Ingredients:
►2 & 1/2 cups of overcooked or well-cooked chickpeas
►1 cup of well-stirred tahini
►1/3 cup of fresh lemon juice
▶︎1 tsp of cumin
►1 big or 2 medium garlic cloves
►6-8 ice cubes (adjust according to desired texture, more for lighter and creamier hummus)
►Salt to taste
For Garnish
-----------------------
_ some cooked chickpeas
- smoked paprika or, chili powder, cumin, sumac or any other spices you like that flavor to hummus and beautiful contrast in color
- drizzle of extra virgin olive oil

    Nice tip - if you dont eat hummus at once its better to make garlic and lemon sauce and add it onto hummus when consume. Garlic makes hummus go bitter fast.

    Garlic does not make your hummus go bitter unless you add too much of it. And if you make a big batch that you'll eat it later, it is actually important to add lemon juice, because lemon juice has vit.C or called ascorbic acid which act as preservative, which helps your hummus to stay fresh longer.

    Perhaps the garlic was old, the center can be bitter, that can happen with garlic purchased in bulk such as for a restaurant has aged. I have never experienced this as a home cook as I only buy a few bulbs at a time when I run out of my home grown garlic. Thank you Mama Lab, this is exactly how I like my hummus and now I know how to make it so smooth and creamy. Do you ever add toasted pine nuts?

    Just made this. OMG! Soooo good and creamy. Just letting it sit in the fridge for a bit, then dipping some naan bread in for my lunch. It’s hard to wait. BTW. I found if I kept adding water to the cooked Chickpeas I could basically pour off the shells. I had to do it a number of times but it worked really well. Thanks for the great recipe. I’ll never go back.

    If you soaked the chick peas over night, cook in instant pot 25 minutes and natural pressure release. Yum!

    Have been making humus for many many years. I use I 8 oz. Can of cheek peas Tehini I to taste lemon juice and olive oil press the button on the food processor to a creamy humus.

    I added Tahini and I mentioned it in the video, there’s no authentic hummus without tahini! and yes you can definitely add yogurt if you want, I tried making hummus before with plain regular yogurt not the the Greek one, it turned out so good too! but here I made the simplest and the authentic version of hummus.

    You definitely can make your own creation of hummus and adjust to what's available in your hands🙂, but remember that peanut butter has way thicker texure and it's taste tend to be sweeter.

    Typically Hummus last for up 7 days in the fridge, and most of the time my recipe last and stay fresh more than 10 days or 2 weeks, as long as I'm sure my fridge working properly, store my hummus in airtight container, and use very clean utensil every time you serve to avoid introducing bacteria.

    Nice texture. One suggestion, Try to reverse the process, start with Tahini, garlic and lemon juice, it will emulsify the blend then add chickpeas and finally ice.

    This is a much quicker way of removing shells. I get pretty obsessive and pluck them by hand, but it does take way too long!

    It is expensive I agree! you can use any sort of nut butter instead, like peanut butter, sunflower butter..etc.see what's available and start always small, since these kind of butter tend to have way thicker texture and bit heavier than tahini.

    I think you can, if this is the only thing available. But I advice you to try first with small batch, I pretty sure you'll get smooth lovely texture with the cream, but not the exact same taste of classic hummus. Since Tahini made out seame seeds, and this impart rich and special earthy flavor. while the cream don't have that. you can try also any type of nut butter if any kind is available like peanut, almond ,sunflower butter etc.. but If you use these type of butter just start with small amount first because they are way heavier and thier flavor is stronger and more on the sweet note side.     You can use any nut butter: almond, macadamia, cashew, sunflower, pumpkin, even peanut. You'll get a different taste with each one.

    The best way to store hummus is in the fridge, Hummus in general ,stay good and last for a week, me personally I even let it sit sometimes for 2 weeks and still great, make sure to put good amount of lemon juice and considerable amount of salt, (if you don't have any restrictions with using salt), because these two ingredients acts like preservatives. Make sure if you make a big batch, store it in small airtight separate containers. Although it's not impossible to store it in the freezer, but don't expect to get the same flavor and texture after Hummus get thawed.

    I tried freezing some and it was ok only if you ate it within a month or so. One batch I had frozen for 6+ months and I didn't care for it. I felt it was better fresh. Maybe just freeze some of the cooked chickpeas for future blending.

    Yes, you can since the canned ones more convenient and easier to use. But keep in mind that there will be a slight difference in flavor and texture from the freshly cooked chickpeas because the one that you cook you'll control the firmness of it yourself, while with canned one, you can't, since each manufacturer process thier chickpeas differently . And always make sure to rinse the canned chickpeas really well to get rid of extra starch, salt, and preservatives if there's any.     I've used canned chickpeas before, but simmered them first for around 10 minutes with bay leaves and garlic. This will get them softer than using them straight from the can and by cooking the garlic, you end up with a more subtle flavour.

    Lol - fellow ADD'er here.. get a pressure cooker - it takes only 30 minutes or so... and is fun to learn to use a new kitchen 'gadget'. I use mine all the time to make all kinds of beans as I eat them daily (also a vegan). Or just get canned.. but home cooked taste WAY better and way cheaper (if that matters to you). ;)

    Baking Soda a sure way to ruin your Lehume's, so take the time to cook them in a slow cooker after soaking for about 2 hours and get better results.

    @@lindadurand247 They are not healthier in terms of health impacts of sodium. They have some trace mineral elements, but a pinch of granulated kelp will probably contain vastly more sea minerals.

    When I said no oil, anything in the actual form of oil, like olive oil, canola oil, avocado oil, soy bean oil, or any other vegetable oil, because usually most of recipes of tahini calls for adding olive oil, while in my recipe I just used the olive oil for garnish at the end. I know that Tahini is made of sesame seeds, sesame seeds are majorly oil, but we can't call Tahini (oil) because is not in the form of oil like sesame oil for example. I hope my explanation is clear, and my appologies if my video cause any confusion.
