Cycling rice cake recipe!

Recipe:
Ingredients (makes 8 rice cakes):
1 cup arborio rice
2 cups water
2tbsp sugar
20g dessicated coconut
cinnamon to taste
Method:
1) Add rice, water and sugar to rice cooker and stir. (You can add more sugar here if you want sweeter rice cakes and a higher carb content).
2) Turn rice cooker on and leave it until it is done.
3) Take bowl out of cooker and stir in desiccated coconut and cinnamon and any extra flavours of your choice. (ideas below)
4) Compress into a tray that is ideally flexible so you can easily remove the next morning.
5) Once cooled cover and place into fridge
6) The next morning tip the block of rice onto a chopping board and cut into 8 equal bars.
7) Wrap in foil or special rice cake paper.
8) Enjoy on your ride!
Other flavour ideas:
- Add in crushed oreos after cooking
- Mix in biscoff and/or crumbled lotus biscuits
- fresh fruit e.g. blueberries and some lemon juice
- Nutella or nut butter (I would recommend a layer in the middle of the rice block when you have put half the mixture into the tray).
- Savoury e.g. add scrambled eggs and bacon into the rice mix. (Trust me this is so good, especially when you are hot and sweaty and craving salt).
- white choc and fresh raspberries

    I’ve experimented with tons of rice cake recipes. I recommend lining the container with parchment paper because it’s really easy to get the rice out in the morning to cut it. Also, adding sea salt to sweet rice cakes is a lovely surprise. A real fan favorite in my neck of the woods is dark chocolate nibs and montmorency cherries, with a little salt 😀

    I don't wash it because that washes away the starch and I think that's one of the things that holds them together! But worth trying with and without

    Do you know the Indonesian snack lemper ayam? Pretty much my go to for energy (it is a traditinal sticky rice cake with a bit of (not spicy) chicken filling. It was also my childhood fave when living in Indonesia

    Sugar + Water + Salt -> Into soft runner's bottle = Homemade gel, dirt cheap, can mix sugar and water up to 2:1 before it gets undrinkable. Having all my carbs in a drinkable form has been a game changer for me on fondos and brevets

    If you wrap them well in this paper then they hold completely! Only problem I’ve had with them holding is if I have used just tinfoil and wrapped them too tight

    Yes, because rice is prone to have bacteria that can cause issues. If you freeze it, you'll be fine

    Freezing them completely changes the texture! And they don’t recover back when you defrost. So I’d advise to not freeze from that perspective

    @@1esk192 I think this is a good point. Warm, humid rice, combined with raw sugar, coconut and fresh apple, and then left to "incubate" will raise the bacteria count. But perhaps not to a point where it causes illness. As a compromise, may I suggest adding all ingredients at time of rice cooking and boiling one minute or so before reducing heat to cook normally. This would heat pasteurize the whole mix and then when cooled it would have less spoilage and could be refrigerated.

    Portability in pocket / the content of carbs. You’d need to put a lot of bread in your pocket and it’s likely more dry and harder to swallow also. Sometimes I make a bagel or a tortilla wrap with a spread inside to make it less dry and pop those in my pocket.

    Bread just doesn’t have the density of calories that rice has. If you want to get really nerdy, the gluten in bread is basically undigestible and useless for fuel, so it’s just a waste of space when you want to pack as much nutrition as possible in your gut.

    So I don’t wash the rice because then you don’t get rid of the starch and that’s what helps stick it all together. I have a feeling if you wash your rice before then it might be hard to form the rice cakes post cooking. From a bacteria perspective, the heat of cooking the rice gets rid of all of that.
