Regarding your confusion about what constitutes a season: For Gintama, you can divide it by year, like when an episode has a beginning segment talking about another year. Preferable, you can divide it by each OP (double cour, 6 months of broadcasting, or about 24-25 episodes) or by each ED (cour, 3 months of broadcasting, or about 12 episodes).

Gintama is such an amzing anime! I laughed so hard when you were like: How does Gintama do it every time?! I agree so much, Sorachi is a genius in mixing ridiculousness with sadness and emotions! This is why Gintama is my favourite anime ever, I love feeling emotions while watching a show and this anime is the best one at that!
