275g or 1 1/2C. BREAD AND BUTTER PICKLES
80g or 1/4C. YELLOW MUSTARD
15-20g CHOPPED DILL
FOR THE MAYO

    St Louis is my town, born there. Where did you work? (If you can say) There are some good places -- Tony's - Anthony's Bar - good Italian places, or there used to be when I was there. Now in St Paul MN and no good food here. Sad.

    My mother used to chop onions and soak them in pickle juice and chop some pickles! Yum miss her and her potato salad

    I live in Lower Saxony, Germany and this recipe is actually pretty close to the traditional one in my area. Maybe a little bit more mustard than we would use. Also, we commonly add boiled eggs as well. But he is right, potato salad can be amazing. In my family, potato salad is usually a highlight at parties!

    I am not sure this potato salad is the best ever, but I made it twice so far, and my impression the second time is that it's bangin'. You'd be hard pressed to find a potato salad that is simpler or has fewer steps, that is this good.

    I'm a 40 plus year chef that has cooked for people from 63 countries. I agree with you, for the most part, but this comes up just a bit short for the best. Dill flavor is a must but using fresh dill is just a bit too much. I use the pickle juice off of dill pickles and it is dill pickles instead of sweet. One Big plus for you over others, you did not advocate using sugar. Making your own mayonnaise is a definite plus for a perfect potato salad but for a mustard, I tend to go with a spicy brown mustard. I will also go along with a number of others here and say that hard cooked eggs is a must have for a perfect blend. We also differ in the base ingredient, the potatoes. You are cooking yours to the point of being able to somewhat mash them, why not just use a properly cooked Russet. I don't understand your and others aversion to peeling potatoes. Use a Russet and cook them whole just to where it becomes tender yet still a bit toothsome. They will break up just a bit as you mix the salad, obtaining the creaminess you desire. I have made my potato salad many, many times over the years and have converted many that usually shun potato salad and I rarely have leftovers.

    Never tried an American style Potato salad! I'll try this at some point :) Also, here's a Danish potato salad recipe for those who wants to try: 750g potatoes. 2½ dl Ymer (or fermented sour milk, I sometimes use 1dl mayo instead). 2½ dl Cremefraiche. 1 handfull of chopped curled parsley. 2 diced shallots (red onion can also do the trick). 2 tbsp sweet french mustard. Squeeze of lemon juice. Salt and WHITE pepper to taste.

    I'm from northern Germany (Kiel area) and this is almost exactly how my mom makes potato salad! Truly my favorite potato salad recipe. I'll have to make Brian's recipe tomorrow and compare.

    Can i use buttermilk ? I have no idea where to get fermented sour milk even though i life not that far away i never seen it in our stores in the netherlands. Or maybe we call it different idk and i don't think you mean letting my milk go bad and use that... but for sure will try your salade recipe when the sum comes back out. Took a screen shot an all. ✌😁

    @@rosesnewbeginning3547 yo! Buttermilk is too runny, so I think that would be an issue. Maybe greek yogurt? Or do you have anything similar to kvark? (Another soured milk product from the DK) :)

    Not related, but I recently made your chicken salad but with a extra gift Turkey from Thanksgiving that hung out in my freeze way too long. I honey brined it, smoked and used half of it with your chicken salad recipe! My family tore it up like a pack of ravenous wolves. Anyway, just a big thanks to you.     Hi there in germany we cook the whole potatoes and peel them and cut them in slices,we also cook some eggs ,than we peel the eggs and take the yolks and mix them together with some oil and some pikle water ,vineger,some salt and mustard.Tis stuff back to the sliced potatoes,and some mayonaise .The bavarian style salad is with fried ham or baconcubes and onions,only oil,vinager,mustard and fresh spring onions and fresh parsely.Delicious.All the best from cologne,germany.Thanks for your great videos.Stefan

    Your tater salad looks great. Thank you for the tip on cooking potatoes slow. Very helpful. I always boil them high, and don't get the perfect texture. Your tips are on point. One thing you could add to your already killer tater salad is.... Hard boil three or four eggs, peel them, then put them in your Big Chief Smoker with some hickory chips for about 8 min. Just long enough to get them golden. Chop them bad boys up, and throw them in that fine tater salad.

    I made this for family at over the holidays. Recipe liked pretty easy and delicious (it was both), and I got a lot of compliments even from people who don't usually like potato salad! Only problem is now they think I can cook. So, I'm gonna need you to keep up the good work.

    Coming from southern Germany (Swabia) I can't make potato salad with mayo, it's highly illegal here. You should definitely give swabian potato salad a shot, it's absolutely amazing, I just love that stuff

    Wanted potato salad for 4th of July family gathering. I'll have to admit that I used Duke's. Followed the low and slow method of cooking potatoes. Made a half portion of salad - small gathering tomorrow. Great balance between the sweet bread and butter pickles and the tartness of the mustard. Halved grams for all ingredients and it came out great. Thanks for posting the recipe. Simple, fast, great tasting. What more could you ask for.

    Hi are amercian pickles sweet?? Im fromt he Netherlands and I'm baffled out mayonaise is creamy and only mildly tart i dont like american mayo at all amd our pickles are sour !!!!! We have sweet&sour pickles also but still 10x more sour then the mayonnaise so im kinda confused about the flavour palette here...

    @@rosesnewbeginning3547 Pickles here in the US come in all varieties, including spicy hot. Bread & Butter pickles are specifically made to be sweet. You can get pickles (such as dill) that aren't sweet at all.

    So I am a recently retired guy chef that has enferited the role of family chef. I tried this recipe, and my son who thinks potatoes stink, had seconds of this. This is my first attempt at potato salad, and let's just say there were NO left-overs. Not a great cook myself, but I was suprised how easy, and how well it turned out. To me the success factor was the slow cooking of the potatoes that let me get them perfect. It's made me a bit more courageous at trying other variants. Thanks for the add to things I can acceptably make.

    Love your videos!! I have to comment as a non-cook who DABBLES sometimes (mostly because my partner loves cooking and does 95% of it) I just attempted the mayo... after using a hand mixer for almost 10 minutes it was not looking like mayo.. figured I did something wrong.. was about to throw it away, Ben took it and threw it in the blender for a minute and it turned out PERFECT!! Not exactly sure why, but I'm thankful. Just wanted to put that out in the world in case someone else has a similar experience.. DONT GIVE UP ON YOUR MAYO =)

    You're close to my favorite - I like to add some red onion pieces - they add some amazing pop. Also a little bit of celery and celery salt is a must in my opinion.

    Thank you so much for the mayo recipe. It was always a pain to make it with a success ratio speaking highly against me. But this one is perfect. I wasn't even able to add more than 250 g of the oil, it was so thick that I started worrying about my blender. Merry Christmas, to you, your family and everybody else 🥳.

    Nice recipe. I think I chopped my pickles a little too rough cut, next time I'm going to chop them a bit finer. Delicious either way! I love the simplicity of this recipe.

    We do it the Swiss style by cooking peeled golden yukon potatoes, slice them and let the soak up bouillon while cooling down. Then a rich mayo sauce and let it sit. Right before serving add some more mayo sauce as the potatoes will soak up some of the sauce (I am always amazed on how much potatoes can soak up). Maybe I am too much old style but I don’t like chunky potatoe salad or masched potatoes. BTW I like to use Cornichons instead of pickles, more bite and more flavor in my opinion.

    Good solid recipe, your point about commercial mayo is spot on it makes a world of differance. You may like to use some of the pickle juice from the pickles rather than plain vinegar. I will disagree that it is the best, that honour belongs to the Oma's/grandmothers. My Oma's had crispy bacon bits and the sliced potatoes where fried in the bacon fat to a crisp golden brown. Save your spare pickle juice and make sliced pickled onions, waste not want not.

    Heeee fellow Dutch person yeah my oma couldnt cook so my opa did and i neeeeeed bacon and fine celery in my potato salade i normally add eggs and red union spring union or shallots and a hand ful of corn if i have it left over from taco day.

    Mate, when making mayo. Just make sure all the mustard, vinegar, egg etc are at the bottom, put the mixer inside the mixture. Put all of the oil in at once, then turn on the mixer and very slowly lift the mixer up. Works every time, drizzling isn't necessary if you do it like this. Literally fool proof.

    Hi Brian I have a different one that is from Bavaria, boil new waxy potatoes whole , then fry one onion in oil and give some diced smoked bacon salt and pepper to taste. then put some chicken broth not too much into the bacon mixture and add some vinegar! Now slice your boiled potatoes and pour the bacon mixture over the potatoes while they are still warm then eat luke warm ! Enjoy

    This is basically “southern style” potato salad, which you can find easily at that same store deli next to that pale white nastiness. I have yet to find a store-brand “southern style” or “yellow mustard” potato salad that tastes _bad,_ but certain home cooks can sprinkle magic into this staple recipe for a heavenly potato salad experience (my mom & sister are two such magicians😊). I’m tickled that Brian (and others, according to the comments) are just discovering this. 😁

    I love the adjusted mayo recipe a lot and have been thinking it’d be an upgrade even from the nice jar mayo I buy at the store. How long would you confidently store it? If it makes a difference I’m using fresh eggs from my own chickens and good clean avocado oil. Thx. Keep up the good stuff, love to check in on the channel regularly.

    I would say 6 days is the limit. The acidity starts to break the eggs down after that

    If there was a competition for the best potato salad on earth you'd probably end up in the finals with a grandmother from the Cook Islands making Mainaise. The name is an adaption of Mayonnaise, which should give you an idea of the fat content. It's kind of like a Russian salad with 500% more dressing and boiled eggs grated over the top.

    potato salad - the living proof simple is tasty! you can do without the pickles even, and that salad would still be in top 5 easy :) btw, my preferred version is without mayo - just steam boiled potatos (steam boiling is my method of choice, as it is gentle on the potato and you don't need to worry too much about what exact sort of potatoes to get), sliced onions, some salt, sunflower oil and vinegar. and of course - dill :)

    Ever tried swabian potato salad? It's made with broth and tastes really nice. Also our neighbors make a version with broth, some mayo and bacon, and while it's quite heavy that one is also absolutely heavenly in my opinion but of course everyone has their own favorites. Subbed to your channel now after also trying your 1 dough 3 loaves recipe. I had to work around not having a dutch oven (which I have now ordered) with a lasagna glass dish. Anyway, your recipes are fun to recreate and I really enjoy the way you're showing the methods used, sometimes even in slow motion. Hope to see a lot more from you in the future!     @@BrianLagerstrom Hi Brian. Authentic swabian Guy speaking Here:) First of all your Videos are truly amazing and i love watching them. You should really try boiling the potatoes whole with the skin on. Thema peele them while hot and Cut them into thin slices. Meanwhile Heat a good Beef Stock with some Finley chopped onions, White vinegar and mustard. Then pour the hot Dressing over the potatoes an let them soak until there is no more liquid. Ad Salt and pepper to taste as Well as some parseley or chives. And enjoy:) . I' m sorry i dont have a full recipe for you, but as a chef i usually eyeball everything. You will find good recipes online though. Keep up the good Work!

    I made the mayo, it is good and fairly easy. Like you said, use a good pour container for the oil. my mixing container kept getting stuck to the bottom of the blender.
