It's actually Vinny who edits the videos for It's Alive, there are other editors for other shows. If you watch future episodes of this you'll see a lot of speech bubbles which confirm that Vinny both films and edits.
At first I thought "moldy rice, that's disgusting" then I remembered that my favorite cheese is blue cheese and I told myself to shut up

I mean as far as food cleanliness goes, washing your hands well and often is just as good as gloves. A problem that happens with gloves is people just don't wash their hands enough because they thing they don't need to and end up contaminating the gloves anyways, or cross contaminating foods when they keep the same pair of gloves for several processes (as you are supposed to wash hands every time you change gloves). In the end, gloves are just there so you don't have to touch icky raw food with your hands, (assuming you keep your hands clean). Or if you're in a deli setting, its to keep your customers minds at ease.

@Colin Not true. If you are following food safety guidelines, meats that have different internal cooking temperature (which all three are different) need to be stored separately. This is because chicken, which has bacteria shrimp doesn’t for example, won’t always cook off a shrimp that has a lower necessary internal temp and is therefore still unsafe to eat even though it’s own bacteria have been killed off. If a public restaurant pulled that stunt the inspector would have a field day.

@@tylersimmons2154 You're actually completely right. But the reason it's okay to do what he's doing is the Koji eats bacteria on the surface of the meat, so those bacteria can only exist IN the meat, and since they never touched before being coated, it's fine.

@xLeaguex oh yea brad did it correctly storing them on a raised rack so the juices didn’t run together. I hope for his coworkers sake he washed his hands between each meat lol.

These are awesome, super funny and informative not to mention fantastic editing!
In Japan, the recommended duration to marinating with Koji is 1-2 hours. Koji does not penetrate into the food in the frig so best to keep it at room temperature. In many recipes, koji is mixed in with brine to make the marinate. You can rinse before cooking.

Lol, I actually tried steak for 5 days, turned out amazing. Doing shrimp in the fridge almost 1 day. That'll be the real test.

I tried this and served it to a party of 5 guests Recently. Did a 2 day Koji King Island Crayfish ferment. The Cray's where super fresh out of the water that day since I live in Melbourne. Left the Koji on but before I battered them in the Koji I cut them into medallions of about 2cm. Served them with a little bit of red Australian finger lime on top. A side with a light fried rice (msg included) and light pickle Napa cabbage and Fennel salad with Oyster Bay wine. They all rave about it being the best seafood dish they have ever eaten to this day. Thanks for that tip Brad, top bloke.
