    I'm right there with you Kamon. The Pierce equipment is the best I've found anywhere at any price. As you've already mentioned, it's made right here in the USA. I was surprised to see you doing a manual uncapping :) They truly are making premium quality tools that are going to outlast me for sure :) Your lighting has also improved, all the better to see you!

    You made Laurel's day talking about the lighting. She is working to improve that and more things in the videos!     I bought this knife a few years ago but didn't have good results and felt is was a bit heavy so I returned it. After watching your video I realize I was not using the correct technique to be effective. I'm excited to buy it again and give it another try. Thanks for the video.

    How hot does the knife heat up to? Temperature? can the heat be regulated?. . .. Did you know honey above 60 degrees Celcius becomes TOXIC for consumption ?

    Two questions about the knife. Is there a on/off switch on the cord? Also the price from Pierce is $177 and at Dadant & Sons $140 are this the same knife they both have model 201 on them. I plan of having one for next season. Thanks Kamon love your videos

    Every hot knife has a big downside. U can not cut under the top and bottom bars. Using 9 frame is plus work. I don't know how does this uncapper weld. Cuz I want to cut with angle grinder 2-3 mm out of it where it lies on the bars, where u slide it, and between them the distance would remain the original and would cut deeper there, deeper then now, finally under the bars. I want to cut only 1 side of the knife so other side can be used for smaller waxes. What do u think about it. Would the honey get in inside the knife if I cut it?

    Thanks for this review and also the explanation as to why a hot uncapping knife is preferable to scraping. I would not have thought about the issue of clogging a bucket filter.

    Oh yes Karen! I remember years ago when we were using a bucket filter and we switched to scratching the cappings off and we also purchased a simply harmony to do a video on and we found out quickly that they plug the filters faster than you can say sticky fingers!

    well dang! I can say sticky fingers pretty fast so I better hustle over to pierce and get one of those fancy-looking knives. I could tell by your face and speechless moment after taking the first pass with the knife (I have a feeling you are rarely speechless) that you were truly impressed with that knife.     I have that knife and it works just like you said. I was amazed how fast you can uncap with it compared to my old knife. I enjoyed seeing all their new things at the Hive Life. Next year should be really great to see some amazing products.

    Those are great knives !! that's all we've used for 20 yrs, I couldn't tell what model that was, we use the cb203 I like it because they have a reostat to control temperature, an yes works great for trimming frames ! That's exactly how we do it , then we put drained cappings in 14' plastic cattle feed troughs , 2" thick, an go back after dark an collect powdered wax cappings, no dead bees an ready for melting down. Great demo ! 👍

    So true about tiny bits of wax clogging the strainer. Learned that one last year, and got a heated uncapping plane. Can't wait to use it! Those knives look nice, too.

    I was using an old Pierce from the 1970s I inherited. It burned out in 2020 during my harvest. I tried replacing it with two different generics that broke during the 2021 harvest! Ended up buying a new Pierce and really like the knife. Still a quality product. There are vintage ones that pop on eBay that still work fine too.

    I’ve got a good quality hot knife that I bring out every year, only to go back to the old serrated knife after a few frames. I honestly think that a good serrated knife does an equally good job and when you have lovely uniform comb it’s a doodle. The headache begins when you get to the wonky comb regardless of what knife you have.

    The research shows it only raises the honey in the cell by 4 degrees. Likely less than half of 1% of the honey gets warm on the blade

    I have a non-heated serrated uncapping knife... same shape, no heat... It's only my first year and I only plan on having 2-3, maybe 4 hives total, over time. I think it will be enough for uncapping the few supers I'll get each year...

    I used the same thing for my two hives last year (my first year), I also modified an old stainless kitchen sink into my uncapping table so it's at a comfortable working height and most of the wax stays in the sink, and I use a big seive over a bucket to catch most of the rest.

    The hot knife I bought for like $30 on Amazon a couple years ago died on me after a single use lol. I do like using a regular old serrated uncapping knife but it has its problems, like sometimes cutting little splinters off of the wooden frames being one.

    Haha you put honey on your toast right?!! I understand the price is high to some at first glance. However, for a tool that works like it is suppose to, can last for decades, and that only takes a 15 or so pounds of honey to pay for it seems fair to me.

    Love my hot knife .. wax is worth more than the the honey by weight. I have same capping tank .. can just put the honey frames in it up side down let gravity extract it. Takes few days works fine. What I did before I got a extractor

    I don’t understand why the angle of the handle is where it is. I tried a similar (albeit cheap imitation) knife and found the position of my wrist to be somewhat uncomfortable. It would seem to be better to have the handle rotated 90 degrees so that the curve is in line with the edge of the blade.

    They do and they should. According to research the honey in the cell is only heated by 4 degrees Fahrenheit due to the speed of cut and how hard it is too heat honey quickly

I'm a bit skeptical about the conclusion that the "research" is coming to since I can hear the water content in the honey sizzling as you make the cut. This could be a very interesting topic for a community survey question. I personally feel that there should exist a distinction in honey the same way their exists the distinction between virgin and extra-virgin olive oil, which I believe is even more resistant to heat changes than honey. That withstanding, I've very thankful for your opinion.

I agree that some honey does stay on the tool for a second and gets hotter but we are talking 0.5%. It is kind of like beekeepers claiming that honey is good for allergies. Largely it is a mistruth but beekeepers like to hang onto that because it is good for selling product.

    @@kamonreynolds I was under the impression that the word raw was an absolute term rather than existing as a spectrum as the USDA chooses to believe. This is probably because I've never heard anyone use the words rawer or rawest and this is probably the first time I've ever seen them written, but if you believe that something can be 99.5% raw then maybe that's what the label on your honey should say. As to your last two statements, honey produced using queen excluders won't have the beebread needed for that homeopathic allergy relief you're talking about. The fermentation process is necessary for the exine of the pollen grain to breakdown, which is what allows it to stop being an allergy to your body so you can start to build up a resistance to the unfermented form of it. Now a real mistruth in beekeeping is selling pollen collected from pollen traps and telling you it's good for your allergies, since the pollen dried out and killed the microbial cultures before it could start to ferment. This means that you're actually taking the exact thing that sets off your allergies in the first place and irritating your digestive system to boot being that the cellulose that makes up the exine isn't digestible by us or the bees until after it completes it's fermenting in the cells of the comb with all that perfect warmth and humidity.

    Running the knife up also excessively cools the knife when the honey covers it. Going down prevents it. Why doesn't the knife overheat? I have to soak mine in water between frames to keep it from smoking!

    Destroyed is a bit strong, begins to degrade yes. The enzymes will begin to die pretty quick. Have you ever waved your hand thru a flame? Same concept. Your hand doesn't get hundreds of degrees. Neither does the honey. Far less than 1% of the honey would reach even 115 degrees with the speed the knife is going thru it and there is data on this very subject showing that the honey in the cell is raised about 2- 4 degrees Fahrenheit with a hot knife

    ​@@gru2gru242 We don't have to have the same opinion or methods. But yes speed does make a difference on something including wax on your hand. If you stick a 300 degree heater in a gallon of water does it heat all of it at once? No. This data below shows that the temp only rises to 2-4 degrees in the cells of honey during uncapping. For a very brief moment the honey that touch the blade reached up to 118. As seen in the video, a very small % of the honey touches the blade.     Hi Roger. We did a research paper on this subject as part of master beekeeper program. We found that during uncapping using a hot knife the temperature inside the cells rose up to 4°F. The low-temperature rise is because the speed of the uncapping knife movement is fast enough not to let the heat transfer to honey.     I really I don't know Kai! I think with the master you can get it hotter so you can uncap a little faster but man you would have to be cycling thru some combs fast!

    Thanks Kamon, these look so good I've had the cheap china ones. Did you know you can angle the blade and use a sawing motion if necessary. You just forced the blade down the frame square with no angle or back and forth and it did great, there's a few techniques is my point. Thanks for helping your fellow beekeepers. I had a think about making a few vids myself then realized the effort, skill and time it would take so I really APRECIATE YOU. Thanks again !

    This one runs for almost 150. I understand the price is high to some at first glance. However, for a tool that works like it is suppose to, can last for decades, and that only takes a 15 pounds of honey to pay for it seems fair to me. However, this means you have to make honey to pay for it. Great Queens, Dead Mites, Good Nutrition.

    @@kamonreynolds yeah to be honest this is my third year in bee keeping and I'm finding alot of the "knock off" items you can buy are complete trash. I don't mind spending money on something I can use and will last. You end up just wasting money in the long run. You are absolutely right about the mites though..... they got me last year....never again will it be my fault.... I'm just happy to still have 7 colonies and plan to split them into 35-42 colonies over spring. I will use mated queens. Going for strong and healthy vs numbers, but its good to have a goal! I have over 120 frames of capped resources from dead outs last year and over 200 fully drawn frames of comb ready to go. I'm going to try to not make them draw any comb this year in order to speed up the process! I appreciate your videos sir thanks for the reply!
