How to make Almond Biscotti with Orange Zest - Glen And Friends Cooking
These are a pretty basic take on an almond biscotti recipe - I like them cooked to a softer texture, but if you like your Italian biscotti crunchier; just extend the cooking times. This Italian cookies recipe also goes by a couple other names: Cantucci, Cantucci Toscani, and Biscotti di Prato Those are the classic Italian biscotti recipes.
Ingredients
250 mL (1 cup) butter, room temperature
250 mL (1 cup) sugar
5 mL (1 tsp) pure vanilla extract
3 eggs
Zest from1 large orange
750 mL (3 cups) flour
15 mL (1 Tbsp) baking powder
5 mL (1 tsp) salt
500 mL (2 cups) whole almonds
Method:
Pre-heat oven to 180ºC (350ºF)
Cream together butter and sugar.
Cream in vanilla extract, 2 whole eggs, and one egg yolk (reserve one white).
Cream in orange zest.
Mix together the dry ingredients.
With mixer on slow, spoon in flour and continue mixing just until incorporated.
Divide dough into 3 or 4 portions and shape into flattened logs on a parchment lined baking sheet.
Whisk a little water and reserved egg white together, then brush onto each loaf.
Sprinkle tops of loaves with coarse sugar.
Bake for 20-30 minutes; just until starting to brown.
Remove from oven; and allow to completely cool on the pan.
Lower oven temperature to 325ºF.
On a cutting board; cut into ½ inch slices, then place slices back on cookie sheet standing up.
Bake at 325º F for 15-25 minutes.

    It's a must try crispy cookie, if you love crunchy this is it I love a corner biscuit or cornbread. I limit it to 1 batch otherwise I'd be passing through the kitchen for another.

    I love how you keep them standing up for the second bake. Maybe a small thing (I don't think so), but so much easier than going in, halfway through, to flip them over. Thanks for the great tip.

    When it comes to traditions it all boils down to that it started with something and changed. For those that complain how do you think we got so many versions of dishes out there. Time allows tastes and supplies to curve how some folks do it. My Italian grandmother would make the "traditional" flavor but always did something different. Which one was right and which one was wrong? Neither, the end result was that someone was going to enjoy the love and time that was put into them. That is the real meaning of traditional food to me.

    LOVE The Unfinished Kitchen cutting board!!!! It was awesome seeing those being made on Josh’s channel. I make biscotti often. I leave my temp at 350 because I like mine a little more crunchy. They are also easy to make gluten free with almond flour.

    I think true traditional ones were as they had to be fully dehydrated so they could last months at sea. Could be wrong though. Either way i’ve never liked biscotti cause they were too hard for me but these sound delicious!

    @@spacegoatable Dunk 'em. They're meant to be dunked in tea, coffee, wines.... The ones made with butter are "softer" anyway.

    Yum. I have apricot-pistachio in my cookie jar right now! I like using whole almonds (w the skins), toasted lightly, cooled, then cut into halves and thirds. More chunks in the biscotti!! Also have cake/cooling racks that fit my sheet pans, and plop the cut cookies on those -- air circulation so I don't have to flip them. I may have to switch to grams. I like how things are multiples of 250 here. Thanks!

    Growing up in Philly the only Biscotti you could have is anise, made at local Italian bakeries, which I love, but orange & almond go so well too.

    Anthony, growing up in South Philly all I got was the same anise biscotti to. Then I got married, and my wife introduced me to so many variations that are normally seen throughout Europe and my mind was blown.

    I used to make plain biscotti as teething biscuits for my kids. My favorite is with a can of mild chilies mixed and served with red and green jalepeno jelly and cream cheese. Beautiful for Christmas.

    Hey Glen, great video. You can get a flour slide/chute that hooks onto the side of the metal bowl for the mixer, not 100% sure if it'll fit in the glass bowl, but it's GREAT. we call these biscotti cantuccini but probably cos of a large italian immigration in these area.

    My Italian Grammy would re-bake twice, biscotti laying on their sides (about 5-10 mins per side) rather than standing them up the whole 2nd bake. Hers where probably dryer and crispier than these and I loved them.

    That is the traditional way to bake biscotti. The cookie was meant to be dry & crispy as they were served with coffee or wine. Then you would dunk the cookie in the beverage to soften it up and eat it that way. Biscotti was one of the traditional cookies we baked every Christmas season. Along with the Italian chocolate cookes sometimes referred to as "meatball" cookies. 🙂

    I love that Glen covers up the KitchenAid logo on the stand mixer and shares his frustrations with the decline in quality they've seen. We have three pre-Whirlpool KA stand mixers which need servicing roughly every 500 hours and no Whirlpool made KA, the two we had blew up in less than two years. I'll never buy another post-Hobart KA stand mixer.

    I've only had biscotti a couple times. Both times it was too hard & fairly tasteless. They were commercially prepared biscotti though.
