This is a very technical dish. I was doing it ALL wrong. I put the onions in first, I used a lid, and I over stirred. I finally gave up trying to make fried potatoes. This time I did it the Rachael way, it was delicious! Follow the steps....it works.

I love to watch Ms. Rachel cook 😍 We are from Louisiana and my granddaddy used to make this for supper.. He cooked smoked sausage and onions, flour bread w/ cane river syrup.. He fried it all in his cast iron skillet and that crisp on those potatoes 🤯 *nostalgia moment* Thank you Ms. Rachel ❤

I like how you season in steps and sprinkle all over your food. So many cooking KZreadrs dump all the seasonings in one spot and I could never figure out how that all gets incorporated evenly. The way you do it makes more sense.

My mom, too. She was one of 12 siblings, and I think potatoes and onions were probably on her family's table more often than most things in the 1930s and '40s when she was a kid. So we had them a lot in the '60s and '70s, too. That's the smell of HOME to me.

I’ll never understand why it’s so important to some viewers for the creator to “take a bite.” They showed us how to make it and they’re trying to talk and I don’t care if they eat it or not. It’s almost impossible NOT to smack under the circumstances. I dislike that, as well, so I fast-forward to the end. Mrs. Rachel is able to do it all exceptionally well. Great channel!

Mrs. Rachel I absolutely love this. It’s so close to how my mom used to make fried potatoes. The only difference is she used Ortega brand green chilies at the end instead of yellow peppers. Your eggs were absolutely beautiful. My mom made the best fried eggs I’ve ever had in my life. I’m not great at frying an egg. After watching this, I might give it another shot. I love fried potatoes. When I was a kid my Mom would fry potatoes and serve it with breakfast sausage (a whole thing of Weber’s sausage sliced in rounds ) and applesauce. She would fix that for dinner. It was so good

I love how you share the whole experience of cooking, like how good the kitchen smells etc. Because food is something we experience with our senses of sight, smell, and taste, it matters. Thank you for tip about not stirring too much, it's a mistake I have made before.

I cut the potatoes the same way, just like my mom did. She was a great cook. Seeing some of your recipes remind me so much of her. She used to make another recipe we called atole pinole and a corn meal gravy that she would toast the cornmeal in bacon grease and add tomato sauce and hot water to it cooked it gravy consistency. Along with refried beans, scrambled or overeasy eggs and fresh tortillas. We're from corpus. Miss that down home cooking.😢
