Bichu buti or stinging nettle is a plant that grows wild in the hills esp in #uttarakhand. Interestingly it is made into a saag and eaten. As the name suggests the entire plant has small hair-like needles that can cause immense pain if touched. It is generally plucked using tongs and then either boiled or singed over the fire to take out the effect of the needles. The sting can be so bad that even cattle would stay away from it. But then again we have figured out a way to eat it as a saag to enjoy the benefits of the plant.
#bichubuti is eaten with madua roti or steamed rice and is part of the classic Uttrakhand cuisine. In almora or kumaon we call ki sishood or bichuu ghaas and yes it is more tasteir than palak kaa saag

In Nepal we called it sisnu which is highly rich in iron.iski dry leaves used as a medicine for dibetic patient. In Nepal we used both flower and leaves. Aap firstly leaves aur flower ko eksath boiled kijiye aur uske saath aap thoda sa makki ke aate milaye jab yee ban jata hai to aap usme mustard oil cumin redchilli ,garlic ginger aur thoda sa sechuwan powder kee tadke dijiye

Happy to see this recipe as I am from uttarakhand.
We call it KANDALI ~ which is combination of KANDA~(Kanta) + DALI~(Plant or Tree)= KANDALI, Can be more fatal, if someone accidently fall into its bush. I've heard stories from my naani of people dying of its nettles in the past.

Nice one..we here in Nepal(paahaad as well) cook it often. I would definitely not use any oil..basically the nettle needs lots of garlic, water and its needs to be pressure cooked. I make it in 2 variations(nettle, maize flour, garlic) (nettle, maize flour, garlic, timur-Sichuan pepper). It compliments well with dhindo..again a nepali-pahaadi staple food made of maize, buckwheat or millet. Uttarkhand people should try this combo..dhindo, sisnu with gundruk ko achaar..after all we are pahadeys🙂

It is known as "Kandaali" or "Bichhhu ghaas" in most of the region in Uttarakhand . I have also eaten that saag . It is quite delicious with lots of benefits but it is mainly used by mothers to scare her child in childhood. Still remember,😅.

🙏🙏 कुनाल जी हमारे उत्तराखण्ड में कंडाली बिल्कुल कोमल पोधा तोड़ा जाता है और उसकी डंडी को भी पकाया जाता है जो कि बहुत स्वादिष्ट होती है पुराने पोधे को काट दिया जाता है ताकि नया पोधा खाने लायक हो जो कि कोमल होता है उसकी टहनी भी खाने लायक होती है पते ओर टहनी मिक्स करके कंडाली बनायी जाती है

Kunal sir i m from Nepal in nepali language we call this plant sisnu and this is a medicated plane if u dry the leaves and grand this in mixer and eat the powder in a empty stomach with a glass of water your sugar will be down if u are a sugar patient. 100%it works.

ये सिस्नु साग केहेते है । ओर सर जी ये ज्यादा सर्दि मे खाओगे ना सर अम्रित के बराबर है इसके आगे सारे सब्जियां फेल है । ये नेपाल मे ज्यादा पाया जाता है इसकी खेती नही कर्ना पडता अपने आप उगता है ।

This is one of the most nutritious wild food found on this planet . I live in Aboard and this delicacy is found as beginning of Spring( Welcoming Spring ) . You won’t believe I Love it’s Stink from the small leaves . It hurts a little but it is not dangerous. You blanch it and use it same as Spinach . Chef Kunal , I recently started watching Livingfoodz Channel and enjoy watching your Shows Curries of India and Ustav Thalis of the India the way you and your guests explain about the recipe and it’s ingredients is very nice plus it looks so delicious it is very hard to resist . I love the way nowadays Chefs are moving out of the kitchen and traveling all over the India to showcase the Authentic Indian Cuisine which is getting lost in times . Great work . Keep bringing and Sharing . You know the Funny part , when I first started reading and knowing about Wild foods I felt I was in heaven, Omg I wanted to try this and everything. And I thought you can find these kind of delicacies in only Canadian forests, Siberian forests and deep in American forests . One has to Forage for these wild foods . Being an Indian , I underestimated my Country, girl you just need to travel to the Land of Himalayas and on the way you will find stinking Nettle , Fiddleheads , various kinds of Greens , berries, mushrooms , different kind of Flours to make Rotis and breads . Now I feel so proud that the people of Himalayas are eating and enjoying these wild foods and the freshest Water coming all the way from Glaciers called Spring water for centuries. In Himachal Pradesh, we also prepare chutney of this plant Which is considered as a natural blood purifier and this plant is locally known as ain (एण) .
In Western Odisha it is called 'Baikhujen' and 'Bichuati' in other parts. I never thought of eating it. But I will try once for sure.

सर तोड़ने का तरीका गलत है,इसका ऊपर का पूरा हिस्सा काट के यूज किया जाता है। पत्तों से ज्यादा स्वाद इसके ड़ंठल मे होता है।हम बचपन से खाते आ रहे हैं।

It's called as "Doom Carry"' locally in some parts of jammu n kashmir, Tribals in J&K do make "saag" of this. Animals do eat it.

In sikkim n nepal this is called Sisno.... N main leafy vegetables.. It's flower is also eaten.. But cooking process is not like this. I dont like sisno tasted one time.. But never liked it.
