This week we're headed back to Twin Peaks WA, but for once, not with murder on the mind. Instead, we're focusing on the food: brie and baguette sandwiches, fresh from Paris, furnished by an unhealthy relationship with a younger sibling. Brie and butter on a baguette isn't just a delicious-sounding alliteration - it's a classic French sandwich that actually lives up to the hype. Sometimes a few simple ingredients can come together to create something greater than the sum of their parts, and there are few finer examples than this comforting, indulgent mixture of fat and carbs.

    Funny enough it's a really good way to recognize good baguette if you've had enough. The smell and looks can be deceiving but the sound can't, you can know precisely the texture from the sound, and if the baker is good enough to get the texture right, you bet your ass he got the flavor right too.

    French guy here : a delicious twist on this sandwich is the "Brie, poire, miel". A good half baguette, layered with a thin amount of unsalted butter, generous slices of creamy brie, very thin slices of pears topped with a drizzle of honey. Lettuce optional.

    Love this video. Great job Andrew. That aluminum pan you baked the baguette on. It’s called a fluted screen. I’ve been managing a commercial bakery for over 20 years and I’ve probably made over 1.5 million loaves of bread in my life. I must say Andrew. I absolutely love what you’re doing here on KZread.     I really appreciate you showing the full kneading process. This was a great source of frustration for me in the beginning, because lots of baking videos just show the finished kneaded dough and as a beginner I was frustrated that the gluten matrix was not forming. Over time I learned that it just seemed much quicker in the videos because most of the kneading process is usually cut out! Hope this will spare lots of people the same frustration that I faced :D

    My first dough was a lumpy, incoherent mass. Looked more like smushed cheese curds than dough. What I did, was I rolled it out into a rectangle, then diced the dough into 400 little cubes with a knife, then I put the cubes into a pile and kneaded them together. Still not very coherent, but getting there. I rolled it out into a square again, dice, mix, knead, and then the dough looks perfect.

    @@6agenthawk Yeah. I’m definitely didn’t want to eat that whole thing in one breakfast. Probably going to bought it up to my office ( spoiler alert : all of the AC on my office were from Daikin and it always makes every food and drinks as cold as ice. I even managed to got a flu from it :-P )

    You can hear good bread when it's just out of the oven. A well formed crust will gently crackle as it cools, you don't need to touch it

    This old wives tale may have started after people got a stomach ache after eating at Olive garden or any other restaurant with hot bread. The stomach ache isn't from the bread, it's from eating too much!

    Well..... If the yeast used is still active, it can cause gas for the person eating the fresh bread. Fresh yeast donuts will do that also, have experienced it for myself. But I whole heartedly agree that bread tastes best straight from the oven! Food sensitivity can wreck the fun of eating sometimes

    @@redeemedbythegraceofgod9244 The yeast die at something like 140F. If the bread comes out of the oven at that temp its still raw. Raw dough will give you a stomach ache if you eat enough of it but fresh from the oven cooked bread shouldn't. Cutting it messes up the gluten structure so the loaf collapses but I've never had an issue eating bread hot from the oven. People eat hot rolls all the time and never think a thing about it and rolls are just small loaves.

    This is a great pull, one of my favorite scenes from Twin Peaks. Ray Wise's character is my second favorite after Cooper, he's a fantastic actor. He was also one of the best Satans ever in a really good show that nobody remembers called Reaper.

    When I was in Europe I fell in love with two sandwiches. The Kebab and the French baguette sandwich. I gained not a pound though which I think speaks to Europe's quality over quantity food offerings. Could I do two kebabs? of course. Do I want to? of course.     @@MichaelGGarry there are many types of "kebab" so it's not really surprising that your greek friend wondered about it. I think the french ones are turkish kebabs and not greek. It's using lamb meat on a skewer, broiled and shaved before serving. Just thinking about that makes me want to eat one.

    @Klearkhos Washokani the kebab im most familiar with and most like to scarf down two at a time are usually chicken or lamb based with a mix of cucumber, tomato, cabbage slaw, lettuce or onion. The sauces are the best. I always like to get mine white and red which is creamy and spicy. The only differences I found from Poland to France was the bread. Im sure there are loads of amazing versions of kebab all over. I'd love some kebab but in my part of america its not really a thing. :-/

    french guy here, if you can ever get your hands on a delicious baguette PLEASE try a jambon-beurre sandwich. It's just a very generous coating of salted, high quality butter with ham and optionally freshly ground black pepper in a baguette. In my opinion it's even better than a beurre-brie.

    Something I really love about these videos is when you make a mistake, you don't try to hide it, you show us and you explain why it was a mistake. It seems like such a tiny thing but knowing that you're not a perfect chef, makes me feel a lot better about my own cooking and baking. As always though, this was a masterful job! Those sandwiches look amazing! Also, you should consider doing Eliot's sandwich from Leverage! (from the episode where they're parodying the Office)

    Yes, there was a a french woman who maried a baker called Julian Piccolo in Brussels in the 1830's. Not only was the man terrible at his job, but he also abused his wife and cheated on her despite the fact that she basically ran the bakery with the guy's assistant (because he spent most of his time in the whorehouse). As an act of revenge, she started to sell small sized Baguettes, that she promptly named Baquett de Piccolo, to embarass his useless husban who became the laughing stock of town. (Baguette was innuendo for penis back than). By the time her husband found out (he rarely visited the bakery) they got famous for their baguette! Not in small part because the woman of the town found it funny, and kept gossiping about it. So the guy just packed his stuff, and traveled to Lapland and became the new Santa Claus, I'm sorry I was making this up the whole time, but you kinda see how this could be a true story.

    I was studying in France before corona and this brought back memories of many lunches and nights. Even as a student, good brie is not very expensive in France and hitting the sweet spot when the fresh baguettes come out of your favorite boulangerie and you've got yourself a cheap but delicious sandwich. Thanks Babish for doing it justice.
