Vegan Breakfast:
Breakfast Sausage Patties: • Best Healthy Vegan Sau...
Blueberry Pancakes: • HV Blueberry Pancakes
1 pureed overripe banana (½ cup) (apple sauce can work)
½ - ¾ cup plant milk
1 ½ tsp vanilla
½ cup oat flour (I grind my own organic oats that are third party certified glyphosate free.)
½ cup almond flour
1 tbsp ground flax (or ground chia)
2 tsp baking powder
¾ tsp cinnamon
Pinch of salt (optional)
Blueberries ( about 1/2 cup)
Instructions:
In a bowl combine oat flour, almond flour, ground flax, baking powder, cinnamon and salt. Whisk and set aside.
In another bowl or large measuring cup combine banana puree, plant milk, and vanilla extract. Whisk to combine.
Add wet ingredients to dry ingredients. Mix to combine.
Heat skillet on medium-low. Pour batter to desired size pancake. Cook 2-4 minutes, or until pancake has cooked halfway with bubbles on top. Add blueberries. Flip and cook an additional 2-4 minutes. Enjoy!
Vegan Pumpkin Seed Scramble:
1 1/2 cups raw pumpkin seeds
3 cups water
3/4 tsp turmeric
1 tsp black salt (or to your taste)
Optional:
1 tsp garlic granules
1/2 tsp onion granules
black pepper to taste
Instructions:
Soak pumpkin seeds overnight or for 8 hours. Drain and rinse. If desired, remove pumpkin skins by rubbing and rinsing the seeds.
Add pumpkin seeds, water, seasonings and remaining ingredients to the blender. Blend until completely smooth.
Heat well seasoned cast iron pan on medium heat. Pour mixture into the pan. Once the mixture starts to bubble and set, begin to move it around the pan. Continue this process until the scramble is cooked to your desired consistency. For a dryer scramble cook longer. Enjoy!

Just please keep in mind that this recipe is insanely high in fat, the total amount of fat for that quantity of seeds is around 90 grams of fat. For those who have to watch their fat intake this recipe is definitely a no go! If you’re a person who doesn’t gain weight at all no matter what you eat or struggle to gain weight, it’s a great recipe for those people.

This makes about 8 servings, so that's a reasonable amount of fat for most. I put what would be considered about 3 1/2 - 4 servings on my plate in this video.

Hey Javant! Even though I've been sharing your videos with mentees/patients, friends, family, etc., it's been a while that I post a comment on one of them! I've been busy with med school applications, WFPB health coaching, started going back to gym too 💪. I'm so glad to see you've passed 150K subs, congrats and keep up the good work! This recipe is very unique, first time I've seen a scramble with seeds- and Pumpkin seeds are pretty high in Zinc, Magnesium, Manganese, Iron, etc., and offer several benefits for the brain, heart, reproductive health and more! Plus, with the other ingredients like the Turmeric, Onion, Garlic powder, blueberries, etc., this is a breakfast of champions! I wonder how it would go with other seeds or nuts, or even putting some chia/flax with the pumpkin seeds? Would be interesting to try :) Anyway, great to see you, happy Friday!

Omy, this breakfast looks delicious!!! Thank you for sharing another winner! I first thought "Oh, tofu scramble" and was pleasantly surprised with a no tofu scramble alternative. Bever would have thought of this in my own, let alone soaking pumpkin seeds!!! Who knew?? YOU!! I don't have a suggestion at this time. Pumpkin seeds are unique, because they turn into this texture without any added ingredients needed to cause the "curdling".

I haven't tried pumpkin butter, but intuitively I don't think it would work. Pumpkin seeds are super healthy because of their iron, zinc, magnesium, and protein content, among other nutrients. Since the oil is not removed and refined, I don't consider it an issue at all. Good questions 👌🏾
I think I’ll skip that step I don’t mind green eggs and ham 😂 but seriously this looks delicious 😋

I coat it with VERY thin layer of grape seed oil (other oils can be used) using a paper towel, then put it in the oven upside down. Set the oven to 400F and bake it for about 45 minutes. Turn the oven off and let it cool in the oven with the door closed. This is a rough explanation, there are lots of great methods and tutorials online.

I stopped using Himalayan salt because I read it has heavy metals. Now I use Celtic salt. What do you think
