    My pellet grill replaced my gasser for everyday use. Most people do not have the time of patience for a offset.

    Yea the Weber Smokey Mountain is my go to. Easy to operate and holds temps great

    I got a regular weber kettle 2 years ago and gave it to my dad after two months. Picked up the WSM, and that thing is awesome. Probably the most underrated smoker on the market.

    @@ComparisonCooking definitely underrated af, I agree. I love it though. Almost bought an Oklahoma Joe's offset but what swung me to get the WSM is the option to grill. That's a bonus for me when I wanna just toss a couple steaks on or a few burgers n be done.

    100% agree the biggest issue is trying to apply advice meant for one specific cooker / size, airflow, volume, wood consumption etc to one that’s completely different. Like watching a video on how to parallel park a car when you need to dock a boat. Sure there are similarities like a motor, forward and reverse with a wheel to control etc. But despite the similarities this video won’t help you

    You are spot on with this 👌🏽 I dived straight into an offset and can say it was so challenging. So not only did I have to learn how to cook a different section of meat low and slow, but I had to learn how to manage a fire. I really did feel sorry for my neighbours. Awesome vid bro 🤙🏽

    @@ComparisonCooking Hi Kevin back in 2020 I bought a char griller Smokin pro used off of the Facebook market and brought it back from the dead but had issue after issue trying to get that bad boy to dial in until I did a bunch of mods. So a few weeks ago I saw a mint condition, Oklahoma Joe, going for 350.00 on the Facebook marketplace so I decided to pick it up because out here in Toronto Canada at Rona or Home Depot there 700-800 brand new. The Oklahoma Joe is a Big upgrade and works a lot better than the char griller Smokin pro but after doing some research I realized I should have saved up and bought a Yoder which will probably be my next purchase in 2023

    @@philtyrich1 yoders are super nice!! I think if you are patient over the next two years , with all this crazy price shock going on I would expect to see some deals hitting in the next 12-24 months on FB market place.     Kevin, great explanation. I am more of a purist at heart. I use only wood and charcoal at comps but I do have a pellet smoker at the house for longer cooks. Great job buddy!

    I just have a royal gourmet offset smoker/BBQ and while it has some flaws I've been extremely happy with the results I've gotten. I recently smoked ribs and my parents said those were the best ribs they have ever had simply because I followed a pro smoker recipe but also the smoking to oven process was on point. The only flaw I need to fix is putting insulation around any cracks because there's alot of smoke escape that troubles me

    From the research I've conducted, most pellets refuse to hold temp below 300 degrees. I just stick with offset and Thermopro for ambient temp as well as internal meat temp. I love the taking the time it takes to produce quality smoked meat. With smoke, less is more.

    My Traegers will run at 170 consistently but that still doesn’t mean it’s producing that much smoke flavor. I agree nothing like working the stick burner to enjoy the day that much more!

    One of the biggest beginner mistakes is believing that temperature is controlled through your intakes and dampers. Your temperature is actually controlled by the size and how much wood you are using. I have this smoker and I can tell you that it can be fueled entirely by wood splits. Another big mistake people make with these smaller smokers is throwing in pieces of wood that are either too big or too small. The 500 Gallon+ pits have huge fireboxes with huge coalbeds that can eat up thick logs of wood. For these smaller backyard smokers(including the Highland) you need to use about 1-2 small splits of hardwood that are around 10 inches in length and no thicker than 3 inches in diameter. This will keep your temps between 250-275. If you put wood that's too big on your coal bed it will just burn out before it can fully ignite. If you use wood that's too small you'll be fighting to keep a strong coal bed and it will eventually just die out. The best way to keep consistent temperatures is to be consistent with the size and amount of wood and keeping a consistent coalbed.

    100% accurate, I think so many beginners see the 500 gallon pit videos and are like, I want to be like that so I’m going to throw in huge logs, and it’s just a recipe for disaster. Great comment and dead on!

    I got a very cheap offset and I was stoking it like a train to keep it up to temp.. but some big bits of wood it would just smother the coals and end up with so much smoke... so small chunks helped but temp wouldnt stay up.. decided that Im getting a custom offset built ...

    I had some entry pits and then I came into a stumps reverse flow 3x2 for 100 bucks! Co worker just wanted it gone. Couldn’t pass it up

    I just got a Weber Smokey Mountain and it’s quickly becoming one of my favorites to smoke with. It’s pretty set it and forget it. You’ll love the bronco!

    Was about to disagree but then you explained the audience. Yeah for someone that doesn’t have time or the drive for bbq, pellet grill all the way. But to me, no way, I would never get one. I just started a few months ago. My friend has a old rusty 150 dollar smoker. It is such a pain but the food can still turn out good. Looking to buy a old country or horizon smoker in a couple weeks. Trying to find a used one to save some money. If not, I’ll definitely spend the extra money on a thicker grill/smoker.

    Is this OKJ still the reverse flow or is this a standard? I’m dead set on a offset would you recommend the reverse flow for a first timer?

    THis model could be setup reverse flow or standard, and I love a reverse flow. However, for this size smoker, the standard setup worked out better than the reverse flow. I have a 120 gallon reverse flow that has the right flow, but this smaller model, and width/height of the stack I do not think benefits you in paying the extra money for the reverse flow.     I have s pitboss pellet snd also use a pellet tube for extra smoke,seems to work but ehat do i know, You should have gotten a Chargrill XD that seems like s very rradonable step up for little more money

    Heh, i'm starting off on a 60$ bullet type smoker. i get decent results but fire management is a pain in the ass. so now i'm looking into offset smoking. but since i'm in europe the options are quite limited. either i get a 100$ smoker or i get a 1000$ it seems to me that there are no in betweens over here.

    @@BBQcheese i'm not afraid to put the work in to get everything dialed. I love being outdoors managing fire and cooking. but it's just that in the bullet smoker that i have i can barely put any extra fuel in or wood. And over here i dont find the midrange 300$ smokers...

    That’s a tough predicament to be in. I’ve really grown to like the weber Smokey mountain. I like to save my dollars and it’s a great pit for that. However, my next pit will be in the $1000 range. Even with all the tweaks I’ve done to my $300 smoker the change in wind or a small change in size of wood can create a different experience everytime out with fire management. I’m like you where I like the challenge and want to be outdoors, but there is something nice about going outside and having a 99% success rate no matter what wood you just picked up or the wind changed directions. It’s a tough call between spending a lot of money or not, but that’s currently my state of mind.

    From what I have seen (I may be wrong) a gravity-fed smoker is better than a pellet - same set it and forget it but better flavor.

    I haven’t played with a gravity feed but they do seem pretty awesome, Tommy over at The Gallery Backyard BBQ did a ton of videos on the Masterbuilts last year and they looked really really good. Although I haven’t used one, I would say from the videos and comments you would be right!

    Id recommend a pellet every time.. why? because it teaches you about cooking the meat, if you dont know what the meat should be like and fighting both a fire and meat temp it can get quite discouraging.. Id then upgrade to an offset.. this is how I am running my business, started with a traeger 1300, knowing my meat then means I know what I'm cooking on the offset so all (all he says) i need to do is dial in the fire .. which I am getting custom built to take it to the next level.

    It’s the right recommendation, understanding the meat is so important to good bbq and like you said, worrying about a fire is just to many variables all at once for a beginner.

    I second this, I started with a pellet grill and used that for a couple of years while saving for my custom offset. I would have made so many more mistakes if I started with an offset. Only thing I'd change is I'd go with a higher-end pellet grill from the start, they can be finicky at the lower range and I ended up using my RecTec warranty twice.

    @@ComparisonCooking The first edition of the bullseye, with the porcelin lid. The igniter and control board went out at different points. Not sure if the new stainless steel one has the same issues. In hindsight, I should've spent just a bit more and got a Green Mountain Grill Daniel Boone or something on that level.

    I’ve seen his videos they are very good. The comments I see on FB most beginners do not have the same success on their backyard store bought pits that mad scientist is illustrating, and they are very frustrated.

    Check out the mods or the OKJ highland from bbqsmokermods.com. From the stack lowering kit to the shelf expansion kit definitely elevate the smoker to a lean mean machine
