Don't throw out the strained berries. Add some water and reboil, strain and add sugar to taste for a lovely hot fruity drink. It's my cook's treat after I've finished making jam. Tried this out on brambles and elderberries.

I've just made a load of bramble jam, and also tried making bramble jelly for those who don't like seeds. In my view, trying to make jelly is pointless as it has only half of the flavour and is too sweet. Bramble jam (with the seeds and pulp) yields far more, and tastes much, much, better. I am, however, intrigued with making blackberry curd, or blackberry whisky....

I hope he thoroughly washed the berries first. I find it takes a good 10 minutes of running water to clear them of everything.
