    Grew up eating all kinds of greens, beets among them. This version sounds and looks delicious. Have you ever done 'Spring Tonic'? These are wild-sourced, as in you go out in the spring as things are starting to grow, and you are sick to death of frozen or canned foods, and pick green plants which nowadays are thought of as weeds, but as many of those who once knew these were good for you and delicious, are not weeds at all, but Spring Tonic. For instance, dandelion, plantain, nettle, beet. Method: Pick, wash, heat up the fry-pan, saute with a little fat and salt, enjoy. Love the Chef John reference, BTW.

    i once cooked the beet greens, i find them to be very bitter, nothing like spinach. i will try the beet stems though, with spinach.

    This would work equally well with Golden Beets? Also, straight goat cheese or would it be good with a whip of goat cheese, Mascarpone, and citrus zest/juice? Or would that be too much, you think?

    Golden beets YES. Change the vinegar to white wine or Chardonnay vinegar if you feeling fancy. Also nice with a pinch of saffron. That cheesy whippy stuff you mentioned will be very good. Good grassy olive oil and a bit of white balsamic if you can find it. Chervil and rocket makes a nice mix if you want to add something green. Toasted hazelnuts will be good in there too
