BETH'S CHOCOLATE MOUSSE CAKE RECIPE
Serves 8
For the Crust:
1 (9 0z) package of famous chocolate wafers
5 tbsp (75 ml) melted butter
For The Mousse Ingredients:
10 oz (286 g) bittersweet chocolate
2 tbsp (30 g) butter
2 egg yolks lightly beaten
2 tbsp (25 g) sugar
2 tsp vanilla extract (10 ml)
4 egg whites
¾ tsp (3.75 ml) cream of tartar
1 cup (240 ml) of heavy cream
For Sweetened Whipped Cream:
1 cup heavy Cream
1 tbsp powdered sugar
1/2 tsp vanilla extract
For Chocolate Shards:
6 oz (169 g) Bittersweet Chocolate
METHOD:
Place wafers into a food processor and pulse until finely ground.
Or place wafers in a large zip lock bag and whack with a rolling pin until crushed and crumbs form.
Add melted butter to the crumbs and pulse to combine.
Transfer crumbs into a 9" (23 cm) springform pan and press into bottom and up the sides of the pan to form a crust. Bake at 375F (190C) for 8 mins. Allow to cool.
Place 10 ounces of bittersweet chocolate and 2 tbsp butter in a large microwave-safe bowl. Microwave on high in 30 second increments until melted. Or melt over a double boiler. Allow to cool slightly. Add egg yolks, sugar, and vanilla. Set aside.
Place egg whites and cream of tartar in a mixing bowl and beat on high until soft peaks form. 2-3 mins.
Fold whipped whites into chocolate mixture, gently lightening the mixture in stages, until combined.
Then beat 1 cup of heavy cream until stiff peaks form. Fold the cream into the mousse mixture, and gently mix until combined.
Transfer mousse into cooled pie crust.
Garnish with a large dollop of sweetened whipped cream in the center, and chocolate shards or shavings. Refrigerate for at least 4 hours, but overnight even better!
To make sweetened whip cream:
Combine heavy cream, powdered sugar and vanilla in a bowl and whip until soft peak forms.
For Chocolate shards:
Place a metal baking sheet in the freezer for 15 mins. Melt chocolate in a microwave at :30 intervals until melted. Whisk until slightly cooled and smooth.
Pour chocolate over bottom of frozen pan, creating a thin layer. Allow to set until matt and cooled (pop back in freezer if need to help set up) Take a metal bench scrape and scrap chocolate until shards or curls form.

Thank You!!! I am definitely making this later this fall! I started tending bar at age 18, back in 1974 (Massachusetts, the legal drinking age was 18 then.) The restaurant was "Continental", but basically a French Restaurant, back in the exposed brick, and hanging ferns craze of the time. We served the best Chocolate Mousse anywhere outside of Boston. About 1975- 1976 the imported chocolate they used ( either Bavarian, or Belgian, I don't recall) was no longer legal to import to the U.S. The quality of the mousse did suffer somewhat, but it was still popular for those that were trying it for the first time. Your Mousse Cake sparked a memory!

TO THOSE WITH ISSUES IN THE PROCESS: I had made this cake for Christmas the day before; however, i used Oreo cookies instead of the chocolate wafers (as I couldn't find them and it was too late to order). For anyone who cannot weigh 9 ounces, approximately 58 of the wafers will work (29 cookies) once the creme has been scraped off. I added an extra 2 tablespoons of butter (which was recommended by Beth) as the crust was too dry. My oven had raised to 400 degrees F by the time I put it in and instead of 8 min, I put it in for 6. The butter seemed to bubble and the crust was wet which really worried me. However, I used it to my advantage by shaping the crust once again, and for anyone who is making a crust for the first time, it should harden up afterwards. I do have to warn that my crust did break at some areas (likely due to the high temperature). My chocolate kept on seizing (becoming a paste) and that is likely because I had heated the chocolate too much. If lumps are found while melting the chocolate, it is best to leave it and remove it from heat. I had read adding oil will help but I had added too much and the chocolate had seized again. For this, I recommend 4 tips: 1. When attempting to fix seized chocolate, do it at the point when you are ready to use chocolate. 2. If you use oil, make sure to taste that the chocolate does not taste like oil (Mine did turn out to have an oily taste). 3. Lastly, MILK will work. I found this out near the end and it worked very well. (Mine was 2%) 4. If undissolved sugar is seen, it is likely best to ignore it rather than adding more liquid to dissolve it. I usually do not like whipped cream, but the sweetened topping tasted like the creme brulee recipe found on this channel. I hope this input was helpful to those who had read this long comment. In general, I would attempt to make this again knowing the mistakes I had made, and I hope this is helpful to those who had run into these mistakes as well. NOTE: Mine did turn out very similar asides from the oily taste. Under my opinion, I would use half bittersweet and half semisweet chocolate as it is more befitting of my taste.

I've made this before, and it is absolutely delicious! I am planning to make it again, but worry that it will get too loose and runny as it will be left out of the fridge for 2hrs. Have you left it out for that long? I know it's not ideal, but I reeeally want to serve this at a party 😫

I am really excited to give this beauty a try!! One question... Can you make this recipe 2 days in advance? I want to serve it on Tuesday but do not have enough time tomorrow so would love to be able to make it today and let it sit in the fridge. Thank you, Beth! Wow! I think this is restaurant worthy! Seriously! Once I was eating at Peter Luger's and we ordered the chocolate mousse, and it looked EXACTLY like your mousse. With the chocolate wafer crust to the whipped cream to the chocolate shavings, is one of America's most famous steakhouses using YOUR recipe or is it just a coincidence? ;)

Disaster, it's Christmas Eve, made it this morning and . The chocolate mousse mixture was more like a thick brownie batter. I read one of the commenters had this problem too so made sure the micro waved chocolate and butter were very cooled down. Ugh, what a waste of time. I whipped up another cup of cream and folded that in. So it's sitting in the fridge now. It won't be the one you are all raving about, but I know the relatives will never know. I will just say it's a chocolate pie lol. I am usually good at this stuff. Looks like dessert will probably be Christmas cookies as this took a few hours, no more time to whip up something else..oh well. Happy Holidays all!

I had this problem too. The first time I made it the mousse was totally flat and thick. After a few tries I have reached the point in the video, although mine's still a little bit thicker (it won't just pour from the bowl to the crust, I have to help it down with the spatula but the final cake is soft and airy as in the video so it's allright). So preparing the cake to have that result in my case doesn't look so chill; 1) I need to have everything prepared - chocolate in a bowl to be melted, egg whites in a bowl, double cream ready for whipping too, 2) I make whipping cream first cause it's the only one from the three mentioned above that can wait a moment, 3) I start melting chocolate and I kidnap someone for egg white whipping at the same time, 4) once the chocolate is cooled down comes the crucial moment 'cause no matter if the chocolate is room temperature after adding egg yolks happens the dark magic that turns it into the dreaded brownie, because of that I dunk in the egg yolks in the very last moment and then quickly fold in egg whites and then - even more quickly - fold in whipped cream and put it in the crust. At no point in last step is there a moment when you can put away a bowl 'cause everything will set. I have been thinking that the chocolate transforming into brownie after adding egg yolks was happening because it was too hot but alas, no, it happens when it's cooled down to room temperature too (as you experienced yourself). The moment when adding egg whites to chocolate mixture is when the most deflating happens so careful there. I have been theorising if it would have been better to add chocolate mixture to whipped cream and then to egg whites (to prevent major deflating of the mousse as the last one is the most fluffy ingredient) but conclusions were that it would be a disaster, 'cause whipping cream is always whipped cold for best volume - add melted chocolate to that directly and it's probably gonna turn into even thicker brownie. On recent try, yesterday, I substituted eggs whites with aquafaba (chickpea water, it whips the same as egg whites, the bright side is that you can't overwhip it so I can just let it be done by the robot and not stress out while taking time melting and cooling chocolate), as for the egg yolks I just didn't add them so my chocolate mixture didn't get brownie'd. IMHO final result is indistinguishable from the egg version, plus I'm less stressed while making it. Sorry for the wall of text, hope it was somehow helpful - I think this cake is amazing and still worth the trouble of perfecting ones methods with each try.
