Here's the wife's recipe for pickled beets. Yes she cheats. LOL When boiling beets simply add the vinegar, sugar and spices directly to the water. Once boiled and soft, allow to cool, then peel and eat....it's already pickled!!!! She won't eat store bought and usually just boils in salted sugared water without the vinegar, this way she only cooks a few at a time and eats them fresh each time. Thanks for the video, it was a great learning experience even for an old timer like us!!

Had my first beet smoothie this morning loved it. I used melon, beet, pine nuts, mango and a handful of greens. Delicious BTW. Besides all health benefits also good for libido in men. Considering its march was lucky to find even 1 beet with foilage still attached but I did. Will start growing my own. Thanks for your helpful hints on beets.

Noted similar libido effects with a tiny amount of daily Pomegranate juice (Pom diffused in big batch smoothies ... prob less then 1/4 cup per smoothie --- perhaps assisted with a little zinc supplementation)

I've also heard adding the testicles of the Tasmanian Mouse (replacing the Pine Nuts) will boost the libido effect of certain smoothies by nearly 60% when used as a libido stimulant, but you need testicles from about 300 mice for that effect and they are very difficult and rare to source because these mice are very small and quick and difficult to catch... This "aphrodisiac" effect was scientifically discovered and proven while studying the reproductive nature of animals that fed on these mice.

Here is a tasty recipe my ex husband had me make. He was from the Ukraine. Take a few pounds of red beets, scrub clean and boil in their jackets until soft. When cool enough to handle, rub the peeling off or use a knife. They slide off easily. Grate in a bowl, season to taste with salt and pepper. Add a few, depending on how much you like, minced fresh garlic cloves, finely chopped walnuts or pecan bits. Add a cup or two of sour cream, depending on taste, and fresh or dried dillweed. Mix thoroughly and add more dill if you want. The colors of the beets and dill are beautiful in a crystal serving bowl!

I usually roast my beets unless I'm making borsht but the storing tips were really useful. If I do roast for beet salad I fast saute the greens and incorporate; prefer lemon juice to vinegar, but … apples walnuts and beets make a wicked salad, in which case I use apple cider vinegar, what else. Great video.

Lately one of the local grocers has been carrying beets with the most luscious greens attached. (The talented Hutterite farmers here are able to grow and harvest quite late in the year). I lucked out a few days ago while picking my bunches of beets and someone before me had actually removed the greens from what looked like would have been 3 bunches, and set them neatly aside. Can’t imagine anyone not loving beet greens! The grocer said I could have them to add to my bag so I ended up with a whole lot of extra free greens, yum!

(The thicker they are the longer they take to cook)Put a tbspOlive or coconut oil in a pan with 1 tbsp butter. Gently cook the beets in this for 15 mins then turn. Spoon over some balsamic vinegar and some maple syrup (or honey). About a desserspoon of each. Cook until tender. Yum.

I used to hate the taste of MOST vegetables.... when I was a kid in the 50's and 60's, I don't know if availability was an issue or because my mother was a home-ec major (canned may have been cheaper), but even though we did HAVE vegetables at every meal, they were all canned (not home canned...factory canned. YUK) and I still can't eat canned vegetables. I thought spinach was the nastiest thing ever grown until I grew up and had fresh spinach; two completely different animals (so to speak)... I'm so glad to have found this channel! I started trying to garden this year and am looking forward to planting fall vegetables....been watching all the garden gurus and they're my heroes, BUT, they don't say what to do with them. Yeah, I know squash and lettuce, but kale and chard and REAL beets... now I'll know! I'm planning on planting tons of squash (summer squash didn't make fruit???), beets and chard for fall and hoping the weather will relent in time (central Texas) and now that I'm HERE, I'll know how to fix them! That'll help, huh? LOL Thanks for all your videos. I'm on a video marathon today...catching up. It's WAY too hot to garden right now.

@@freewaybaby We always had canned or frozen. I was ok with veggies then, but I really appreciate them more as an adult. I have some beets growing in my garden right now, but I've got so many weeds that they may not be producing much. This is my first year with beets and I can hardly wait.

Hi Dani! I've subscribe to your channel just now and I'm very excited to explore what else I can learn. Today I'm cooking beets and sweet potato in the oven in order to pack up in a mason jar and make it a "to go" salad in a jar. I like that you explain and have a lot of knowledge about food. Do you have a cook book maybe? your new fan, KEREN.

Just wanted to let you all know about juicing raw beets, I got feeling very sick my first time I tried it. My Doctor told me because it's a detoxifier that I should have only started with a 1/4 of a beet instead of a whole one. I was getting detoxified too fast. I was fine after I laid down for a while, but it was very uncomfortable and a little scary.

Couple of things you could have mentioned is that beets should be used up in the fridge right away and the reason you don't want to peel them is because cutting into them leaks out more of the goodness while they cook.
