Beyond Limits: How to make rice cakes for cycling

Dr Allen Lim has made tens of thousands of rice cakes for cyclists, for everyone from Tour de France teams to weekend warriors. Here, he walks you through the process so you can make your own ride food.
From sweet to savory, mild to wild, there are endless variations on rice cake flavors. But here is the recipe for Allen's original rice cakes, with bacon and eggs.
INGREDIENTS
2 cups uncooked Calrose or other medium-grain "sticky" rice
3 cups water
8 ounces bacon
4 eggs
2 tablespoons liquid amino acids or low-sodium soy sauce
brown sugar
salt
grated parmesan (optional)
DIRECTIONS
1. Combine rice and water in a rice cooked.
2. While rice is cooking, chop up bacon before frying, then fry in a medium sauté pan. When crispy, drain off fat and soak up excess fat with paper towels.
3. Beat the eggs in a small bowl and then scramble on high heat in the sauté pan. Don't worry about overcooking the eggs as they'll break up easily when mixed with the rice.
4. In a large bowl or in the rice cooker bowl, combine the cooked rice, bacon, and scrambled eggs. Add liquid amino acids or soy sauce and sugar to taste. After mixing, press into an 8- or 9-inch square baking pan to about 1.5-inch thickness. Top with more brown sugar, salt to taste, and grated parmesan, if desired.
5. Cut and wrap individual cakes. Makes about 10 rice cakes.

You didn’t start making rice cakes you started making your own.
ok... if anyone ever tries to make this again, and happens to read the comments first. the rice vinegar is an essential ingredient if you want the rice to stick. I had no idea because I never made sushi rice before... but it is important. I used 1/2 cup of Rice vinegar for 1 cup of rice. kind of a major thing to skip over... but he simply says "don't be afraid of it"... ruined my first time making it.

I make rice cakes all the time without rice vinegar. Still sticks.
i tried making this today... it doesn't stick together and I used a short grain sushi rice. i would've appreciated portion sizes or some basic trouble shooting on consistency, but really I got sort of an arrogant demonstration with little practical info... he just seems to form it with his hand and its ready to go? didn't work like that for me...
Add some nori and there you go - onigiri! :-)
Question I didn't see below: How long do these last in your back pocket on a hot day (rice/eggs/bacon)? Rides can be 6 hrs sometimes so, just wanting to make sure I don't poison myself. :-)

You’re not gonna have your rice cakes in your back pocket for six hours you’re gonna eat them pretty damn quick specially if they’re delicious which if you made them they should be 😂😂

@@f1fnatikyou can add a tablespoon of vinegar while your rice is cooking. Plain rice itself can last up to a day even without refrigeration. You will know if rice is past beyond consumption, it sweats and gives off a funky smell.

Rice doesnt hold up very long in the fridge. Max two three days id say.
Appreciate VeloNews posting this. Get tired of gels and clif bars. For me, this particular recipe would be good for a long slow ride. On a fast group ride, or doing hard intervals, the bacon makes me want to puke. Nice that the recipe is flexible for the type of ride one is doing.

I'm not being mean here, I see that he is clearly trying to help by passing knowledge around... but what he is teaching is so basic... what about other types of rice, whole grain rice for instance; how much time does this package last? should I keep it in the fridge? for how long? are we supposed to keep these in the hotel or bring along for the training rides? can I withdraw the eggs in this recipe to make the cakes last longer? so much more information you could/should have given... the wrapping part is completely unnecessary, any kid can do that, maybe even better than some of those people. The concept of these cakes being a healthy fast/simple meal for cyclists is the best part of the video, so thanks for that.

What you are asking is basic. Do better. The wrapping in not unnecessary, it is done very specifically so you don't fuck around trying to open the package on the bike. The cakes don't last long, you can use other rice like jasmine but this rice works best, you can use whatever you want .. you are not bound to this recipe. Also seriously asking if you are supposed to bring them along on rides or leave behind? Yeah lets just make a cute fucking present packaged rice cake for when I get back to the hotel after a ride, lmao.

You can store them in the freezer too for a month or more, but the rice will dry up some so ass even more liquid when making the cakes in beforehand if you know you will make a big batch and freeze some.
Wow you shouldn't even promote normal people eating processed meat for breakfast, never mind pro athletes.. 😂
