Bonbons, with a cross design, made with tempered, golden cocoa butter. See step by step how this cross design makes this bonbons, really special.
But it is not only the tempered cocoa butter who makes shiney bonbons. Remember to clean and polish your molds. Use them at room temperature. Cool the bonbons at 16 degree celsius.

    Again... Very nice. You place the molds standing up to cool. I've seen chefs place molds flat in the cooler. Is a reason for cooling the molds standing up? Thank you.

    I went back and watched these in order. Did I miss something? You went from cutting the yellow tape to the green thin tape. I was going to ask you what tape you used, but I figured it out. Nice videos. Full of helpful tips. Thank you for sharing chef.

    I’ve noticed this before: your white chocolate has specks in it that make me think that fresh vanilla bean is mixed in with it. What is it? BTW, I wasn’t sure that I would like this approach, but the result is stunning. It’s like comparing the paint on a Porsche to that of a Yugo! 😏. (To be clear, your bonbon here is the Porsche! LOL 😂) Oh, I had asked previously about your tape. Could it possibly be the Japanese rice tape called Washi Tape?

    I'm in Japan and yes, washi tape works. But a more economical tape is Tomiya Masking Tape. Easy to get in Amazon and comes in a variety of widths.
