I worked in a bread factory about 50 years ago over the Xmas and summer holidays. There were certain operations we did manually -"panning up" - putting the dough into pans, the "steamie" - transferring the pans with the risen or "proven" dough into the oven, and the dreaded "oven end", tipping the baked bread coming off the oven onto a conveyor belt and stacking the hot pans. We needed a team of six for the process, with one in the panning-up and two elsewhere. The "spare" worker would take over from one of the other team after they completed the 30-minute rotation. Now it's all machinery, and all that drudgery (and paid employment) is a thing of the past. And it looks a whole lot cleaner!

The factory I worked in produced 55 loaves of bread every three minutes. After being loaded into stacks about 7' high they were staged for all the 40' delivery trucks using tape on the floor..12 hour shifts

It will be better to have some simple explanation of the process of bread making. It should also give credit for the company and engineers who designed the system as well as the smart technicians who make this huge machinery. Thank you all for such wonderful work.

This bread factory is amazing

I worked in an "auto-mated" Bread factory very similar to tis one shown! We baked over 100,000 loaves of bread a day and 30,000 dozen buns and things work fine when it runs smoothly but it rarely runs that way! In a couple of places i saw in the rounder area and the panning area that didn't have flour sprinkling all the time the dough will stick like glue! This video shows how things work if nothing goes wrong............ mea sententia 🦂

who paid you for such a post? this is an advertising clip for a Turkish machine factory. nothing bad as such, but NATURAL in these breads is nothing.. it needs a special flour, special additives , special leavening agents, to make the dough - machine compatible -. and how clean and hygienic the machines and hall are i n reality, YOU for sure have never been on a production line. look at 3.49 minutes, trays, rejects, with dough, on the floor, for sure the dough will be returned to the process and does not go into the trash. and if this is a factory, the one jo jo i saw around there, while wearing head and hair protection, has no nose and mouth protection gear. that is a MUST in every factory who produces food.unfortunately people are not prepared for to pay a decent price for good, a natural bread, so they get that kind of crap. and the most important part is missing. one can see miles and miles of same color, same size, same shape bread. but how does it get OUT from the baking boxes or trays? how does the top part of the toast bread loaves come off? by hand, does a machine turn them or what? and another important thing, or is this a different company who installs the equipment for that? how are these tray and things cleaned? the flour and crumbs and residues brushed off and back into the baking process with the trays?

Showing the beginning of the process but we have NO idea what is being used and how much and why. then jumping around and going BACK to the beginning. tu·to·ri·al noun 1.an account or explanation of a subject or task, especially as an online video. "he has created a simplified tutorial on how you can cut hair at home" This is NOT a tutorial!
