At Panera we used to just toast the outside. This is a great Idea. Also love that blackberry jam, use it to baste my jalapeno poppers when grilling.

Ken my Christian brethren, this is a great sammich & inexpensive here in Kentucky as we have wild blackberries growing everywhere & make our own preserves, pies etc... plus we butcher hogs so the the bacon is cheap also as all the hog cuts are hung in a smokehouse. We have no panini press , but use a ridged interior iron skillet with a heavy iron skillet on top of the bread , but can only toast 1 piece at a time in the skillets on a gas stove , but it works. I love grilled cheese with berry preserves and bacon. Raspberry or blackberry preserves with mozzarella, a few leaves of finely chopped rosemary and crispy bacon on sourdough is a favorite.

"...half a sandwich is about the size of a regular sandwich". I'm gonna go out on a limb, and venture that you didn't need help finishing it. Man, that looks so delicious. The blackberry preserves reminds me of being a child, out in the country, in the summertime, and scouring the ditches along the farms, collecting blackberries. So good. I gotta try this one. Ken, I often hear on the news about how the prices of food is dropping but I haven't felt like it has. Would you consider doing a follow up of your Walmart shopping for grocery staples? I'm not interested in debates about who's fault it is in case any commenters feel the urge to start that conversation....just keep it moving. By the way, your panini looks scrumptious, Ken .
