Larry David fluctuates wildly between flagrantly eschewing and rigorously enforcing cultural mores, all of which frequently revolve around food. Slow ice cream orderers, religiously forbidden chicken, caviar entitlement - they're all fodder for Larry's machinations of social upheaval. Just don't eat the man's shrimp.

I’m Palestinian but I was born and spent my whole life in Lebanon. I’m very familiar with the “toum” sauce which is actually pronounced "toom" and it simply means garlic. You did an excellent job making it. Try adding some dried mint leaves to it, it gives it a smooth freshness; that's how my mom has been doing it for the past 25 years or so. Keep it up and peace from Lebanon! ✌🏾🌿

Speaking of the Thanksgiving video, I made that cranberry sauce for Canadian Thanksgiving this past weekend. My grandma came down with a bad case of pneumonia and couldn't do it herself this year, as is the usual tradition in my family. But "Binging with Babish" to the rescue, the sauce was an instant hit, and it even ended up grandma-approved. Thanks for bailing us out of a jam that might have otherwise forced us to... Canned cranberry jelly. 😰

First off, gotta tell us if you're grandma's okay. Don't leave us hanging there. Second, I tried it myself and it's pretty damn good. The only thing I'd do differently next time is straining the mixture through a sieve before it gets thick to get the cranberry skins out.
Made the Larry David sandwich and gotta agree it’s pretty incredible. Had some fun with switching up flavors too. Swapped out raw white onions for pickled red onion and even used an everything bagel for one.

Your point is fair...but there are multiple schools of thought on whether Aioli should have eggs. As a Catalan recipe (the originators of the name), yes, it's a garlic and oil emulsion. As a Provencal recipe, it's derived from mayonnaise--Escoffier's approach is more familiar to American audiences, and Andrew tends to be working from a French perspective. And the technique is a little different; I've never seen an eggless aioli that thick!
@NextEpisodePro

Aioli has eggs in it..
@normafarah6398

Toum is different than aioli for a lot of reasons. For starters you cannot use olive oil in making toum. Aioli on the other hand usually needs at least some olive oil. Ironically enough toum comes from a region known for using olive oil. But if you were to use olive oil in toum you'd end up with a hard paste with little air in it that would probably make you tear up to eat.
@TedHendershot
6 жыл бұрын
French-style aioli is a mayonnaise sauce, yes. Classic Spanish Aioli is garlic and oil only. This is somewhere between Aioli and Toum. It looks really good...

Irma, yes this would definitely work with chicken pieces. I would consider scoring the meat a few times prior to marination. By the way, if you don't have or don't like cardamom or sumac, you could use a variety of different spices in this recipe that would go well along with the dill: allspice or ground coriander would be lovely; or you could even put an American twist on it and add Old Bay Seasoning (watch the salt though), Cajun Seasoning, etc. This recipe is very adaptable.

I know exactly what he meant, but even in that case he'd be wrong as the cell membrane is composed primarily of phospholipids and sterols. The proteins he's breaking down with those proteases are primarily extracellular anyway :p

+amir abidov is there stuff in yoghurt that can lyse the cell membrane? I don't see how lysing cell membrane is a good thing, surely it would just get mushy
I live in Worcestershire and you pretty much nailed the pronunciation! Better than most I’ve heard.
So I have made this recipe about half a dozen times now and it's definitely my favorite of your recipes. But that toum is SO strong I always end up with a ton leftover, which just gives me an excuse to buy and roast another chicken. I just roasted one last night and ate it alongside some Challah bread, which felt pretty ironic to me.
Yummm!! I was thinking maybe you can do the cherry glazed rack of lamb from “how to lose a guy in ten days” 😀

I would argue more for Wuss-tuh-shuh as the Americans have very hard Rs while ours are barely pronounced.

I tend to go for Wuss-tuh-shir, unless I'm fucking around and having a laugh at how it could be mispronounced, then I exaggerate it.

Made the Chicken for dinner tonight with some garlic-buttery mashed potatoes, and it was a huge hit! I added a touch of cayenne and smoked paprika in the marinade, which added just a tiny touch of heat and smokiness to the perfectly crispy skin. Everyone agreed it's a killer recipe!

I just made the chicken for dinner, and it was absolutely divine! Thanks for sharing the recipe.
My favourite bagel is very similar to the larry-david-sandwich. A toasted bagel with cream cheese, capers, onions, tomatoes, and smoked salmon (or ham when I can't afford smoked salmon). Served next to black olives.

This is the first time i've come across a garlic paste that isn't from india. I didn't know there was an Arabic version... perhaps it's an elevated take on some African version, since the Lebanese and Syrians are known for their subtle and sophisticated taste in cousine. All I know is " mothawami" which is garlic and yogurt- at least, in my part of the world.
Traditional lebanese Toum have baked potatoes added to the mix to make it creamier

Pop tarts Fitness Interesting, there’s another comment saying the restaurant that the show copied uses boiled potato in a 1-1 ratio with the garlic. Is baked better than boiled? Do they used the skin, cause I don’t think roasted potatoes are creamy on the outside. Sounds like you have a lot of work scooping out the innards.

Yep this is my favorite episode. Who would've thought Curb had the most creative and tasty dishes.
I don't know if I can make that sauce for my family, since my mother is sensitive to garlic, but that chicken looked DIVINE!
“Toast bread using mayo, instead of butter” Oh, yeah, I saw that AskReddit thread too

Favorite episode!!!
There is a restaurant in my native city of Barranquilla (Colombia) that serves this exact same chicken with this sauce and this was my favorite place to eat when i was a child. It's called "Pollo Arana" they served this chicken with fries on a wooden cutting board with a steak knife.
Man, Babish, thank you for what you do. These videos are exquisite.
Curb my enthusiasm? Yea curb my enthusiasm for Bringing with Babish
I was literally telling a coworker you should make this chicken! Thank you!
I find myself coming back to various different episodes for singular things. Was looking for the toum recipe and just realized again that it's pretty much a herculean task without a food processor.

Absolutely delicious, love it. Thank you !❤
I've made toum a couple times, it's some good stuff. Pro tip: you can get toum at trader joes. Not as good as if you make it youself, but then you don't have to worry about it breaking

Hell yes. Toum is delicious stuff. It's pronounced "toom" btw. Here in Lebanon, various restaurants do their own take on toum, adding a hint of mayo or more interestingly, potato mash.
The Turdeucken should definitely be on your list of things to make
