I've personally taught 250+ classes and trained 4,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, Perth, London, Kuala Lumpur, Ireland, Germany, Mexico, Canada, and Hawaii.

    Soo Sifu: Wishing you, Mr. Lewis, and the family, a great weekend! Thank you for showing us how to prepare Gai Yang chicken! I enjoyed seeing the chicken grilling standing on the bamboo sticks! Both methods of predation must have yielded a great tasting chicken, as shown by Mr. Beans eating before the plate was placed before him and the way he cleaned the plate - looks like he wanted more servings of the chicken!     Yes, Master Soo, reverse Spatchcock is simply butterflied the good old southern way for grilling. That tamarind sauce sounds delicious!

    Nice video, I vote for more Asian BBQ videos. I have done that style chicken in the past and picked up a chicken the other day. I changed it's destiny from Mexican to Thai. I see you are using Chaokoh coconut milk the only one to by. I was married to a Filipina and discovered that coconut milk.

    I'd definitely go with the tradition instead of Walmart. What temp did you cook the chicken to before pulling it? And did you tent it? Ya know, it's the small things that make a difference?     I think the Hasty Bake was running about 300F-ish. You can raise or lower the charcoal basket. I put it on the grill once the internal was about 150F and cooked the breast to 155F and thighs about 170F. Super delish way to do chicken the Thai way. Cheers Troy.     Looks amazing! The spices/herbs screams something heavenly. I have a large pork loin in my freezer. Is pork loin something worth smoking or should I stick to ribs and pork butt?

    From the giant Thai wholesale store called LAX-C in downtown Los Angeles. They are the size of a Home Depot and have lots of cook Thai ingredients!

    Did I miss something, Harry, or did you not give any quantities for the traditional marinade. I looked for two days for the cilantro root only to find an incomplete recipe.

    Skip the cilantro root as I only found one place in Los Angeles of 20 million folks at the LAX-C Thai market in downtown Los Angeles. Use Coriander seed ground, and fresh cilantro ground

    Good News, my Palaya (Thai Wife) says both recipes look Aroy Mach (very tasty). Bad News - she wants me to duplicate your cook, Samee Die (husband do it). I am still working on learning to cook Ribs on my new MSW. Gai Yung will have to wait.

    Gai Yang in thailand is usually so dry because even when its already cooked, they still leave it on while waiting for customers to buy it. If you were to buy it 4 hours after its cooked you will be eating the chicken jerky. LOL!

    Hmmmmm. I've had a lot of gai yang in Thailand and I can't ever remember it being dry.

    @@garvisx6393 im currently staying in chiang rai now with my wife, and as long as they leave it on the grill after it is cooked, it will get dry. Also being exposed to air for too long will dry it out too. The best time to buy is when the chicken is just done. Anything after that just gets worse and worse. Eaten too many gai yang to know that this is the case, from chiang rai to chiang mai, bangkok to dannok, udon to tak. Chicken is just a more sensitive kind of meat which dries out way faster when overcooked or left out exposed
