I'm taking part to share cooking tips and reduce our waste for #flungtogetherfood and I challenge you to take part too.
This kind of cooking, using what we have, what is around us, is so much fun and is much kinder to the environment. In the UK and worldwide, we throw away or waste so many potatoes per year, in this video I give you some ideas for reducing this waste.

Best Savory Pancake Recipe Ingredients:
The best thing about this recipe is being able to use all sorts of savory food you have left over to make some super tasty pancakes, that are fun to make and save on waste. You can swap in all sorts of veg and use what you have. Make the pancake batter in advance as outlined below.
200g of flour - Plain is ideal but use whatever flour you have, this Pancake Recipe works well with wholemeal flour especially.
2 Eggs
500ml of Milk, I used semi skimmed but any milk will work well.
Dried Herbs - I used dried parsley and garlic granules, but use what you have and experiment.
Salt and Pepper to season
Oil for frying
Filling:
You can swap in or substitute with whatever you have, to make a vegetarian option just add your leftover vegetables.
200g of Ham - Chopped
100g Cheddar - Grated
100ml of Cream, I used double cream but any will work
200g of potatoes - Rinsed, Skin on - Grated.
1 Egg
Oil for cooking
Method for making Best Savory Pancakes :
For the best pancake batter make it about 30 mins in advance and mix again just before use.
Pancakes:
Batter best made in advance and allowed to rest
Mix the dry ingredients in a large bowl, add the 2 eggs and the milk a bit at a time and mix. Allow to sit in a fridge for 20-30 mins. Heat oil in frying pan on medium high heat, pour batter in, wait until edges look crispy and pancake is solid before flipping.
To make filling
Frying pan - medium heat - put the grated skin on potato in first, keep stirring and cook for around 10 minutes, then add the chopped ham*, continue cooking for 3 or 4 minutes, pour in cream, allow to heat up, then add in grated cheese, season with salt and pepper. Put inside cooked pancake, top with a fried egg. Enjoy.

    My husband introduced me to savory pancakes. My favourite are spinach and feta cheese. followed by a classic lemon and sugar pancake for dessert.

    That looks ace! I think I'll visit one of the local farms near me and get some fresh eggs and give this a go. Once question though, is the pancake batter better if it's left to rest or can you just use or right away? Cheers 👍🏻
