Cool! I've never biked there but I've hiked the carriage roads. Love it

As a carriage enthusiast, I encourage bikers to be aware of the horses they encounter. Keep everyone safe and respect the fact that horses can be unpredictable when the quiet of an approaching bike might frighten them. Drivers should acknowledge the bikes and motion for safe passage.

Would a road bike with skinny tires still be usable on the carriage roads?

It should be fine, I've seen many people on the carriage roads on all kinds of bikes, it really depends on your comfort level. Overall, the roads are relatively smooth, but there are some sections that will require some attention. In short, I'd say yes, maybe think about letting a little bit of PSI out of the tires.
