Just be open minded and study the things that interest you. Works for me at least, don't need to be famous to be skillful. Just enjoy your work. And if your work involves showing others what you do, you become famous. My job doesn't make me famous though, I install WiFi access points and administrate it afterwards. :P Guess that makes me sudo famous.

"Auto-basting" just means there are little knobs that stick down, regularly-spaced inside the lid. The idea is that when fluids drip back into the pot from the lid, they drip from all over, not just from the edges, so if you have a big cut or a chicken in the pot, the liquid will drip on it, not just around it. It actually seems to work pretty well in the pot that I own.

I like the fact that I’ve learned more from this man than I have in my whole life.
I've experimented around a lot with bolognese, and while I think it's pretty hard to improve on the marcella hazan recipe cheating a bit and skipping some steps is perfectly reasonable. That being said, I would *highly* recommend using a little freshly ground nutmeg. It brings in a warmth on the back like how warming spices make chicken pho broth kinda richer and more soothing than european chicken broth.

Your bolognese can be dramatically improved if you use whole San Marzano tomatoes in a can that you crush with your hands before pouring in, instead of the tomato sauce can.
