take less than 10 min.. Unless u skip breakfast, I don't think u can make much in that much time.. U can make eggs in lesser time.. Anyway it might be cultural thing bcz here anything we maje as breakfast will take longer time than this so I thought it was short one

    just wanna say i tried the “nutella” overnight oat - mouse (i used almond butter instead) and the chickpea hummus wraps (i didn’t use olives or celery but i highly recommend adding fresh basil) and they were both so delicious and definitely worth trying 😋💛

    @@pradepar2065 for one serving i used 1/2 cup oats and 1/2 cup milk. But, when i made it with this powdered peanut butter mine came out liquidy as well. so i used around 1/2 cup of oats and 1/3 cup of milk i think. 😊

    @@rooshi7 I actually tried it today and I really enjoyed it! I didn't have any nut butter so I put in crushed hazelnuts and some soy joghurt (tho i don't think that would have been necessary). I think I didn't blend it long enough but still, I really liked the oats not being mushy lumps. It was really light and yummy :)

    I actually just attempted making it tonight and didn't have any nut butter so I used some yogurt instead. My mom actually blended all the oats so it isn't in big chunks and is in this fine oat powder instead, so I just mixed up the oats and yogurt in a bowl and put some water in it when it was too thick. Looks really promising so far, can't wait to try it tomorrow!

    Favorite study snack: popcorn with different seasonings. can go sweet or savory. Sweet: coconut spray, honey, cinnamon, and a pinch salt. Savory: coconut spray, salt, nutritional yeast, paprika, maybe some cayan for spice.

    A study snack idea: cut cucumbers in half and remove the inner parts (the seeds) and then add mashed avocado and vegan cream cheeses in them, and top it all off with everything bagel seasoning! perfectly delicious, easy, and not messy to eat while working on something. :)

    My favorite study/quick snack is chocolate dipped fruit, the twist is adding cacao nibs to the melted dark chocolate for extra crunch and also adding crushed nuts over the chocolate-dipped fruit before it turns hard... so good!!

    For the study snack video: When I was studying for my A levels, I always had a big glass of iced coffee or matcha latte with tapioca pearls in them so that I always had something to chew on.. I just used tapioca pearls from an Asian grocery shop that only take like 3 minutes to make. Also very simple but plates of cut up fruit was a must.

    this is perfect! i'm actually going to do the overnight oats rn and i'm really curious how they will turn out because i had like a phase a couple years ago were i tried out a million over night oats recipes but they were all kind of meh, so i'm super ecxited to try this version! Update: I absolutely loved it! Highly recommend!!

    Those mousse oats look divine! Never thought blended oats would get that texture! As for study/work snacks, a slightly weird but favorite one of mine is a simple bean salad: flageolets or lima beans with some fresh basil, red wine vinegar or lemon juice, salt and pepper.

    One of my favorite study snacks is banana and walnut bread with almonds on top; this takes time to make but lasts for about a week; plus side is that its super tasty and healthy as well! BTW: I love your videos and recipes, love how they are so unique and simple. :)

    perfect study snack in winter would be fresh ginger tea, especially with added elderflower sirup and then probably fruit and chocolate or yoghurt mixed with cocoa powder and sweetener and then topped with banana and roasted hazelnuts - tastes exactly like semi freddo my mom used to make

    My study snack lately are persimmons, with some chopped dates and a smooth peanut butter drizzle on top. Also pita bread pieces with this greek dip (I think it´s just cooled down mashed potatoes, some mayo/vegan mayo/soy joghurt and lots of garlic?) with some veggies alongside it.

    One of my favourite study snacks is sweet potato chips baked in the oven (takes a bit of work, but yum) alongside a hummus based dipping sauce. Another one is roasted chickpeas- mixing canned chickpeas with some olive oil and spices and baking it. It's tasty and healthy-ish.

    my fave quick snack for studying and just in general: add a heaping teaspoon of gochujang (pr tablespoon depending on how big the pot is) to a pot of hummus, and then loads of hemp seeds and eat with crackers, chips or rice cakes. its the best spicy, creamy, crunchy dip ever

    Definitely gonna try out the polenta bites :) I recently made some stuffed cucumbers as a snack because I saw them on TikTok. Just split a cucumber down the middle and take out the seeds with a spoon (you can use them for Tsatsiki or salad). Then you cut it into thirds so you have a few little cucumber boats. Mash up one avocado with spices of choice (I also added a tablespoon of the pineapple-curry spread from Lidl) and then fill the cucumber boats with the guacamole, top it off with some sweet chili sauce and you're done! They were so quick to make and really refreshing yet filling :)

    here's my study snack suggestion ! first, melt some dark chocolate with a tiny bit of coconut oil. take some rice cakes (lightly salted) and dip one side of the rice cakes in the melted chocolate. then, i add hazelnuts or pumpkin/sunflower seeds on top. refrigerate so the chocolate hardens and enjoy !

    One of the healthiest snacks i eat is simply boiled chickpeas roasted in oven with olive oil, garlic powder, onion powder, black pepper n salt n sometimes add cucumber n tomatoes on top with a squeeze of lime

    Study snack idea: mash a can of white beans with lime, cilantro, red onion, chipotle in adobo, salt, etc as if you’re making guacamole but with beans instead of avocados. Store in the fridge until ready to eat, and when you’re ready, mash in an avocado. Tastes great, more filling than regular guacamole but half the price. You could even bake tortillas for homemade chips or just get store-bought ones. I’m not a student but I made this for work a lot.

    i have to say the green smoothie was the best one i have ever had. 🍏i replaced the nut butter with some oat flour (just blended some rolled oats into my bean coffee blender) because i didn't have any butter/nuts 🍏used raisins for sweetness 🍏added half a kiwi because i had it laying around 🍏added a pinch of ginger powder absolutely delicious!! the cinnamon helped a lot and the lemon. love love love💚

    my favorite study snack is when we have leftover tempeh (cooked w just like garlic, ginger, saffron?, some spices) i put it on some bread w hummus, spinach, and cherry tomatoes :) (and i've been drinking a lot of lemon lavender tea w oat milk, sometimes adding some fresh ginger tea to it

    As a study snack, i used to make a batch of savory granola bars, which is basically some nuts or seeds, maybe puffed rice, quinoa and than either dried seaweed flakes, chili flakes, dried tomatoes or olives, etc. Added a flax egg to bind it, baked it and done.

    As study snacks ... I have been loving dates cut in half, stuffed with peanut butter on one side and vegan chocolate spread on the other! Kind of tastes like a snickers (would be nice to put a peanut in there too maybe)! Also I like making pb&j or pb and chocolatespread rice cakes as another quick snack

    Studying makes so many of us stressed. A funny thing gathered by multiple experiments was that stressed people often opt for unhealthier foods, as compared to their unstressed peers who opted for more nutritious foods. Maybe for your study video, you could address this and make foods that taste like “junk food” but are actually very healthy (as well as fast).

    tried making the peanut clusters yesterday and holy crap they're DELICIOUS. i'm not vegan so i used some local honey and the texture turned out perfect, very crunchy and not too sweet at all. they're amazing with the yogurt as recommended, but equally delicious on their own as a quick mid-afternoon pick-me-up! i can see these being in heavy rotation in my pantry, thanks for the amazing recipe! really excited to try the rest of these!

    study snack - maangchi's korean steamed pear - it does not take 5 -10 minutes to steam so involves thinking ahead a bit but it does take literally 20 seconds of prep so you can have it bubbling away while you study, I always make it on cold afternoons.

    For studying I sometimes make a “dirty chai latte” at home. Add equal parts of coffee and milk to your drink, then mix in instant chai powder. A fancier version would be to make a good Indian-style chai tea and then add espeesso to it. Another thing that I’ve seen Rainbow Plant Life make is an almond butter and date latte.

    One snack that i don't usually eat because it's too caloric but it's bloody delicious is ginger biscuits with spread peanut butter and chocolate chips. I really suggest you giving it a try. You won't regret it!

    Great recipes Mina! Some simple, easy study snack ideas that you could try: homemade tortilla chips, chocolate covered strawberries, mug cakes, spring rolls, maybe something with espresso in it for that caffeine boost :)

    Study work snack ideas healthy/vegan: Banana slice boat - with peanut butter and a frozen berry on top (raspberry or pomegranate are great bc they're more tangy) Peanut butter jelly sandwich - really quick, with some good sourdough bread and only one slice of bread

    when i was a kid my grandma used to make me a snack she called "yellow energy bomb" which is essentially banana slices topped with a squeeze of lemon juice and plain white sugar (lol) I figured it would taste pretty good with maple instead of the sugar, and some fun toppings or a saltier essence to balance the sweetness

    one of my fave qiuck snacks is some sourdough toast with nut butter (especially my homemade one which is 50/50 roasted almonds and walnuts but any should work) and kimchi. It's sweet, it's spicy, it's savory...highly recommend :))

    Banana tortilla wraps with chocolate spread. Spread either chocolate or some jam onto a tortilla, place a whole banana (if too curved, brake in few pieces), wrap and eat. This is my go to in-between meals.

    I made the clusters using coconut flower syrup/nectar, very chewy. Really addicted. The mousse was good too, used almond butter as can't get hazelnut where I live, very tasty.

    My favourite study snack is: I cut up a banana and arrange the slices in a circular pattern on the plate, then drizzle them with peanut butter, put a big dollop of coconut yogurt in the centre, and sprinkle over granola and Dutch chocolate sprinkles. I just eat it with a fork. * chef kiss *

    you should also try adding some vegan butter while mixing the polenta!! traditionally in italy it’s made with the parmesan and butter if you add that too you will see that it will become even more yummyyyy! :DDD

    Hey! A good study snack is a pick me up- something that'll wake you up. My mum made this ginger-jaggery ball kinda thing. I have it when I'm super sleepy. She added a lil too much ginger, but, well- it is still alright. This is good for cough and cold and aids digestion. But, it is not something you can snack on and feel full. We call it Injimarappa. Since I like pick-me-ups, anything hot is welcome. I often simply drink glasses of hot water. But, I am requesting an instant soup recipe here. Did you watch those instant latte mixes on pick up limes? Made with powdered ingredients? I think that could be done with soup too... Tomato powder, onion powder, garlic powder, turmeric, pepper powder, ginger powder, coriander powder, red pepper, etc after it is heated for a while, maybe we could add cornflour to help it thicken. I know that we get instant soup powders in stores, but they are bound to have msg and a lot of preservatives. That's why I have been wondering if this will be a good idea! I have always wondered this and I don't know whom to ask. When you put oats in milk and leave it in the fridge overnight, does it curdle? Does it become even a little sour? I know that a lot of people like yogurt, I really don't... I have never made them because I'm afraid this will happen. Good job! I have always liked your videos:)
