Ingredients/Recipe: (1 cup = 250 ml)
350 g sour cherries (about 2 cups)
Collect the water from the jar of cherries (Kirschwasser).
60 g chocolate chip cookies (1/2 cup)
Dough:
5 eggs
A pinch of salt
130g sugar
50 ml oil (1/4 cup)
80 g flour (3/5 cup)
30 g cocoa (baking cocoa) (1/4 cup)
50 g ground almonds (1/2 cup)
2 teaspoons baking powder
Baking pan 18 x 28 cm (7 x 10.5 inches)
Bake the cake at 180 °C (356 °F) top and bottom heat for about 35 minutes.
Cream:
200 g cream cheese or mascarpone (4/5 cup)
500 ml whipping cream (about 34% fat) 2 cups
1 teaspoon vanilla extract
50 g powdered sugar (1/2 cup)
Put some of the cream aside.
70 g grated chocolate (1/2 cup)
Cherry layer:
Pour the remaining kirsch and cold water over the cherries (a total of 180 ml of liquid).
1 - 2 tablespoons sugar (or to taste)
11 g red cake icing (cake jelly)
Place in the refrigerator for at least 4 hours.
Then spread with the remaining cream.
